Cheesy Chicken, Bacon & Avocado Quesadillas are an awesome weeknight meal! They’re loaded with so many delicious flavors, you won’t be able to eat just one!
What is it about bacon & avocado that I absolutely love?? And these quesadillas… with their buttery, crispy, heavenly tortilla shells… are seriously yum. Don’t let the green scare ya, avocados have a really delicious taste. I promise they’re not just thrown in to “healthify” this recipe! ;) Quesadillas are one of our favorite quick and easy weeknight meals. Come on, let’s make these, you’ll love ’em!
How to Make Cheesy Chicken, Bacon & Avocado Quesadillas
Let’s start with the bacon. Here’s how I do it. Arrange bacon on a cooling rack (like for cookies) and set it on top of sheet pan. If you don’t have a cooling rack, you can just put the bacon straight on the sheet pan. Or in a 9×13 baking dish. Either way will work. Place bacon in a cold oven, turn heat to 400, and cook 15 mins per side. Crispy strips of bacon, the easy way!
Now take about a tbsp of the bacon drippings and add to a skillet over medium heat. Add diced scallions & saute about 2-3 mins until softened.
Add bite-sized pieces of chicken in a single layer, season with salt & pepper, and cook for about 5 mins or until chicken is golden and cooked through, flipping just once during cooking.
Remove the chicken & scallions to a plate and rinse out the skillet.
Then add a little butter over medium heat…
And when foamy, add a tortilla and swirl it around to get it nice and buttery.
Now we can start layering with the good stuff. Chicken.
Bacon.
Avocado.
Do you know how to pick out a good avocado? We’ve all been there… trying to scoop out a rock hard avocado! First check the bottom and make sure it has a green stem. Then give it a little squeeze. It should have a little give to it. Not too squishy, but not rock hard. Touch the tip of your nose. About like that. You’ll get a good one every time. If all they have at the store are rock hard, let it sit on the counter overnight. If you have a paper bag you can put it in with an apple, even better.
A little cheese..
Now use some tongs to flip the other side of the tortilla over.
And pat down in place.
Oh my stars. When it’s golden, brown and delicious like this, flip it over to brown the other side. It’ll just take a minute or two on each side.
Super easy. Super quick. Super delicious.

Cheesy Chicken, Bacon & Avocado Quesadillas are an awesome weeknight meal! They’re loaded with so many delicious flavors, you won’t be able to eat just one!
Ingredients
- 8 strips bacon
- 1/2 cup scallions, diced
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- salt and pepper, to taste
- 4 medium-sized flour tortilla shells
- 1 avocado, diced
- mild cheddar cheese, shredded
- 2 tablespoon butter
Instructions
- Arrange bacon on a cooling rack (like for cookies) and set it on top of sheet pan. If you don’t have a cooling rack, you can just put the bacon straight on the sheet pan. Or in a 9×13 baking dish. Either way will work. Place bacon in a cold oven, turn heat to 400, and cook about 15 mins per side, until crispy.
- Add 1/2 tablespoon bacon grease (or olive oil) to a skillet over medium heat. Add the scallions and saute about 2-3 mins until softened. Add the chicken in a single layer, season with salt and pepper, and cook for about 5 mins or until chicken is golden and cooked through, flipping just once during cooking. Remove the chicken and scallions to a plate and wipe out the skillet.
- Add about 1/2 tablespoon butter to the skillet over medium heat. When foamy, add a tortilla and swirl it around to get it nice and buttery. Layer one side of the tortilla with chicken, bacon, avocado, and a little cheese. Use tongs to flip the other half of the tortilla over and press down. Cook the tortilla for about 1-2 mins on each side or until golden brown and crispy.
- Repeat with the rest of the tortillas, adding a little more butter for each tortilla as needed. Eat & enjoy!

Oh.My.Goodness!! Were these ever good!! I made these exactly as the recipe instructed, except that I cooked the bacon in the microwave. I still had bacon drippings so it just seemed easier. But this was just awesome and my husband has already requested it again! Thanks so much for the recipe – I loved it!!

This was a huge hit with my teenage boys! Thanks for getting them to the table!
