We *love* pasta around here- I have to admit, it’s pretty much my favorite food on the planet. But then if you’ve ever been over to the Favorite Recipes section of kevinandamanda.com, you probably already knew that! :) I’ve always wanted to make my own fresh pasta from scratch – I would love to make my own specialty flavored pastas… with yummy combinations like garlic & herbs (fresh from the garden!), roasted red peppers or tomatoes (fresh from the neighbor’s garden – what a fun red color this pasta would be!), or how about a speckled, lemon pepper pasta (in a light cream sauce with chicken or shrimp?? Or lightly buttered next to a steak! :)) and ooh, maybe some kind of spicy chile pepper pasta?? I’m thinking pepperoncinis or jalapenos would be perfect. :) Or for fall – a fun, bright orange, harvest spiced, pumpkin or sweet potato pasta?? I could go on. And on. Or, or – get this – a sweet, chocolate *dessert* pasta to serve with ice cream, whipped cream and strawberries. *dying a thousand little deaths*
But I’m getting ahead of myself here… :)
I was so, so thrilled when Bertolli (yes, that Bertolli! :)) contacted me and asked if I’d like to try making my own pasta. It’s like they read my mind. Um, yes! :) Definitely! :)

Three short days later, a beautiful pasta prize package showed up at my door. They sent an Imperia Pasta Machine (to make my first experience with rolling & cutting pasta dough a snap), an Emile Henry Lasagna Baker (for baking all my favorite pasta dishes to perfection- lasagna, macaroni & cheese, baked penne with roasted vegetables…), and a coupon for a free Bertolli Frozen Meal (for nights when I don’t have time to make my own pasta! :))
I was in heaven. I started with a recipe for homemade basil fettuccine to use with my brand spankin’ new pasta machine.

Oh man. I cannot even begin to tell you how unbelievably fantastic this smells right now.

It rolled out and cut really easily – it was not as hard as I was imagining!! :)

And the really cool thing – I was so surprised – when you get done cutting, you just kind of throw in into a pile. And then you dump that pile into the boiling water. And it all works out perfectly. It doesn’t stick or clump together. I was amazed. It was… simple.

Okay. Again. I cannot even begin to describe how good this smelled. Or tasted! :D The basil… *faints.* I wanted to eat the noodles just plain.

And it’s green! :) Love it – so fun! This should be the official dish of Christmas. This pasta making thing was a blast – I’m seeing this as a weekly occurrence now. I have lots of flavor combinations to try. :D
You have got to try making your own pasta- got, got, got to! :)
Oh! I cannot wait to make this again towards the end of summer when all my bell peppers and herbs are taking over the garden! :)

Next I tried our favorite lasagna in the ceramic lasagna dish they sent. It’s so cute – it’s a little bigger than an 8×8 dish, but not as big as a 9×13. It’s the perfect size for 4-6 servings. Our favorite lasagna isn’t fancy, but since neither of us really care for ricotta cheese, this recipe is just perfect for us. And simple, easy to keep on-hand pantry items make it a quick & easy weeknight meal – not to mention delicious! :)
Kevin & Amanda’s Favorite Lasagna
1 can cheddar cheese soup
1/4 cup milk
1/2 pound ground beef
1/2 lb sausage
2 cups spaghetti sauce
4-6 oven-ready lasagna noodles
1 cup shredded cheese (cheddar, or your favorite combo!)Preheat the oven to 400°F. Combine the soup and milk in a small bowl until the mixture is smooth. Set aside. Brown the sausage & ground beef together and drain off the fat. Stir in the spaghetti sauce.
Layer the lasagna in this order: 1/2 meat mixture, noodles, 1/2 soup mixture, remaining meat mixture, noodles, remaining soup mixture, then top with shredded cheese.
Cover the baking dish with foil and bake @ 400 for 20 minutes. Remove foil and bake for another 10-15 mins until cheese is melted & bubbly. Let stand for 10 minutes before serving. (If you can wait! ;))

The next night we used our coupon for a free Bertolli Frozen Meal for two – Sweet! Dinner on Bertolli tonight! :D
BTW, we ate good this week, huh.

