Double Fudge Chocolate & Peanut Butter Cookies
Oh my gosh, I am so excited to share these Soft Peanut Butter Double Fudge Brownie Cookies with you today! I am in love! And since they use a boxed brownie mix, they are SO easy to make. If you’ve never had a brownie cookie before, just take a look at the photos below. You are in for a treat!! :)

Seriously cannot get over how rich, fudgy, and decadent these cookies are. They are perfect when warm and fresh out of the oven! But they’re still soft and fabulous the next day too.
And you’ll definitely want to top with a scoop of ice cream to make a brownie cookie sundae!! :)
All you need to make these is 1 box of brownie mix, 2 eggs, flour, butter, and water. Plus your favorite mix-ins of choice: I chose Reese’s Mini Pieces Baking Chips and Hershey’s Milk Chocolate Baking Melts.
I love the mini Reese’s Pieces for baking (I can usually find them on the baking aisle or the candy aisle) but you can also use regular sized Reese’s Pieces, or chocolate chips, peanut butter chips, butterscotch chips, M&Ms, caramel bits, nuts, anything you want! :)
How to Make The Best Double Chocolate Cookies
Start by melting the butter… And since I was melting it I went ahead and browned it too! You can never go wrong with browned butter, especially in brownies! :) To make browned butter, just melt the butter over medium heat until it starts to foam, then whisk constantly until it starts to turn brown and becomes very fragrant. Then immediately remove from heat and pour into the bowl of your mixer.
While the butter is cooling a bit, I went ahead and gave the baking melts a rough chop. I LOVE using baking melts in cookies, especially when they’re chopped a bit. It makes the cookies so gooey and chocolaty! Even on the next day, the chocolate stays so soft, so when you bite into the cookie, it looks like it’s fresh out of the oven.
Then you just combine everything, scoop onto a cookie sheet, and 10 minutes later, you have these beauties.
Be sure and have a tall glass of milk on hand! You are going to want some with these cookies. :)
They are chocolaty, rich, fudgy, and delicious.

Description

Ingredients
- 1/4 cup butter, melted
- 1/4 cup water
- 2 Large Eggs, beaten
- 1 (18 oz) box Fudge Brownie Mix
- 1 cup All Purpose Flour
- 1/2 cup Reese’s Mini Pieces Baking Chips (or regular Reese’s Pieces)
- 1/2 cup Hershey’s Milk Chocolate Baking Melts, roughly chopped (or regular chocolate chips)
Instructions
- Preheat oven to 350 degrees F.
- In a medium bowl, beat butter, water, eggs, brownie mix and flour until just combined. Stir in Reese’s Pieces and chocolate baking melts or chips.
- Use a medium (1.5 tbsp) cookie scoop to place dough on a cookie sheet lined with parchment paper. Bake at 350 for 10 minutes. Cool on a wire rack.

Made these cookies last weekend to bring to sell at my daughter’s children’s theater concession stand. People snatched these babies up at $1.00 each and came back for more! They were SOOO good! I made them extra large with regular size Reese’s Pieces and regular choco chips and baked for 13 minutes. Perfect – can’t wait to make them again! (and so easy, too)
These cookies look awesome, but you’d have to pay me or strap me down to get me to watch Sweet Home Alabama. I’m pretty sure my husband would divorce me if I suggested it, which I wouldn’t. I’d much rather watch Pleasantville or Walk the Line. Can I eat the cookies with those movies?

I am fifteen I have been baking for almost two years now. Baking has become my passion as long as I can remember, and I guess that is a good thing for me and my family since we get to eat a LOT of different kinds of baked goods. Also, I just taught myself everything through internet also benefitting from the advice my mom keeps giving me.
Among all blogs that I constantly go through, yours has inspired me the most.
People (blogs) have always made me believe that baking is a science and that the quantities always have to be right and such, so I never really went overboard and made something up myself. Until I found your blog, that is.
So yesterday, I asked my mom to have faith in me, and went in the kitchen (aka: my kingdom).
I first used a vanilla-flavored instant pudding mix and did everything the box told me to, then (following your caramel recipe) I dipped some vanilla wafers in milk then placed them over the pudding, I mixed a little milk into some caramel (the caramel was more than the milk) just to lighten it up and to make sure it wasnt too sweet, then I poured that mixture over the wafers and added another layer of dipped wafers.
(I do realize I talk a lot, but bear with me, Amanda, if you even ARE reading this)
THEN, I whipped up some cream with a little sugar (just a little) and added a little milk to it so that it wouldnt be completely whipped nor watery, just somewhere in there.
i spread that over and (FINALLY) I drizzled some chocolate sauce on top and that was it.
Today, we had a family gathering, and all my uncles and aunts ate a serving after another from this thing I made up, and I swelled with joy.
When i tasted it, I realized that the different flavors and textures of the whole thing is what made it special. there’s the pudding first which was creamy and jello-y, then a soft crunch of the wafers mixed with the sweet caramel, and finally, the whipped cream with that last kiss of chocolate.
And I have to thank you for that, Amanda, for encouraging me to step up a little.