Hi, for the UK…scallions are equivalent to Spring Onions I think :o) I am putting the ingredients for this on this week’s shopping list and can’t wait to try it – it’s been on my Pinterest board for too long now! xx
I made these tonight and oh, my gosh, they are delicious. I can’t believe I’ve wasted a year of my life without these! And I was so pleased that they actually came out looking like yours, too. Had to be the butter. :)
I made these a couple nights ago and my family already wants more! Even my four year old told me they were good! They are terrific! I am normally not fond of avocado, but I loved these! The bacon really makes these unbelievable! I had to double the recipe to make enough for my hungry boys, but it wasn’t difficult to do. I plan on making them again really soon!
Thank you so much! We made these as paninis instead of quesadillas- excellent either way :)
I’m making these for my daycare kids today…I found the recipe awhile ago and have been waiting to make them. Not sure how the kids will feel about them, but I’m sure I won’t mind eating the leftovers :) Thanks for the recipe!
Wow! I’m absolutely starving…so those pictures are not fair. I may need to get shopping during my lunch break for those ingredients….yum!
I made these for dinner tonight and they were fantastic! Exactly what I hoped they would be. They remind me of the Avocado Club Egg Rolls from California Pizza Kitchen. Add some ranch to dip it in and mmmm!
Those pictures just made me so incredibly hungry. Yummy!
Okay Okay..I’ve found what I’m making for lunch tomorrow. It’s gonna end up on my blog, but watch for a link giving you allll the credit. Nice job!

You guys are the best! I love your recipes! This quesadillas look amazing. Thanks for inspiring us to get up a make quesadillas.
Have a wonderful week :)
I am making this now, but am taking a break while my hubby runs and gets more bacon! :O It came out BLACK! I thought that it looked ALMOST done when I pulled it after 15 minutes, but turned it and cooked it for another 15. Phew! What a smelly, smoky mess! Hahaha. Everything else looks promising though!
Seasoned my chicken with Tony’s Creole and then squeezed some fresh lime juice on it!! YUM!
Wow! Made these for dinner this evening. I did overcook the bacon, but next time I’ll just lay it in a 9×12 stone as I have done before and then drain on paper towels. I served it with nothing more than just sour cream. My husband and I both LOVE this recipe….looking forward to making it for my son’s family soon. Hoping it’s okay to reprint the recipe on my blog, with credit given.
I bet these would be AWESOME with ranch dressing. YUMMMMM
Just made these for dinner last night. Yummers! Another awesome recipe. I seasoned the chicken with the Montreal Steak Seasoning before cooking because I am now hooked on the stuff, thanks to you. It was so delicious. I even ate half of a leftover quesadilla, cold out of the fridge for breakfast this morning. =)
Hi, this looks absolutely delicious! I would love to try this! I just shared this recipe on my blog. It’s such a creative, delectable recipe! Maria

My friends and I made this for dinner tonight. I was SO good and easy! :)
Oh my, that looks so good! I think you just inspired me to make some quesadillas for lunch!
Just made there without the bacon added some paprika and onions a little garlic tasted awesome thnx for the inspiration
just stumbled upon your site
my hubby loves quesadillas – I usually saute onion and bell peppers and toss in shredded rotisserie chicken serve with guacamole, will def be trying them your way. BTW – I usually cook bacon at 400 for approx. 18 min and turns out perfect, thick bacon a bit longer
I tried this today, but without the bacon and avo. So simple and yummy. Thanks! :)
I skimmed the comments and didn’t notice, so I will post this quick update. To cook the bacon (either w/or w/out a cooling rack) try putting parchment paper or aluminum foil lining the pan. It helps with clean up. Just let the pan cool and pick up the fatty leftovers and throw them away. Or if you are like me save the grease in a can and use it for amazing gravy or cooking oil for breakfast rolls etc.
wow that looks fantastic and really yummmy… i never knew how to eat avocado! great idea:)
thanks for the great recipie i made these yesturday but i didnt have the website in front of me so i just went off what i knew, i missed a few steps like the onion and i intentionally left out the bacon, and i spread the avacado on instead of cubed it but it was still delicious ! thank you for the great idea i cant wait to try the cheeseburger flat breads!…and the chocolate cake!
Okay – Made these quesadillas last night and they were delicious – green chile in mine and jalepenos in my sweetie’s to spice things up. Had made a pot (our weekly pot) of beans with Chimayo red chile powder that I served on the side. May I, if I give you mucho credit, post about this recipe in my i love new mexico blog (see previous comment)?