2 extremely generous portions, only 500 calories each, ready in 9 mins, only messes up 1 dish – perfect for a quick dinner after a long day of kayaking! :)
Add a salad and bread and you’ve easily got dinner for 4.

Okay, so, I promise I’m not just torturing you! :) Bertolli wants to send one kevinandamanda.com reader a Pasta Prize Package of their own!
Time’s Up! We have a winner!!! :)

Favorite Italian Recipe:
Italian Chicken. Very easy. Chicken breasts, any spaghetti sauce, cheese, bake. YUMMY!
Amanda, How cool is it that you were able to make your own pasta with a new pasta machine! I have always wanted to try making my own also!! Maybe I will be able to …if I win! I have SO many Italian favorites, it is difficult to send you only one! But I would have to say a seafood lasagna hits BOTH of my favs…seafood and pasta! I can share the recipe if you want!
Chick Parm is definitely one of my favorite dishes–even if the chicken isn’t fried/breaded.
Giada’s Chicken Parmesan recipe with the Simple Tomato Sauce is a hit!
http://www.foodnetwork.com/recipes/giada-de-laurentiis/chicken-parmesan-recipe/index.html
I would love to be able to make my own pasta!
We also love pasta! Lasagna is a favorite around here. I love to make it with chicken and spinach.
I love a good lasagna! Or spaghetti or even an alfredo with mushrooms and garlic… mmmm I just love pasta! I could eat it plain. really.
Be still, my heart! I love pasta… And anything with pesto! I love most anything Italian, but a good Chicken Parm makes my heart go pitter patter!
What a fun post and giveaway!! My favorite Italian dish is fettucini alfredo, but I really just love pasta. And tortillini? Yum-o! I tried to make pasta once and it was a bust. The problem wasn’t with my dough, but with the pasta maker. I washed it first, like the instructions said and when I rolled out my pasta, there was some dirt (or something…ick!) transfered from the machine to the pasta. And it did it about 5 more times!
Now I use my pasta machine in the craft room…
Growing up my mom would make these fabulous Italian sausage and ricotta cheese stuffed shells. They are so yummy! We make our own sauce for these too. I would love to make my own pasta and reeallly hope to win!

How cool!! I love Italian food….my favorite is Seafood Fettuccini.
I love lasagna and also gnocchi with anything! MMMM!
I LOVE LOVE Pasta! I have never made or even had homemade noodles though. A pasta machine would be an awesome feature to add to my kitchen.
I actually never go by a specific recipe when I make pasta dishes. I just like to experiement with it and throw a bunch of random ingredients in a pan and out comes a dilicous meal!
Love the blog- keep up the good work!
That basil fettuccine looks delicious! My favorite pasta is cheese tortellini, followed closely by stuffed shells. Now I will need to make a pasta dinner this evening!
My favorite has to be lasagna!!
That looks divine! I love manicotti!
Great giveaway! My favorite italian dish is Cheesy Baked Ziti!
Seasidesmitten@aol.com

I LOVE Bertolli. Some of the best pre-frozen, packaged food I have ever eaten. My entire family loves it.
I don’t have a recipe, but one of my favorite Italian style dishes is shrimp fettuccini. My husband is WONDERFUL at making it – he whips it up from scratch, no recipe.
Smiles~
Marilyn

