Homemade Basil Fettuccine (Plus a Pasta Prize Package Giveaway!)

We *love* pasta around here- I have to admit, it’s pretty much my favorite food on the planet. But then if you’ve ever been over to the Favorite Recipes section of kevinandamanda.com, you probably already knew that! :) I’ve always wanted to make my own fresh pasta from scratch – I would love to make my own specialty flavored pastas… with yummy combinations like garlic & herbs (fresh from the garden!), roasted red peppers or tomatoes (fresh from the neighbor’s garden – what a fun red color this pasta would be!), or how about a speckled, lemon pepper pasta (in a light cream sauce with chicken or shrimp?? Or lightly buttered next to a steak! :)) and ooh, maybe some kind of spicy chile pepper pasta?? I’m thinking pepperoncinis or jalapenos would be perfect. :) Or for fall – a fun, bright orange, harvest spiced, pumpkin or sweet potato pasta?? I could go on. And on. Or, or – get this – a sweet, chocolate *dessert* pasta to serve with ice cream, whipped cream and strawberries. *dying a thousand little deaths*

But I’m getting ahead of myself here… :)

I was so, so thrilled when Bertolli (yes, that Bertolli! :)) contacted me and asked if I’d like to try making my own pasta. It’s like they read my mind. Um, yes! :) Definitely! :)

Three short days later, a beautiful pasta prize package showed up at my door. They sent an Imperia Pasta Machine (to make my first experience with rolling & cutting pasta dough a snap), an Emile Henry Lasagna Baker (for baking all my favorite pasta dishes to perfection- lasagna, macaroni & cheese, baked penne with roasted vegetables…), and a coupon for a free Bertolli Frozen Meal (for nights when I don’t have time to make my own pasta! :))

I was in heaven. I started with a recipe for homemade basil fettuccine to use with my brand spankin’ new pasta machine.

Oh man. I cannot even begin to tell you how unbelievably fantastic this smells right now.

It rolled out and cut really easily – it was not as hard as I was imagining!! :)

And the really cool thing – I was so surprised – when you get done cutting, you just kind of throw in into a pile. And then you dump that pile into the boiling water. And it all works out perfectly. It doesn’t stick or clump together. I was amazed. It was… simple.

Okay. Again. I cannot even begin to describe how good this smelled. Or tasted! :D The basil… *faints.* I wanted to eat the noodles just plain.

And it’s green! :) Love it – so fun! This should be the official dish of Christmas. This pasta making thing was a blast – I’m seeing this as a weekly occurrence now. I have lots of flavor combinations to try. :D

You have got to try making your own pasta- got, got, got to! :)

Oh! I cannot wait to make this again towards the end of summer when all my bell peppers and herbs are taking over the garden! :)

Next I tried our favorite lasagna in the ceramic lasagna dish they sent. It’s so cute – it’s a little bigger than an 8×8 dish, but not as big as a 9×13. It’s the perfect size for 4-6 servings. Our favorite lasagna isn’t fancy, but since neither of us really care for ricotta cheese, this recipe is just perfect for us. And simple, easy to keep on-hand pantry items make it a quick & easy weeknight meal – not to mention delicious! :)

Kevin & Amanda’s Favorite Lasagna

1 can cheddar cheese soup
1/4 cup milk
1/2 pound ground beef
1/2 lb sausage
2 cups spaghetti sauce
4-6 oven-ready lasagna noodles
1 cup shredded cheese (cheddar, or your favorite combo!)

Preheat the oven to 400°F. Combine the soup and milk in a small bowl until the mixture is smooth. Set aside. Brown the sausage & ground beef together and drain off the fat. Stir in the spaghetti sauce.

Layer the lasagna in this order: 1/2 meat mixture, noodles, 1/2 soup mixture, remaining meat mixture, noodles, remaining soup mixture, then top with shredded cheese.

