Joan's on Third Snickers Cupcakes Recipe

After our cupcake taste-testing extravaganza at Disney, Jenny and I headed back to the Picky Palate kitchen to create some cupcakes of our own. Talk about being in the happiest place on earth! :) We were inspired by our absolute favorite cake from Joan’s on Third, the Snickers Cake (I posted about how in love I was with this cake the first time I went to LA). It’s rich, decadent layers of chocolate cake and chocolate mousse topped with a chocolate buttercream frosting and crushed Snickers. Heaven! Here’s how our tribute cupcakes turned out…

How to Make Snickers Cupcakes

We started with The Best Chocolate Cake Ever recipe and turned it into some fabulously fudgy cupcakes.

Next we whipped up a super easy, two-ingredient chocolate mousse filling. Good thing it made a lot, because I could not stop taste-testing this mousse!

Here it is in the piping bag, almost ready to fill up the cupcakes.

You’ll have to excuse my inconsistent lighting in these photos.. We talked and gabbed and ate so much chocolate that we ended up losing the light before we finished our cupcakes! :)

When the cupcakes have cooled, insert the tip of the piping bag about 1″ into the middle of the cupcake. Squeeze the mousse into the cupcake while pulling the tip out.

Perfect!

You will *love* this fabulous chocolate buttercream frosting… Jenny whisked it together by hand and I definitely think this was the secret to this frosting. It was so deliciously rich!

To finish, top with a handful of crushed Snickers. To die for!

Description

These Snickers Cupcakes with Chocolate Mousse Filling are wonderfully decadent and full of Snickers flavors! An easy dessert to whip up that’s sure to impress and satisfy.

Scale

Ingredients

  • 1 box Devils Food Cake Mix
  • 1 small box Jello Chocolate Fudge instant pudding mix
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 1 cup sour cream

Chocolate Mousse Filling

  • 2 cups heavy whipping cream
  • 2 cups milk chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Line 24 cupcake tins with liners. To prepare the cupcakes, place the cake mix, pudding mix, eggs, oil, milk and sour cream into stand mixer. Beat until well combined, about 2 minutes. Scoop the batter evenly into the cupcake liners. Bake for 20-25 minutes or until cupcakes are cooked through and a toothpick comes clean from center. Remove the cupcakes from the tin and let cool.
  2. To prepare the mousse, melt the milk chocolate chips in the microwave, stirring every 30 seconds. Set aside to cool. Meanwhile, whip the heavy cream with a stand or electric mixer until it looks like whipped cream and stiff peaks form. Fold melted chocolate chips into whipped cream until well combined, then transfer batches into a piping bag. When cupcakes have cooled, press the tip of the piping bag into the center of the cupcake, about 1 inch deep. Squeeze the mousse into the cupcake while pulling the tip out. It doesn’t take much, just one firm squeeze is perfect. Continue filling all the cupcakes.
  3. To prepare the frosting, beat the butter, powdered sugar, cocoa and vanilla until well combined and a nice frosting consistency. Spread over cupcakes then top with chopped Snickers.

I have had this pinned for several months now, I finally had an opportunity to make them. First of all, photos: epic. Secondly, recipe: simple! Everyone LOVED them. They were just amazing. Thanks so much for sharing this recipe!

I made these today but something went HORRIBLY WRONG! I followed the recipe exactly but I used Greek yogurt instead of sour cream and the cupcakes came out flat and not sweet. Idk what happened. I want to try them again tomorrow but I’m scared the same thing will happen. PLEASE HELP!

Hello, I’m not sure if I missed something when reading the recipe, but how do you make the chocolate buttercream frosting? Do you add the mouse filling + the frosting ingredients after we’re done with the filling part? Thank you!

  4. Rebecca

Yummy, yummy, yummy!!! Just finished making some for my best friend’s birthday, and so happy to have left overs for my self! Thanks so much for this recipe, it’s definitely a keeper.

Do you know if these can be made 24 hrs in advance? Wanted to make for hubbys surprise party but didn’t know if mouse would hold up? Thanks for the great recipe

I dont understand why you use boxed cake mixes for your cupcakes. Your frostings and fillings are AWESOME! It would take no time to measure out ingredients. Plus it tastes a thousand times better

I have been wanting to try to make some cupcakes with different candies in them, snickers is one of my favorite candies

I have made this for the first time and I tried to not eat one since I been doing so well on my diet. Well… The cupcake won! It was so amazing! The only problem is.. I followed it to the T. Problem was the buttercream icing. I made it twice and it was so thick I could form something. It was very tasty but I couldn’t get the snickers to even stick on top. What I doing wrong? Thanks for posting this cupcake.. I am sure my mom will fall in love with it tomorrow for her suprise birthday! :)

Has anyone tried the mousse in between layered cake yet? I am looking for a filling that is delish and thick so cakes don’t slide. Help!