Yummo! Ever since we moved away from our favorite pasta place that makes THE best spinach fettucine, I’ve wanted to try my hand at making pasta. Maybe I’ll win! :)
What a FANTASTIC giveaway! I loooove me so pasta – any kind really!
Thanks for this great opportunity Amanda – you and Bertolli ROCK!
My family LOVES pasta of any shape, size & form. It’s the “starch” of preference in our house [and a great finger food since my little one is a self-feeding 1 year old]! I’d love to try making our own. Thanks for the chance to win!
OMG!!! I LOVE pasta!!! It would be so awesome to win this!! Then I could make my own Fettuchini and alfredo and all will be right with the world!!
I would TOTALLY love to try to make my very own pasta, especially after seeing the beautiful pictures of your homemade pasta. I could smell it through the computer monitor! Thanks!
My husband makes wonderful chicken pesto. It is a tad time consuming and dirties many dishes, so we save it for special occasions!
I love pasta, and I need a pasta maker bad!!
My favorite is shrimp tortellini. Made it for a bridal shower and it was a huge hit :0)
I’d love to try to make my own pasta! Lasagna is my favorite Italian recipe.
I LOVE Cheese Tortellini!!!! Hope I win! :)
Oh count me in! I would LOVE to win these great items! I cook all of our food from scratch as often as possible and this would be another great tool to have! :o) I love all italian food to be honest, but recently learned how to make lasagna in the crockpot (I have 3) and that is a real time saver. I will be trying your lasagna recipe next! My kids don’t care for the Ricotta cheese either. Thanks again! :o)
I could practically smell the fabulous fragrance from your pasta! Yummy :-) Congrats on your new pasta maker.
I looooove anything made with linguine! Mmmmmmm! It’s my favorite pasta everrrrrr! There’s something about the shape of that noodle that I love. Weird, huh? :)
As basil lovers, my husband and I would be over the moon if we could make our own fresh-from-the-garden pesto pasta. LOVE Bertolli–their tortellini is the best!
Well, here’s the deal…everyone’s favorite pasta recipe at our house came from right here at kevinandamanda.com so how cool is that? We make at least once a month (more if we’re having company) Grilled Garlic Chicken in a Tomato Cream Sauce! My two little girl even love it–and they’re pretty hard to please when it goes past chicken nuggets and bbq! We use linguine instead of other pastas mentioned, but it turns out so great and we make our own garlic bread, too. I would *love* to win this one because the pasta maker looks like it would be so much fun! I see a mommy-daughter kitchen day in the makes!
OH! I LOVE LOVE LOVE Italian Food. My fav is Fettucini Alfredo with fresh grated parmesan cheese. YUMMY! I can’t indulge very much because of the calories! If I could find an alfredo sauce that was less fat but tasted the same, I’d be in Heaven! :) Wouldn’t we all?
I love any kind of pasta with a thick vodka cream sauce!!
Oh how can I pick a favorite Italian meal! I grew up in an Italian family and we ate a lot of pasta and cheese of course. I would say my favorite is fettuccine alfredo with mushroom and Italian sausage with a moms homemade garlic bread! To die for!
OO how fun! and to be contacted BY Bertolli!! you are so big time!! Of course, I would love to win and try this! Plus it would be a good excuse to bust out one of my many aprons that i never use haha. I am known for my Baked Ziti…though I don’t know why – it’s nothing too special…maybe I am just the only one who makes it in my circle of friends. But bring it on! I would love to try making it from scratch!! :)
oh! this look so yummy! i’m smiling just looking at it :)
i would have to say that my favorite is ravioli…yum!
OMG Amanda – I have to win this! I love Italian food and it all stems from when I spent 3 months in Italy when I was in college. My favorite is to make my mom’s famous lasagna with my own homemade spagetti sauce – it’s the best!
Okay, I LOVE any kind of pasta with a pesto sauce!! Now, my husband is a wonderful chef and makes homemade meatballs for his delish spaghetti. It is very wonderful, and he loves a mean red sauce. I just really love the simplicity of a light fresh pesto sauce! Yummo!
OMG – what a great giveaway. Funny I am making your Pulled Pork today! As for my fav pasta recipe. I have a few, one is a really easy crock pot lasagna. I make my own meat sauce from scratch & use that to layer in the crock pot with a ricotta/parm/mozz cheese blend, fresh basil and regular dry lasagna noodles. 7 hours later – ready to eat & perfectly cooked.
My 2nd started out in the first cookbook my husband & I bought together called “Cooking for Two”. It is lemon-dill meatballs in a tomato cream sauce. It has grated lemon peel in the meatball mixture and the sauce ends up this great deep orange color.
I have worked on perfecting the dish for the last 13 years and it is the one dish everyone always raves about when I serve it not matter who they are.
Wow, that looks awesome!!! I’ve never done anything on my own like that… I just buy the Bertolli Tortellini and pesto sauce and whip that up real quick for a nice (easy!) dinner ;)