Cover the baking dish with foil and bake @ 400 for 20 minutes. Remove foil and bake for another 10-15 mins until cheese is melted & bubbly. Let stand for 10 minutes before serving. (If you can wait! ;))

The next night we used our coupon for a free Bertolli Frozen Meal for two – Sweet! Dinner on Bertolli tonight! :D

BTW, we ate good this week, huh.

2 extremely generous portions, only 500 calories each, ready in 9 mins, only messes up 1 dish – perfect for a quick dinner after a long day of kayaking! :)

Add a salad and bread and you’ve easily got dinner for 4.

    I have the MOST AMAZING recipe for “Loser Pasta”. It’s an alfredo sauce with pasta and a couple other ingredients. I think there are only like 5 ingredients total & it is an AMAZING recipe! Every time I make it for friends or family, at least one person asks for the recipe!

    We could eat pasta every night of the week and not get tired of it. Our favorite pasta recipe was taught to us by one of our exchange students. We call it Julius’ pasta after him. No written recipe – it changes every time we make it. But here are the basics.
    1 lb (dry) rigatoni
    1/2 lb bacon cut into one inch pieces
    1 onion diced
    1 bell pepper diced (color of your choice)
    1 can diced Italian style tomatoes

    Cook pasta until tender. Drain.
    Fry bacon until done but not crispy. Add onion and pepper. Cook until tender. Drain off excess fat. Add tomatoes. Add to pasta and stir until combined. Add cheese if desired. You can also add a small amount of spaghetti sauce if it seems too dry.

    Other things we have added:
    fresh tomatoes
    asparagus (cut into 1″ pieces and steam until tender, then add to pasta mix- yum)
    chopped spinach

    Very versatile and oh so good!

    I love a good Pasta Primavera with fresh veggies! Especially with FRESH pasta, not the boxed kind. I haven’t tried to make homemade pasta since the 80’s and then it was a BIG ordeal. Now there are just 2 of us again and I’d like to try once more.

I was going to make soup for dinner but I think it’s going to have to be pasta tonight. LOL I’d love to win.     say, I have learned some great recipes from my son. He and his wife,
    and my oldest son and his girlfriend are all vegan. My son makes a
    absolutely delicious pasta (usually a ziti or penne), homemade sauce
    and he dresses it up with Tofurkey Italian Sausage w/sun-dried tomatoes and basil. Yes, it is vegan – but even the most carnivore

    My Aunt Jan is Italian, her daughters are vegetarians, so she had no one to pass down her homemade meatball and sauce recipe down to, so I filled those shoes! Her daughters wanted NO part of it, but I was all over it, as it is what we have been eating for years and years at family Christmas meals since I can remember and it is to die for!

    A few years ago, I asked to help her make Christmas Eve dinner so that I could watch and write down exactly what she does, as that is the only way I learn. The recipe is scribbled on three pieces of paper in the pantry and I recently asked her if I could blog about it, as I know that those papers are going to be lost in the mess that is my pantry sooner or later and she agreed. So when I make it next time, I will let you in on her secret; from the sauce, to the meatballs (which are my sons favorite thing to make and eat on the entire planet), to the garlic bread! I don’t make it that often as it seriously makes enough to feed 15-20 people (I don’t know how to scale it down, so when I make it, it is when we have dinner parties or when I need to have leftovers for quite some time)!

    Lemon Chicken is my absolute favorite. Plain noodles, chicken dredged and fried in oil, then, and this is obviously the most important part – the sauce. 1/2 cup of white wine (whatever you are drinking at the time) the juice of 1-2 lemons (i use 2 since i like lemon) and the zest from the lemons. 2 Boullion cubes, and 1 stick of butter. Throw all of that in a pot and let simmer until chicken and pasta are done. Then mix it all together. Top with fresh basil if available. Seriously, this sauce seems like it might not be all that great, but it is the BEST meal ever.

