Cake Batter Chocolate Chip Cookie Ice Cream Sandwiches
So excited to share this fun cookie recipe with you today! They are so good! I turned them into the ultimate ice cream sandwich, but these cookies are a triumph on their own.
They’re so ridiculously easy. Just 5 ingredients and NO measuring!! You just dump everything into the bowl and mix it up. They are super buttery and SO soft and chewy. They melt in your mouth!! Love these fun and easy shortcut cookies.
Check out your 5 simple ingredients. A yellow cake mix + instant flavored oatmeal make these the easiest cookies ever with a seriously yummy flavor. You  can use any flavor oatmeal you want to send these cookies over the top!! I used classic Maple & Brown Sugar here, but how good would Apple Cinnamon oatmeal be in the fall?? Omg I just had an idea. You could even use caramel bits instead of chocolate chips!! Or both!! I totally have to make those now. You could also make them with peaches and cream oatmeal, strawberry, banana… The options are endless! Blueberry Oatmeal with a yellow cake mix would be like blueberry muffin cookies!!
How to Make The Best Ice Cream Sandwiches
Start by melting your butter. You can quickly zap it in the microwave if you’re in a hurry, but I always like to brown my butter to give it a little extra flavor boost. Check out my Secret Ingredient Cookies for a step-by-step guide on browning butter.
Immediately pour the melted butter into a large mixing bowl and add your cake mix…
Two envelopes of instant flavored oatmeal…
And two eggs. Beat on low speed until just combined.
Stir in one bag of chocolate chips. I like using mini chocolate chips for these cookies, but feel free to use any kind you like. :)
Bake at 350 degrees F for 10 minutes until the edges are just starting to turn golden brown. You’ll have the chewiest, gooiest, puffiest cookie ever.
Now if you want to take these cookies over the top, turn them into the ultimate ice cream sandwich by placing a scoop of ice cream on one cookie, top with a second cookie, and cover in more mini chocolate chips.
Ridiculous. Make these cookies ASAP!!! I want to hear all about your flavor combinations.
Lemon Cake Mix + Blueberry Oatmeal + White Chocolate Chips?

In one word, AMAZING! Made them sandwiched with ice cream for dinner after Church today & they were enjoyed by all! Thanks so much for this wonderful recipe! The flavors are out of this world!
Saw this realized I had everything. made them that was the start have made many times. So many people have enjoyed they are amazed when I tell them how to make.them
As soon as I saw this recipe, I wanted to try it. But when I saw your suggestion for the spice cake/apple cinnamon cookies it was all over. I am sitting in my kitchen trying not to eat the whole batch myself. I browned the butter per your suggestion and also used the caramel bits (about 3/4 of the bag since they’re pretty big). I also had about 1/5 bag of butterscotch chips laying around so I decided to throw those in, too. They are incredible. I’m a chocoholic by nature, but these are some of the best cookies I’ve ever tasted! Thanks so much for sharing!! I’m making blue velvet with maple & brown sugar oatmeal and white chocolate chips at the end of the month for my niece’s birthday because I think blue cookies will look awesome. :) Thanks again!
hi!, these look amazing, I was wondering though, are they just scoop and bake, or do they need to be flattened?
If you just scoop and bake and then leave them on the baking pan for a few min after you pull them out, before transferring to a cooling rack, they are puffy and soft but flatten themselves out just slightly.
Made these this weekend and the kids loved them. The cookies are so good on their own when still warm! Thank you! This is a keeper for sure.
Thanks for this great, fast recipe! I needed to make these really quickly, so I added a little water to the mixture and put it all into a brownie pan to take them to a potluck in the form of a bar cookie, which was a lot less work than portioning out scoops of cookie dough. Next time, I think I’ll add some Nutella, too. Thanks!
I just made a half batch of these and they turned out perfect! Thanks, Amanda! :)
I made these with what I had in the pantry, a devil’s food cake mix and cinnamon swirl instant oatmeal. I added semi-sweet chocolate chips. They were fabulous!
About how many cookies does this recipe make? And do you think I could use old fashion oats instead of instant?
Thanks, can’t wait to try this recipe. :)
Previous reply’s stated that “quick” oats can be used to replace the oatmeal packets. Old fashioned oats take longer to cook. Get the “quick cook” regular oatmeal from the store.
These are easy, delicious and look perfect! Thank you!!
Have you ever tried making the dough in advance and freezing or refrigerating it overnight? I’m wondering if that would work with this particular dough? I am hoping to make these for a party this weekend, but was hoping to make the dough Friday and bake them Saturday morning. What do you think?
Definitely! Cookie dough does wonderfully refrigerated! For 1-3 nights, I would refrigerate. For longer, I would freeze. Hope this helps! :)
I made these tonight and they are amazing! I will definitely be making these again. Once I figured out how to brown butter, they were super easy.
is there anything I can use in lieu of the oatmeal packets? I don’t eat those and don’t want to purchase a whole box to only use 2…thanks!