My favorite Italian dish is my good friend Mario! He’s such a wonderful guy and he’s marrying my equally wonderful Spanish friend Ana! But I digress. When he was here going to school, he promised to teach me how to make my own pasta. The sad thing is that that never happened. He moved to San Fran and works for Google now. So I guess if I want to learn to make my own pasta, i’ll have to win the prize package from Bertoli! I’ve had their frozen meals and they’re fantastic! But honestly, my favorite Italian pasta dish was eaten in Rome in 2001. It’s like a fettucini alfredo but the alfredo sauce has salmon in it! And if I remember right they used farfalle instead of fettucini. Add some crispy/chewy bread and a little white wine. You guessed it…heaven!
Amanda! My 3 year old just loves this same exact Bertoli that you and Kevin ate. He calls it ‘Sausage discs with noodles’. So cute! I have to eat Gluten free so no ‘normal’ pasta for me. I would love to challenge Bertoli to come out with Gluten Free options!
OHhhhhh-this makes me miss my grandmother. She used to make all of our pastas. I never knew what store bought pasta was till well into life! Even without the machine, you have inspired me to make my own pasta this weekend. Thanks for the memories! MMMmmmmmmmm-can’t wait!
Oh wow! A pasta making machine. I have never made pasta, but it would sure be fun to try!!! Your recipe ideas sound wonderful and if I win this machine I will come up with some of my own —- and share with you!! Thanks Bertolli! Oh, and thanks to you, too, Kevin and Amanda ;-)
I love anything with pesto!!! I also LOVE making spicy spaghetti with jalapenos! Delish!
Lasagna and chicken parmesan (chicken, spaghetti sauce and cheese). My grandmother made her own noodles (dried them on the back of a chair)–I’d love to do it with modern tools!
All your recipes sound so yummy!! Would love to try the pasta maker!!
Homemade lasagna is my all-time favorite meal. I’m excited to try your recipe!
My mouth is watering with your email/post!! lol I hope I don’t eat the monitor!! Anything Italian is great by me!!
Pasta? Yes, please! :) Any kind, with cheese…the perfect combination.
Oh my gosh! I’ve been dying for a pasta machine! Pasta is SO easy to make by hand…the hardest part is rolling it thin enough. :)
I have a recipe blog and here are my pasta recipes:
http://adorkablerecipes.blogspot.com/search/label/Pasta
Hey Amanda! My all time favorite pasta recipe is Rigatoni with Creamy Mushroom Sauce by Giada De Laurentiis. I make homemade rigatoni with a pasta attachment to my Kitchenaide mixer. I’ve never made homemade pasta with an Imperia pasta maker. I also like to brown some chicken tenders and add to the dish to make it the main dish! Love it!
OMG!!!!! I would just LOVE to try that….sounds great and looks wonderful too…. Bertolli is one of my favorite brands of sauce..Five cheese sauce…yummy – alfredo sauce – yummt… my favorites……….
My favorite recipe is gravy sauce! Lots of fresh tomatoes, basil, onions, garlics and mushrooms and one lb. each of ground beef and italian sausage with casings removed – let it simmer all day and what a meal!!!! My husband used to make pasta when he was a kid and absolutely loved helping his mom do that – I can’t convince him to show me how now, however! :(
My favorite pasta dish is actually homemade Vodka Sauce on just about any pasta. I got the recipe from my mother-in-law and its actually quite simple:
1/2 Cup Olive Oil
2-3 Garlic Cloves Minced
2 Large Cans of Crushed Tomatoes
4 Tbsp. Absolut Vodka
2 Cup Heavy Cream
2 Tbsp. Chopped Fresh Parsely
Heat the olive oil in a large sauce pan over medium heat and add garlic. After about a minute add in the crushed tomatoes and let simmer for about 20 minutes. Cook the pasta and whatever else you’re having with the sauce and when everything is just about done, add in the vodka, heavy cream, and parsely and let simmer for just a few minutes, then serve.
The sauce is absolutely delicious and I have yet to find a store bought version that comes even close. Plus it freezes really well so you can save any leftovers for a night when you have no time and just throw it on some pasta with a little store bought salad and you have a fast homemade dinner.
Looks like fun!
Ooooh, sounds so yummy!!!! I would love to be the winner!
Omg your pasta looks amazing!! I would love love love to get my hands on that pasta maker… My mind keeps going over all the possibilities for combinations that would rock my socks!!
Lasagna is pretty much the favorite in our house. Oh, and I’ve tried that Bertolli dish and its very good… I usually have to make 2 bags because I have a son and hubby with very big appetites!
YIPPEE!! What a great giveaway! You can use your pasta maker to emboss like a CuttleBug too! LOL
Thanks for the chance to win!
Oh, pasta is my favorite! I have never made homemade pasta, but sounds like it would be a great homeschool class for us! I am known for my seafood crepes…sorry but not a recipe I give out, kind of like bushes baked beans. HEEHEE