    Anyway, pasta is one of my absolute favorites. I am a carb girl. I can’t live without pasta. Just the other night I picked up some Bertolli pasta (in the refrigerated section) on sale for $2 + I had a $1 coupon so it was time to give it a whirl. I am hooked! It was my first time eating fresh pasta (other than in a restaurant) and it was divine! I threw some alfredo sauce on it, grilled some chicken breasts & threw a green salad together. It would be like asking me to pick my favorite out of my three kids! :) I am in equally in LOVE with a good penne alla vodka, pesto (mmmm, tastes like summer to me), a decadent lasagna, and good ol’ aglio olio.     The best Italian thing I ever made was the Lasagna Bolognese from Cook’s Illustrated magazine. Authentic lasagna Bolognese is a very long and complicated thing to make, but CI simplified it, and shortened up the prep time, and it was just amazing. It was even better as leftovers. I think you can just sign up for 14 days, and then let it lapse (don’t have to put in a credit card number or anything). But I felt like I could literally SMELL your homemade pasta through the blog post and you made me so hungry and I don’t know, something just reached out to me and said GO POST! But then I saw where there are 733 and yeah, like you will read through every one of them? I’m sure you will, so, if to enter is just to comment, I’ll do it.

    I’ll share with you my busy Thursday, almost pulled out all my Cook for the Softball Team Dinner!

    First, the recepie:

    Old Fashioned Lasagna
    (off the American Beauty Box) I LOVE THIS!

    1 package (8ox) American Beauty Lasadna
    1 lb beef
    2 cups spaghetti sauce (I use Ragu)
    1 3/4 cups ricotta cheese (the stuff you don’t like)
    2 cups mozzarella cheese shreded
    2 tablespoons grated Parmesan cheese (I use more!)
    2 teaspoons dried parsley flakes
    1 egg
    salt and pepper

    You mix the sauce and beef together, and you mix the rest together but saving some mozzarella cheese. You layer the noodels, the meat and the cheese sauce until you run out and then spread the saved mozzarella cheese over the top.

    Bake at 350.

    So, I put together 4 batches Thursday, cleaned my house, stressed because of work issues and still managed to pull off dinner for 25+ people and softball girls. (The are district Champs by the way) and yes, I could have bought Frozen Lasagna from Sam’s and served it up, but it’s just not the same as all the love and good wishes that goes into something for people you love.

    BUT the best part? They had the BEST time just being together.

    I love spaghetti and meatballs. I make terrific meatballs from my mother’s best friend’s authentic recipe. I’d love to make fresh pasta.

    3 lbs of chuck chop
    1 lb of sausage (your choice of hot, sweet, chicken or turkey even)
    8 cloves of garlic
    1 cup bread crumbs
    1 grated Romano cheese
    3 eggs
    2 Tbs chopped fresh or dried sweet basil
    1 Tbs crushed red pepper
    1/2 cup of milk
    salt and pepper

    Directions:

    Preheat oven to 350

    1. Remove sausage from casing and place in a bowl

    2. Add the rest of the ingredients to the bowl and combine with your hands.

    3. Roll into balls smaller than a golf ball.

    4. Line a baking dish with fall and empty bowl of meatballs onto the pan. Bake for 30 minutes.

    5. Then add the meatballs to your spaghetti sauce and let simmer. Most people cook their sauce (gravy) for 2 to 3 hours. The longer these meatballs cook, the more tender they are.

    Delicious!

    Wow, Amanda, sounds awesome! The giveaway, the pasta, the whole shebang! It reminds me of my brief time in Italy – there is nothing like pasta to fill the tummy & warm the soul! I made pasta with a friend, both pasta & ravioli – & the ravioli took all day but sure was fun. Pasta machines seem like a dream come true!!! Too good to be true! The ease! I bet you’re making some tasty pasta!

    Favorite pasta lately is one my boyfriend & I made up together that we called: Lenten Fish Friday Pasta Diavolo! (If you like spice, this is where it’s at!!)
    1. In a skillet, put 1 Tbsp butter & 1 Tbsp evoo. Add seasoned (salted & peppered) tilapia filets – cook in butter & evoo for 3 to 3.5 minutes per side.
    2. In a separate skillet, caramelize onions in evoo. Add 1 Tbsp tomato paste in a cup of red wine & 1/2 can of Rotel with jalapenos & habeneros. (YUM!) Bring to a boil & simmer.
    3. Add cooked fish, pouring juices on top; toss in some portobello mushrooms, garlic cloves, & crushed red pepper (to taste/as desired) & let cook together for about 2 minutes.
    4. Voila! Serve & enjoy!!! TASTY!!!

