Have you heard of Ritz Cookies? They’re a super quick and easy Christmas candy recipe. Ritz crackers are stuffed with peanut butter and dipped in white chocolate (almond bark).

My mom has made these every year since I can remember for Thanksgiving and Christmas. I look forward to them every year!

Ritz Cookies Ingredients

All you need are Ritz crackers, peanut butter, and white chocolate almond bark.

How To Make Ritz Cookies

Lay out a few Ritz crackers on a plate or some parchment paper.

Ritz Cookies — Ritz Crackers stuffed with Peanut Butter dipped in White Chocolate

And top the Ritz crackers with peanut butter.

Then place another Ritz cracker on top of the peanut butter to make these delightful little Ritz cookies. But they’re not done yet!

How To Melt Almond Bark

Place about 4 bars of white chocolate almond bark in a microwave safe bowl.

And melt in the microwave on low to medium heat, stirring every 30 seconds until the almond bark is melted and smooth.

Grab one of your Ritz cookies with some tongs.

And drop it in the white chocolate almond bark, turning it over a few times to coat.

Then tap it on the side of the bowl to shake off the excess white chocolate almond bark. If you don’t have tongs you could also use a fork.

Place the Ritz cookies on wax paper to cool.

These little Ritz cookies are so simple but always a huge hit. A delicious combination of sweet, salty, crunchy, creamy, white chocolate, and peanut butter.

You can also totally use chocolate almond bark if you love chocolate and peanut butter! Or drizzle these with chocolate almond bark to make them look more fancy.

These White Chocolate Peanut Butter Ritz Cookies are peanut butter stuffed Ritz crackers dipped in smooth white chocolate. They’re easy to make and super addicting!

  • 1 sleeve Ritz Crackers
  • 1/2 cup peanut butter
  • 4 squares (8 oz) white almond bark

Instructions

Spread a bit of peanut butter on as many crackers as you want, and top with another cracker to make a sandwich. Melt the almond bark in the microwave on low to medium heat, stirring every 30 seconds until it’s melted and smooth. Grab a cookie with tongs and drop it in the melted almond bark, turning over a few times to coat. Place on wax paper to cool for about 20-30 mins before serving.

    My mother use to make these when I was a child! My mom was not the cook or baker but the few things she did make was amazing! I now make these every season and now my daughter does as well. Always a big hit!!!

    We had something similar at a wedding and loved them, especially my husband, but he believes they had jelly too because of their sweetness. Would that also be a common practice? I read the comments and saw mentioned “marshmallow creme” added and wondered.

We add some mini choc chip eyes and a dollop of orange frosting for a nose and they call them ” frosty the snowman”.     I always make these plus I used white store bought frosting and add peppermint extract to it and put it between 2 ritz crackers and then dip it in white and choc bark. Put them all on a plate and you never know if you’re going to get peanut butter or peppermint taste. Yummy!!!!

    I made these for my husband and brother in law on Thursday after seeing this and they loved them!! My husband called them Chocolate Crack! I used chocolate bark instead of white chocolate but they tasted like a girl scout tagalong cookie! sooo good!

    These are my favorite every year! But I dip them in the chocolate almond bark. After they are set, I drizzle melted white almond bark across the tops. They look absolutely stunning – like something you would pay big bucks for.

    Sometimes I use the microwave to melt the bark, but I have discovered that I actually like using a double boiler best. I can melt a lot more almond bark at a time and it keeps the chocolate melted to the perfect consistancy while I dip a huge batch of cookies!

    Just got through making these, thanks for the inspiration! :) I put red glitter sugar on top to make them look a little more festive. I have ate these when other people have made them but have never made them myself, so glad I did cuz they are super easy and so good!

    My co-worker made these last week and brought them in.. she dipped them in milk chocolate though. I couldn’t get enough of them, they were delicious!!

    YUM! A lady I work with makes a similar version of these and they are so delicious. She makes them with a jar of marshmallow cream and 1 cup peanut butter mixed together, then spread between the crackers. Then, she adds some peanut butter chips to her almond bark when melting. They are heavenly!

    oh my god those sound delicious! but i think my favorite dessert of all times has got to be peppermint jo-joe’s dipped in peanut butter (if you’re wondering what a jo-joe is, it’s trader joe’s version of an oreo, but with crushed peppermint in the icing)!! must try!

    CRAZY! my mom always made these too for me during christmas. well, she passed away a year ago with stage 4 cancer and i have been so depressed this christmas season, but just yesterday i decided to break open the ritz, peanut butter and (we use chocolate bark) and we made a huge batch of these to pass around to our family and friends. she would be so happy that i am following in her footsteps. :)

    I don’t have the exact measurements in front of me, but I think you could google search… anyway, the BEST cookie I’ve ever tasted involves melting Mackintosh’s toffee with some evaporated milk, and a hint of butter (I think – if I recall correctly!), then stirring in cornflakes. Scoop out onto wax paper and let cool… if you can wait that long! DEEEEEVINE! :)

    btw I think your Jif jar was just a little bulbous on the bottom hence the angle…it’s minor. I just notice a tiny gap on one side of jar, who knows maybe the jar was dropped in the store or dare I say imperfect???