I love pasta. Although, i have never made my own, but would love to learn! One of our family favorites right now is Penne with ham and asparagus!

Yumm…. I would have to say you make this look so easy. I’ve made some egg noodles before (because my dad made it look so easy) and they turned out horrible! After readying your blog, this makes me want to try again! All of the different noodle types sound so good! My husband and I eat a pasta dish at least once a week if not more! We absolutely love Italian! Thanks for sharing!
Oh wow Amanda this is an awesome giveaway and very well put-together posting! Your photos are great! Making me so hungry! My favorite Italian dish is the browned butter & Mizithra (sp?) cheese at Old Spaghetti Factory, or my sister-in-laws spicy chicken pasta. I will try to get her recipe! My family would LOVE to be able to make their own pasta!!! Good luck everyone!
yum! I want to win!
I would love to make fresh pasta with my 3 girls! Start a tradition with them that they can pass down with their children! My family LOVES Bertolli sauces-perfect for quick meals in minutes!
What a cool give away! Our favorite pasta dish is Chicken parmigiana with spaghetti.
At our house we love lasagna and alfredo!
My favorite is a calorie-laden fettucine alfredo! I have never made my own pasta because I thought it would be too difficult. Think I am now up to the challenge.
oooo…. what a prize package!!! Yay! Pasta is just about the most heavenly food on earth! My most favorite? Fetucinni Carbonara! With peas.. and parmesan, and fresh eggs, (from our chickens) and more parmesan.. and cream. Oh. my. I now know what’s for dinner!
Thank you Amanda and Bertoli! Good luck everyone!
xoxo~

My family is Italian, so I am totally with you on the pasta part. LOVE IT! Every Sunday since I was a little girl, my family gets together for “basta” (basically our home made sauce and noodles… noodles are not home made though but you’re giving me ideas!!). Thanks for sharing, Amanda!
I love pasta and would love the machine!
We adore pasta in my house, and I’ve tried making it before, but without the roller, it wasn’t the same. Our favorite recipie is one from Emeril for salmon and pasta with cream sauce.
My favorite pasta dish is chicken alfredo with peas and mushrooms! YUMMY!!!!
At our house it is Cajun Chicken Fettuccine..I use some cajun spices on the chicken which is cooked in the pan, remove chicken make homemade sauce and add noodles, toss in the chicken and sprinkle the top with a little more seasoning. Makes great leftovers, too.

That video was so great! I also gasped and then gagged. LOL! The pastas you made look awesome and may just have inspired me to make some tonight. I’d love a pasta machine though. LOL!
Ravioli for sure.
My all time favorite is Fettuccine Alfredo but I don’t really have a recipe for it or I would share. What a great giveaway you are offering!
Great giveaway! My husband’s favorite dish is lasagna, so I will surely try your recipe. And I’d love to try and make my own pasta!
Thanks!
I’ve wanted to try making my own pasta for years but never have. And the idea of chocolate pasta sounds amazing. What about fruit pasta like a Strawberry pasta with a yogurt sauce?
As for my favorite Italian recipe that is a hard one…either my Chicken Alfredo Lasagna or my Baked Spaghetti Casserole. I’ll email you the recipes they are a bit long for a comment.
I would have to say Lasagna is our family’s favorite. Every year as we were growing up, we had a choice of going out to dinner or having mom fixed something we wanted. We always choose staying home for dinner and having homemade Lasagna.
I have never made my own pasta but now I totally want to! The Basil Pasta you made sounds delish as my most FAV pasta dish is anything I mean any noodle anything with PESTO I am obsessed with Pesto Pasta dishes and how awesome to make one with my own noodles, oh my kids would die it would be so fun! Thank you for offering this and for your blog I <3 it so much!