In my house the kids are huge fans of get this…kind of crazy…you might want to sit down…buttered noodles…I know it is way out there…any noodle you can find, butter and parm cheese.     Amanda–Your blog is very fun and I love your enthusiasm and photos for sure! With 8-year-old twins in endless activities, we do a lot of pasta dinners. One of our favorites is from Giada De Laurentiis which has fusilli pasta, fresh tomatoes, olive oil, garlic, basil & fresh mozzarella. It’s on the Food Network website and it’s called Fusilli alla Caprese. I have a note on the recipe from 8/17/08 from my son Ryan (then 6): “Mom, this is the best dinner ever!” But since we are on the go all the time, I am intrigued by the Bertolli frozen pasta–will have to check that out.

    This is my favorite “nontraditional lasagna”. Credits go to Kraft Foods magazine a couple years ago…

    what you need!
    3 Tbsp. butter
    3 Tbsp. flour
    3 cups milk
    1/2 cup KRAFT Grated Parmesan Cheese
    1 pkg. (10 oz.) frozen chopped spinach, thawed, drained
    1 cup BREAKSTONE’S or KNUDSEN Cottage Cheese
    1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
    1/8 tsp. ground nutmeg
    9 lasagna noodles, cooked, drained
    1/2 lb. deveined peeled medium shrimp, cooked
    2 cans (6 oz. each) crabmeat, drained, flaked
    make it!
    HEAT oven to 350°F.

    MELT butter in large saucepan on medium heat. Whisk in flour until well blended. Gradually stir in milk. Bring to boil on medium heat, stirring constantly; simmer on low heat 3 to 5 min. or until thickened, stirring constantly. Remove from heat. Stir in Parmesan; set aside. Mix spinach, cottage cheese, 2/3 cup mozzarella and nutmeg.

    SPREAD 2/3 cup Parmesan sauce onto bottom of 13×9-inch pan. Cover with 3 lasagna noodles and layers of half each of the shrimp, crabmeat and spinach mixture; top with 2/3 cup of the remaining Parmesan sauce. Repeat layers, starting with the noodles. Top with remaining noodles, Parmesan cheese sauce and mozzarella; cover.

    BAKE 45 min. or until heated through, uncovering after 25 min. Let stand 10 min. before cutting to serve.

    6 Servings

    1 lb Ziti
    1c shredded Mozzarella

    Sauce:
    4c Tomato sauce
    2c Alfredo sauce
    1/2c Ricotta cheese
    1/4c shredded Mozzarella
    1/2 tsp garlic powder

    Topping:
    3c shredded Mozzarella
    1/2c Italian bread crumbs
    3 tbsp grated Romano
    3 tbsp grated Parmesan
    1 tbsp chopped garlic
    3 tbsp Vegetable oil
    3 tbsp flat leaf Parsley, chopped

    1. Preheat oven to 375 degrees

    2. Whisk together Mozzarella, bread crumbs, Romano, and Parmesan. Add garlic, oil, parsley, and mix thoroughly.

    3. In another bowl, whisk together Mozzarella, bread crumbs, Romano, and Parmesan. Add garlic, oil, parsley, and mix thoroughly.