I was just trying to figure out what we were having for dinner with those two chicken breasts I have thawing. . .I am definitely making this (my boyfriend makes HOMEMADE tortillas – he’d better get home in a hurry) and adding green chile. Yummm. I write a couple of blogs – check out http://www.ilovenewmexicoblog.com for some really fun green chile recipes. . .if you can get it where you live. Thanks – I’m so glad I found you!
we made these tonight & they were absolutely delicious!
Thank you so much for this recipe!! It has quickly become my go to dinner. However, I spice up the chicken using, sea salt, pepper, garlic, cilantro and crushed red pepper. I like the depth of flavor it gives.
I made this a few weeks ago & it was such a “hit” with my beau, that it’s on the menu again tonight. It’s so tasty!
Oh my goodness, my stomach is growling right now!!! I am making these asap. Anytime avocado and bacon are in the same dish,I love it.Thanks Amanda!
These have quickly become one of my favorites. I’m making them tonight for my sister & her family. Yum!
Wow..thanks for the recipe. I made this tonight for my husband and 2 sons and everyone loved it! What a great mix of flavors and a nice change from the typical quesadilla. Great job!
Wooaahhhh momma. These look too good. Will you please just come make them for me?!?!!! haha :)
I absolutely love all of your pictures.
omg. I was searching for a chicken quesadilla recipe, stumbled upon this one that you posted on my bday. . it’s fate. . I MUST make these for dinner tonight!!
You have an amazing blog!! Thanks for sharing!
These look delish! I love recipes with familiar ingredients the whole family will enjoy. Thanks for sharing!
Love this recipe!! We also make a similar one for the picky folks, I omit the avocado (though I love it) and add a half a can of cream of chicken soup. Mix the chicken, bacon, cheese and the soup together and stuff it all in together and voila! A moist cheesy quesadilla the picky kids love!
Oh yum! These are really similar to On the Border’s since retired Double Stacked Club Quesadillas. My local OTB still makes them if I ask nicely. Now I can just make them at home! :-)
Holy flip, these look so dang good I am salivating as we speak. And I’m pregnant which is so no bueno because no I am going to be craving these until I make them! Thanks for the recipe!
This looks fantastic! I make a great grilled cheese with bacon and avocado and I think this would be even better.
Just found your site from PW link. Amazing!
I was just wondering if you had the nutritional value on this… my husband does Weight Watchers and I really want to make this, but doubt he would eat it if he doesn’t know the point value. Thanks
If you do weight watchers you should be able to calculate the points yourself. You are responsible for your own weight loss, not others.
These look amazing. I know what I’m having for lunch tomorrow. :)
wow – what a cool way to cook bacon! And those look SO good – I love avacados… I am def. going to give this a try!!!!
I just wanted to say…thank you thank you thank you! I was just thinking about making quesadillas and I’m loving this recipe!
Made these for dinner last week and the whole family LOVED them. Thanks for sharing the recipe!!! :)
I’ve tried these twice. It must be food for husbands. I husband said it was the best thing i had ever made. Thanks!
Teresa
I can’t wait to make these! Tonight we are having your creamy chicken and dumplings…my family loves them!!
I made these for my family last night and they were a huge hit!!! Thanks for sharing the recipe. Can’t wait to try another!
These quesadillas were wonderful. I made these last night along with the cheese dip and they were both great. I think these would be really great either dipped in an avacado mousse, as well as an infused olive oil sauce! Thanks so much!
We made these and loved them!!!!! I used OBB taco chicken recipe for the inside chicken. http://www.ourbestbites.com/2008/03/taco-chicken.html
Also made your creamy chicken enchiladas the same week. Yyyyyyyyyuuuuuuuuuuuummmmmmmmmmmmmmmm!!! I have never made good enchiladas before and now I’m a believer!
Made these tonight….they were a huge hit!!! 15 min on each side of for the bacon was a bit much for my oven….most of them came out black! It could be cause I only did half a pound….but other than that they were awesome! Thanks for the recipe!
Made this tonight and it was awesome! I made it with whole grain tortillas and it was soooo yum! It was like everything was wrapped in a Wheat Thin!
We will be making this again!
Made these for dinner tonight, Absolutely DELICIOUS!!! I used turkey bacon and made it on the stove, though. …and used Ole Extreme Wellness tortillas. But, everything turned out perfect! My DH loved them! They were YUMMY! TFS :)
I loved these! So delicious, I made one and then my roommate got home and she was like: “where did you buy it?” Uhh…. no I made it (I never cook, but this looked so easy to do) and I just had to make another one for her and she loved it as well. An added plus, it was so QUICK! :D Thanks for posting this recipe!
