Ham and Cheese Gnocchi
Oh my goodness you guys, this Ham and Cheese Gnocchi is one of our new favorite, favorite dinners!! Right after Christmas I was looking for a way to use up some of our leftover ham, and I wanted something ultra cheesy, creamy, warm and comforting. This super cheesy Ham & Cheese Gnocchi nailed it! It’s kinda like a dreamy baked mac and cheese, but way more grown up and a million times more decadent. First of all, gnocchi are basically like little pillows of dumpling goodness sent straight from heaven. Heaven, I tell you! I love gnocchi! Gnocchi and pasta are two things I think I could eat every day for the rest of my life. And when they’re surrounded by a cheesy, creamy sauce and beautiful, crispy ham?? It’s like I’ve died and gone to comfort food heaven. :)
The best part about this meal is that it all cooks in one skillet and it can be made in 15 minutes or less. Plus it uses easy ingredients you can always keep on hand. Yes to lightening-fast dinners and super easy clean up! :)
Here’s all you’ll need: 1 package Potato Gnocchi — We love the DeLallo brand, and you can also buy gnocchi in bulk at Costco! Perfect for always keeping on hand. :) Cheese — Swiss, Monterey Jack, or Gruyere would be beautiful here, but I used Pepper Jack to give this dish a kick. Butter, chicken broth, whipping cream. Diced onion — I love buying frozen diced onions so I can always have them on hand. Baby sweet peas. And diced ham. I diced and portioned out all of our leftover ham from Christmas, so I just grabbed ours from the freezer. Easy peasy!
How to Make Ham and Cheese Gnocchi
Start by melting a tablespoon of butter in a large skillet over medium heat.
When the butter is melted and foamy, add 2 cups diced onion. You don’t even have to thaw them first if you are using frozen onions like me. (That’s about 1 whole onion if you’d prefer to dice your own :)).
Cook onions until softened and golden brown.
Add ham and continue to cook until the ham is lightly browned, then pour in chicken broth and bring to a simmer.
Add the gnocchi, stir well, and cover and cook for 5 minutes.
Then stir in the peas (if your peas are frozen, go ahead and dump them in frozen!), whipping cream, and plenty of salt and pepper to taste. Sprinkle the cheese over the top and broil until golden and bubbly, about 3 minutes.
Swoon!

- 1 (16 oz) package potato gnocchi
- 1 cup baby sweet peas, frozen
- 1/4 cup heavy cream
- salt and pepper to taste
- 1 cup shredded cheese (Swiss, Monterey Jack, Gruyere, or Pepper Jack)
Instructions
- Melt the butter in a large ovenproof skillet over medium heat. Add the onions and cook until softened and golden brown. Add the ham and continue to cook until lightly browned.
- Add the chicken broth and water and bring to a simmer. Add the gnocchi, stir well, and cover and cook for 5 minutes until the gnocchi is tender. Stir in the peas, cream, and plenty of salt and pepper to taste.

Do you cook the gnocchi before adding it?
I did not. I let them cook by simmering in the sauce and it turned out perfect. The brand of gnocchi I had was Pampa and it says it cooks in 1 to 2 minutes.

This has been a part of our regular meal rotation for a while now. It’s so good! I always double it for my family of 5 (plus, we love leftovers!). I personally don’t add the extra water either. It was too watery for my taste before I started dojng that. Overall, its a solid meal and all of my kids approve.

I am making this for dinner right now. I changed it up a tiny bit.
1. I added chopped broccoli instead of peas (only my daughter and I like peas)
2. After I cooked my onion, petite diced ham and garlic I threw all the other ingredients together and I am baking it like a casserole..

We just ate this (well, half of it!) for dinner… and it was fantastic! So quick and easy and it used up my Christmas ham leftovers as well as the leftovers from other holiday get-together things: cheese plate (my luck: swiss and gruyere were what was left!) and the last of the heavy cream and my big carton of chicken broth. It was the PERFECT recipe for clearing out my fridge, but it didn’t taste like it was a clear-out dish at all… it was so delicious and creamy and cheesy! My whole family loved it! Sorry for all the exclamation points, but I’m actually so thrilled with how good it is, truly.
Just came across this recipe. Be warned, the ham makes this very salty so don’t add more. I added 1/4 teaspoon before tasting and quickly regretted it. I think this will be an inedible meal. Live and learn.

The last part of the instructions….Broil? Do the peas need to cook more than 3 minutes if I add them frozen (not use to peas, as I’ve never been a fan…giving them another chance). Sound yummy…can’t wait to try it….

Made this with leftover Easter ham last night – I used pepper jack cheese. Very easy and very yummy! Thanks for the recipe! My husband is not as adventurous when it comes to food, so he wasn’t sure what to think about the potato gnocchi… I liked it, but will probably use shell noodles next time :)

I made this tonight for dinner, doubled it, and used Parmesan cheese and muenster cheeses. Also only had fat free half and half. It was huge hit with my three year old, my parents and hubby!!!

I made a version of this tonight but made some substitutions to meet our tastes. DH is not a ham fan so I used andouille sausage and subbed the peas for broccoli. I also just used 1-1/4 cup chicken broth and no water since I had to open a can anyway. It was very good! DH had seconds, which is always a good sign! I had never used gnocchi before but will again. Thanks for the inspiration!