You can use 1 cup quick oats. Hope this helps! :)
I just made these cookies and they are awesome and very
easy to make. Next, I will make a Chocolate cake mix with peanut butter
chips. Thank you!!
What a great idea to use instant oatmeal!
These came out great! I used a spice mix with maple brown sugar oatmeal and butterscotch chips!! They came out perfect. I even spread some peanut butter in between a couple and made a sandwich-yum! I already bought stuff to make a caramel apple version. Thanks for the great recipe.
Turned out great – daughter grabbed some for her lunch bag for work, so must be good!
Your pictures look amazing. I was so excited to try these I made them right away (today). I’m so sad though because they turned out NOTHING like your pictures and I did everything exactly as I should. The brown butter turned my dough dark and once I added the chocolate chips, it melted them and looked like brownie batter practically! Please tell me what I should have done differently. I am determined to get them looking (and probably tasting) just like yours! Yours also seemed to rise a lot better than mine- I tried not to overmix but maybe I did. Thanks
Hi Abby! I’m so sorry they didn’t turn out!! I would probably try not letting the butter get so dark the next time. You actually don’t even have to brown the butter at all, you can just melt it in the microwave if you want to try it that way. But if you still want that brown butter flavor, as soon as it melts and starts to get a nutty aroma (it’ll only be an amber color at this time, not dark brown), I would immediately pull it off the heat, pour it into the mixing bowl, and let cool to the touch, or at least 10 minutes. During this time you can gather the other ingredients, preheat the oven, wash the pot the butter was melted in, etc. Or you can set the mixing bowl in a bowl of ice and whisk the butter to speed up the process. If the dough still feels warm after adding all the ingredients except the chocolate chips, I would pop it into the fridge (or freezer) for a few minutes until it cools down, then stir in the chocolate chips. Hope this helps!!
I’m hooked! The chocolate chip is delicious. I am currently baking a lemon strawberry white chocolate chip version. Thanks for sharing such a great recipe!!
I’ve never “Browned” butter before, but it was easy, except I think I added the chocolate chips to soon and they melted a little in the batter… NOT a problem! They’re still YUMMY!! ??
Freeze your chocolate chips and they don’t melt when mixing!Â
What is the cup size for oatmeal I have some plain oats i need to use ??
Hi Sharon! You could use 1 cup quick oats. Hope this helps!
I was wondering if you ever tried these cookies with raisins or craisins in place of chocolate chip? We have a family member with an allergy to the chocolate and thought these might work with those in exchange for them, or maybe a trailmix blend they love to make them seem “healthy”.
Oh wow, oh YUM!!! I MUST try these!!
I have these in my oven right now! I made them using a Triple Chocolate Fudge cake mix and Strawberries and Cream oatmeal packets… if the batter is any indication these are going to be AMAZING! Don’t skip browning the butter because it adds awesome depth of flavor. Thank you for this easy and delicious recipe!
I am dying for these. That first photo? Total droolfest over here! Pinned.
I used spice cake mix, maple brown sugar oatmeal and cinnamon chips and butterscotch chips. It took 15 mins in my oven
I need to make these now!
I’m going to try these using carrot cake mix, cinnamon spice oatmeal, and Hershey’s cinnamon chips. YUM!
Did you try the carrot cake etc cookies? They sound awesome! I usually make no-bake cookies in the summer but those might be worth heating up the kitchen ?
Oh yum this sounds dreamy!!
The name is quite a mouthful!!! They sound amazing, I can’t wait to make them! Thank you :)
humm…Yes, please! What a great idea to use instant oatmeal!! These look incredible!
I just love easy cake mix cookies, but seriously adding instant oatmeal? Girl, you are a baking genius! Love it! Think of all the fun flavors…oh, wait, you did :-) And then filling them with ice cream and rolling in chips…I’m drooling over here!
The ice cream sandwich just takes it over the top! WOW!
These look AMAZING! I just stared at them for like 30 seconds lol! Oh if only I had some of these in my freezer right now! Love the tiny chocolate chips – totally squee-worthy!!!
I truly love recipes where I have everything on hand even though I had never thought of combining them. These look super yummy and I cannot wait to try them! Thanks!
Dang it, I was doing fine until I saw the gooey center of the cookie and started drooling like Pavlov’s dogs! Ice cream sandwiches ROCK!
You’re right–these cookies alone are incredible! How easy and packed with flavor! I love that you turned them into ice cream sandwiches too though. Totally over the top! :)
Love the fact that you rolled the outside in extra chocolate chips. Hubba hubba! These look heavenly.
Now those cookies just look amazing. I love the drip of ice cream coming down. Totally want this for a snack today!
gorgeous. just gorgeous.