Okay, YUM!!! These were delicious!! My hubby and I just had them for our Friday night dinner without kids!!! We will be eating them again and again and again–what awesome flavors together! Thanks so much for sharing!
I made these for dinner tonite and my husband said “Honey, OH MY GOD!” =) Needless to say, they were a hit in this house. I also cooked the 8 slices of bacon for 15 mins total because when I checked the slices halfway through, the one side was done. It came out perfect! I’ve actually never cooked bacon in the oven like that before.
We complimented our meal with two frothy glasses of Blue Moon and a slice of orange! Mmmmm…I’m full!
This looks absolutely delicious!!! BTW, avocados are healthy for you!! They are full of potassium!!!
Okay, maybe I’m just crazy, but every time I make bacon like this (which is WAY better than standing over a stove!!) It smokes like CRAZY!!! I have the vent fan on, the windows open, and every fan in my apartment on and my eyes are stinging from the smoke!! Literally, there is smoke coming out of the burners and through the small crack where the top of the oven door meets the stove. Any tips??? It’s most likely because my apartment is old and the oven is too–added to the fact that it’s a small space. Just wondering if you (or anyone else!!) has any tips that might help!!
My boyfriend just mentioned that it could be because I had the cooling rack standing up (like you would set it to cool cookies) and that if I had left the “legs” folded under, the bacon wouldn’t have splattered so much when it dripped (since it would have been closer to the pan), therefore causing all the smoke. I can’t tell from the picture how you have yours, Amanda, but maybe that’s it?? Who knows. At this point, it’s all out of the oven and about to go in my stomach so who cares? :)
Ashlee
All ovens do not heat the same. Try a lower heat. Try 375. You can brown bacon at 350 degrees. It might take a little longer. Put that rack flat on the pan. With less heat you will not have so much spattering.
Lee
Oh my… I just got done eating lunch and I coule eat this up anyhoo! Yum!
Made these for dinner tonight–yum!!
I bet you every person who read this post touched the tip of their nose to feel what an avocado should feel like. I know I did.
I’ve never seen that method for cooking bacon but am going to assume it cuts way down on the amount of grease you end up consuming? Thanks for the tip!
Hi Amanda, sometimes I’m half-afraid to open any mail coming from you, coz I know you’ll have something absolutely, deliciously wicked to share and I end up craving and wishing I could eat it off the screen! See, now Im hungry, lol!
But thanks for the recipe, hope to try that out someday!!! I love your photos: they’re good enough to eat (if only I could!) :)
Amanda, these quesadillas look amazing. I love avocado – and please bacon too. The combo is perfect. My kids would dig these & they would go great in their lunchboxes. LOVE the step by step photos! xo
I made these tonight…. SO YUMMY!!!!!!!!!! Thanks Amanda for the recipe :) My hubby was woah excited that I was thinking outside the box, hehe.
Hey Amanda, I made these for dinner tonight! Yummy!
Just one thing- you said to cook the bacon in the oven on 400 for 15 minutes PER SIDE.
So I did.
And when I opened the oven, black smoke billowed out.
On the upside, I’ve never seen such evenly burned bacon before…
I redid it, for 15 minutes TOTAL. And it turned out perfectly :)
Uh oh, Helena!! I do actually cook my bacon for 15 mins *per side*, and sometimes if it’s thick, it even needs a few more minutes. But then again I normally do an entire pound of bacon at a time, maybe that was it? So glad it worked out okay in the end! :)
Maybe my oven is over-ambitious. It could be heating up faster than normal, or something.
PS. My husband raved about these. I think we have a new staple :)
Sounds and looks super easy and delish! I cannot wait to try after a LONG day at class. Perfect for the ‘professional’ student.
This looks SO yummy! I’m totally making it for dinner tonight!
These look so amazing!! I love avocado sooooo much!!!
omg that looks soooo yummy. And your right, looks easy peasy too. I just might have to make that for dinner tonight. All I need is the bacon. :0) thanks for sharing.
Wow Amanda! These look sinfully delicious! I am a HUGE fan of avocados so I think we’ll try these this week. Thanks for sharing!
WOW! This looks absolutely delicious. Want this for lunch today :) You’ve inspired me.
