You know I picked a pasta recipe to make first! :) I didn’t have to read past the first four ingredients — shrimp, avocado, lemon and pasta — to know this would be so right up my alley. Add in garlic, scallions, and Parmesan? It just sends it right over the top.

  • 1 ripe Hass avocado
  • 2 tablespoons grated Parmesan cheese, plus more for serving (optional)
  • 1 tablespoon fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • Coarse salt and freshly ground black pepper to taste
  • 1 pound linguine
  • 2 tablespoons butter
  • 2 tablespoons minced garlic
  • 1 pound medium shrimp, peeled and deveined
  • 1/4 cup chopped scallions
  • 1 teaspoon red pepper flakes

Instructions

  1. Cut the avocado in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin, and place the avocado in the bowl of a food processor. Add the Parmesan and lemon juice to the food processor bowl. Pulse the mixture for 1 to 2 minutes while streaming in 2 tablespoons of the olive oil until smooth and creamy. This recipe is quick and delicious and easy to prepare with a fork if the avocado is ripe enough. A wonderful creamy alternate for alfredo. The pepper flakes really make the dish but I will cut them in half depending on who I am serving. I like an earlier comment of holding back some pasta water to thin the sauce if needed. I really love that this is a sauce which will work as well over zoodles or spaghetti squash as it does on pasta which will make my low-carb folks happy. Thank you for the recipe.

Saw this today and immediately went in to the kitchen and made it. YUM! definitely a recipe keeper! OF course I added 2 more avocados, a lot more cheese, garlic powder, and fresh cilantro.

I made this for dinner tonight. Absolutely delicious! The avocado lends a rich, creamy flavor without adding a lot of fat.

Thanks so much for this recipe. I’ve made it many times and it’s become a favorite. Last night, I threw some chopped yellow peppers in with the shrimp sauté and added cherry tomatoes at the end. And I always keep a little extra pasta water on the side, since it gets a bit thick when I’m mixing the pasta and the sauce. Mmm mmm good

Had this pinned for some time now and had some shrimp to use. Tonight was the night to make this recipe. It was easy to make and so so so good!! Light and fresh will make again for sure! Want to try on zucchini noodles but not sure they can hold up. Thanks for another awesome recipe!

The recipe was great AND we got to watch Howie diving off the diving board while we enjoyed the meal. We have 2 Bostons too so watching that video definitely made our night! Thanks for sharing.

This recipe was delicious! I cut back on the butter (1 T) and oil for the pan (also 1 T instead of 2) to make it a little lighter, and it was still plenty creamy and luscious. (I also only used 10 ounces of pasta, so there was plenty of sauce.) The whole family loved it, especially my toddler.

This looks awesome!!! I’m not a huge parmesan/cheese fan, do you think I can substitute something else instead to make it creamy? Butter? Cream? What do you think?

    Thanks :)

if i don’t have a processor, do you think i could just mash the avocado and add the juice and parmesan before mixing instead?

This looks absolutely yummy! Is it possible to “pin” it to my pinterest site or should I just “copy and paste”?
    Thanks!
