Bacon & Avocado Grilled Cheese Sandwich
In honor of National Grilled Cheese Day (April 12) I decided to share my FAVORITE grilled cheese sandwich with you today!! :)
My perfect grilled cheese has four integral ingredients that when combined together create the ultimate grilled cheese sandwich!
What You’ll Need for this Supreme Sandwich
- Buttery, crispy-on-the-outside, soft-on-the-inside sourdough bread
- 4 slices of gooey, melty, colby jack cheese
- 3 slices of center-cut bacon
- 1/2 ripe avocado
This is the perfect amount of gooey cheesy goodness to crispy carb ratio.
We make this all the time on weekends. It’s the perfect meal for brunch! Sometimes I’ll even add a scrambled egg. To DIE for!!

Description
This Bacon & Avocado Grilled Cheese is the epitome of comfort food. Flavorful and delicious, this is the best grilled cheese sandwich I’ve ever tasted!
Ingredients
- 1/2 avocado
- 2 slices sourdough bread
- 4 slices colby jack cheese
- 3 slices bacon
- 3 tablespoons butter
Instructions
- Cut avocado in half, scoop out the flesh, and cut into slices.
- Layer one slice of bread with 2 slices of cheese, avocado slices, bacon, remaining 2 slices of cheese, and top with remaining slice of bread.
- Melt half the butter in a skillet over medium to medium-high heat. When butter is melted and starts to foam, carefully place sandwich into the skillet. Cook for 2-4 minutes until bottom is golden brown and toasted. Carefully flip over, add remaining butter and cook for an additional 1-3 minutes until toasted. Serve warm and enjoy!!
Notes
A perfectly ripe avocado should give a little when pressed, but not be too mushy.
My favorite cheese is Ementhaler Swiss cheese from France. It is sold in the deli section sliced to order here in Az.
Wonderful nutty flavor.
Also love horseradish cheese with ham off the bone with mustard aioli – yum!
Is the bacon cooked before layering ?
Of course it is. The crisper the yummier!