  10. Karen

I made these for the girls at work and got great reviews! I love this chocolate cake! The only problem I had was that the centres of the cupcakes fell in a bit. Do you have an idea as to why? Or can you tell me how to avoid this?
    Thanks!

I made these for Christmas dinner this year and they were AHHHmazing!! Such a hit. The mousse was so simple yet extremely addicting….we did however use that as topping instead of the buttercream frosting(not too many fans of it). I’m thinking of using it with your “Best Choco Cake” recipe as a frosting as well. Thanks for sharing!

  12. DEE

I made these last night to bring to work today…
I made my chocolate cake from scratch.. but did everything else the same..
these were delicious… the mousse filling is to die for and I wish I would have squeezed a little more inside….
    extra yummy !!!
    thanks for the receipe

My mom always made that cake for us growing up…. except she added a bag of minichips…………….. when I got older………. I could never make the glaze she did right, so I started just making ganache…………………… Honestly the BEST CHOCOLATE CAKE/CUPCAKE on EARTH!!!!!!!!!!

  14. Michelle

I have just started my new hobby of baking cupcakes and these cupcakes are the bomb!! They are soo delicious. I also had to add milk to my icing. I had quite a bit of mousse left over as well….let me think of what i can do with it…Mmmmm. Thanks for the great recipes!!

  15. Jaime

Today is my hubby’s birthday. I made these for him to take to his office, and oh my!! These are, hands down, the best made from scratch chocolate cupcakes I’ve ever had or made!! SO YUMMY!! They were a hit at the office! The ones I didn’t send to the office I gave to neighbors so I wouldn’t eat all of them!

I did have to add a little milk to the frosting to thin it out though. Otherwise it would have ripped the cupcakes apart while frosting them.

Do you think halving the mousse recipe would be enough for 24 cupcakes? I had SO much left over I didn’t know what to do with it.

Thanks for posting and sharing this divine recipe with all of us! LOVE YOUR BLOG!

This Christmas I was meeting my boyfriend’s family for the first time and was desperately searching for something I could take to the event. I decided on these and holy cow were they delicious! Everyone loved them.. so many thanks for posting this recipe

OMG!!! These are the best cupcakes I have ever had. Not being a huge chocolate fan (I know that’s a sin in itself)….I am now craving these a lot! Took them to a large party and made them mini-size. I actually recommend this more than the normal size cupcakes because you can pop a mini in your mouth and it explodes with the mousse! DELICIOUS!!! Thank you so much for the recipe!!!

  18. Kim

I am in the process of making these, so far…YUM!! However, did you guys add any milk or something to the frosting? I ended up adding some because it was way to powdery.

Amanda…can you please give me the instructions how to make the Ribbon Box? It is simply beautiful!!!I have a small scrapbook business and would love to make a couple of boxes to organize my ribbons in style!!!

    Thanks!

I was thinking if I could use this same idea to make like a Strawberry Shortcake Cupcake. Yellow Cake, white chocolate mousse/or strawberry mousse, buttercream frosting and a strawberry on top.

    What do you think?

    1. Jaime

So did you try doing the Strawberry Shortcake version? It sounds really really yummy! Sounds like a perfect summer dessert. Thanks for sharing your idea!

  21. Timy Kay Potts

Hey Amanda…I didn’t see the nutritional values listed for the cupcakes (just kidding). You know what? It’s the holidays and it really doesn’t matter. :) Pleeeeeease send more of these lovely recipes !!!!

  33. Jen

This sounds devine! My husband’s absolute favorite candy bar is Snickers, I’m going to have to make these. He likes chocolate, but not a ton of it though, am thinking a caramel flavored mousse would be better if I can do that. Any ideas on how that could work?

  34. Dawn

The chocolate cake recipe is already great..It makes my mouth water thinking about these cupcakes! Definately going to try these.

  35. Jessica @ How Sweet

    This is an absolute sin.
I loooove Snickers so much (favorite candy bar ever!) and just can’t even imagine the deliciousness going on in this cupcake.