    Love, love, love these. My stepmom has made these for as long as I can remember and I’ve been making them for the past 10 years or so. Last year I bought 20 or so tins at the dollar store and gave them out as Christmas gifts to teachers, neighbors and friends. Huge hit!!!

    By the way, your pictures are great. The bokeh in the one of the chocolate dripping off the fork is awesome!

    I make these every year also! So easy & always a hit! =) They are great for giving in tins too. I usually sprinkle them with sprinkles or drizzle the opposite type of chocolate across the top (i.e., if making white chocolate ritz, do the milk chocolate drizzle.)

    These look great! My favorite Christmas treat is Oreo truffles. They are so yummy and easy…one package of regular Oreos crushed to fine crumbs..and one package cream cheese softened. Mix together well, form into 1 inch balls. Place on wax paper, freeze for a few hours until set. Melt white chocolate, stick a toothpick in the balls and dip. Set on wax paper again until set. You can store them in the fridge for 7 days!

    For Christmas, I prepare some hot prune with bacon and some alsacian cookies with my mother and my daughter. And I love my hot wine with spicies too ;o)

    Mmmmm…these are my fave. Instead of the white almond bark though, we used chocolate bark growing up. Now though, I use the Baker’s semi-sweet chocolate mixed with the Baker’s white chocolate. Yum. They’re now my 4-year old’s favorite “cracker-cookie” as she calls them. She also said they’re Santa’s favorite.

    Oh dear! Why did you have to point out the crooked Jiff?? Now my OCD has kicked in and I can’t stop noticing it! There must be a problem with the bottom of the jar. I know – we can stick a little felt bumper on the one side, retake the photo, and re-post! ………….NOT! I think we’ll just have to accept it. :)

    My best Christmas treat is a mini pretzel topped with a Hershey kiss, baked at 250 for a few minutes to soften the kiss, then press a red/green m&m on top when it comes out of the oven. Looks so pretty!

      Lois – I use the little waffle shaped pretzels and use Rolos instead of kisses. When they come out of the oven, take a pecan half and push down into the Rolo. We call them pretzel turtles – they are oh so yummy! Merry Christmas to YOU!

    Another tasty one similar to what you posted is using original wheat thins – peanut butter in the middle of 2 of them and then dipped in milk choc bark. They taste like butterfinger bites. Yummy!

    I’ll have to try these… also, on the back of the Kroger Vanilla Bark there was a recipe for a another treat…. Melt the Vanilla Bark, mix in Peanut Butter, then mix in Rice Krispy Cereal… I added some peanut M&M’s – this was huge hit for the guys in my office.

      Ohhhh yes! soooo good!! I take the Hershey’s mint chocolate truffles, and stick them between ritz crackers (andes mints work too) and then dip in chocolate bark or melted chocolate *drool* also good with the white/vanilla bark! :D

    I’m sure someone might have mentioned this already but I’m guessing your Jif container might be slightly bumpy on the bottom. That would be my reasoning. :)

    I almost made these yesterday. I’m the one that does everything candy related in my family and I saw this recipe on the package of almond bark I had (my first ever – I normally use high quality chocolate but didn’t order in time!) and thought about it. I may just have to try it now. But do you think I’ve made too much if I’ve already done oreo balls, chocolate marshmallow cake, white peppermint crunch fudge, and chocolate covered pretzels? Too much chocolate? Is there such a thing?!

    MMMMMmmmmm…. My Mom used to make these too when I was little. They’re also good coated in chocolate – dark or milk – and sometimes she used to put red and green plain m&m’s on top!

    Hey Amanda – I make these with Wheat Thins and chocolate almond bark. They taste like a mini butterfinger – so yummy! This year I also sprinkled some Heath toffee chips on them – also oh so good. Hope you have a Merry Christmas!

    My favorite Christmas treat is our Christmas wreath. We take the Rice Krispie treats recipe and substitute in cornflakes instead of rice cereal. We dye the marshmallow goo green. Then you form it into a big wreath on a pretty platter and make holly berries out of red m &m’s.

      I usually find it in the baking aisle with the chocolate chips. You can also use white candy coating. I’ve seen that at baking and craft stores that sell cake decorating items, etc. Merry Christmas, hope you can find it! :)

      Do you have white candy coating? I usually find this in the baking aisle, with the chocolate chips. Candy coating can be found at baking and craft stores here. You could definitely make it with chocolate, but this to me does not taste like chocolate. We have made it with chocolate before, but I prefer it with almond bark.

      Although I’m totally going to try the mint chocolate and dark chocolate varieties that Ann and Donna mentioned below! :)

    This recipe is for sure a keeper! So easy and looks so very delicious. I have a 9yr old who just loves to eat peanut butter and loves Ritz crackers…add the white almond bark and I am sure she won’t be able to resist and will definitely love these for a holiday snack.     Oh YUM!! I like them with Chocolate flavored bark!! Thanks for the reminder. I was planning to dip pretzels and nuts in white & chocolate bark tomorrow but now I also need to make some of these!!

    My favorite Christmas snacks also include Peanut Blossoms (hershey kiss on top), Pecan Pie bars, Pumpkin bars, and Pumpkin bread with lots of dates & nuts.