    4. Spray 13×9 dish with nonstick spray.

    5. Prepare pasta, drain.

    6. Pour 1/2c sauce into dish and spread over bottom evenly.

    7. Pour pasta into remaining bowl of sauce and mix; pour into dish.

    8. Spread 1c mozzarella over the top.

    9. Top mozzarella with topping mixture.

    10. Bake until golden brown cheese, bubbling; about 30-40 minutes.

    Oh my goodness those looked delicious! I felt like I could smell the basil through the computer. I have a friend who just bought a pasta maker at a thrift store but has yet to make any.
    My fave pasta right now (changes frequently!) is a baked mac&cheese… where all you do is layer elbow mac (lg or sm), grated cheddar cheese and canned tomatoes.. do this in layers like lasagna then add milk and the canned tomato juice until it fills the pan half way and bake! Delish! I love a crispy top =)

    Actually, I have two favorites: Pasta Aglio Olio (pasta with olive oil and garlic) and pasta w/scrambled egg, garlic & grated Asiago cheese. Recipes that used these ingredients can be found on the Internet – we just make ’em up as we go – adding ingredients to taste. (I don’t like tomato-based sauces.) We prefer Asiago and Parmigiano Reggiano. Do not use “canned” cheese.

    I lovvvvvvve Alfredo sauce on any Pasta!
    The easiest and best recipe I lovvvvvve is:
    Melt in sauce pan
    1 cube butter over medium heat
    then add 3/4 cup milk
    then add 3/4 cup Parmesan
    then add 8 oz cream cheese
    Warm till melted wisk in each ingredient
    add salt to taste and dried parsley for color and a little garlic powder adds flavor.
    Do not bring to a boil (it will scald).
    Thin with milk if it gets too thick.

    As a working mom, I had to find a quick simple way to make my families favorite dish, lasagna, in a pinch. I brown lean ground turkey, drain and return to sauce pan. I add pasta sauce, mushroom and green peppers and stir. I scoop about a cup into the bottom of a baking dish, layer cooked frozen cheese ravioli on top, repeat a layer of sauce and ravioli til all the sauce and ravioli are used. I then top with a layer of mozarella cheese and bake at 350 degrees for 20 minutes or so and its complete! In about 30 minutes your meal is complete. You can make it even simpler by omitting the meat and buying precut vegetables from the grocery store.

    My old roomate had the pasta maker you screw into a kitchen aid mixer and it worked really well too! We’d lay the pasta out on flour sack towels to dry overnight and then freeze it until we wanted to use some. Good lesson learned: When drying the pasta in a house with a dog, make sure there is no way the dog can get to it. They will eat it. Especially if it is spinach pasta- this is toxic to dogs and will make them very sick! But it tastes good!

    My favorite Italian recipe was acquired WHILE living in Italy!! It’s a prosciutto parmasian cheese ravioli.
    You make the pasta yourself (of course -and it’s SO not as fun as doing it with a pasta maker!) and cut it into 1″x1″ squares, set aside. You can use any pasta recipe you desire -the one I have uses Metric mesurements! Lol…. **Make sure you leave yourself enough time! -this takes quite a while.
    ~~~~~~~~~
    Combine in lg. mixing bowl (using your hands is the best, but you can use a spoon…)
    4c fresh parm.
    2c prosciutto
    1/2 c heavy cream
    minced garlic to taste (we use TONS)
    salt AND freshly ground peppercorns to taste
    red pepper to taste
    *other spices can be added, if you wish -we use basil and parsley…
    ~~~~~~~~~
    Using 2 squares, put 1 tsp. in the center of one square. Top with the second square, and squeeze the sides together.
    Boil until floating.

    There you go!! I hope you enjoy!!!

    I have never made my own pasta but I have made my own sauces … vodka sauce and then a green pepper/onion/meat sauce that’s really hearty for winter. “Secret” recipe alters and ingredient for both: triple the recommended amount of crushed red pepper and add a touch of hot sauce. I’ll let you determine the size of your “touch” but a little heat can spin the dish in a different (read: good) direction!

    If you don’t have a pasta machine, then Bertolli is definitely the next best choice! Love, love, love their products, since I don’t have the time to sit by the stove and make pasta sauce from scratch (at least during the week). I think my favorite has to be a red cream sauce (oh what cream does to tomato sauce!!!) with fresh italian sausage (which I purchase from a butcher in our Little Italy part of town). I’ve also been known to throw in a few pork chops when I do make my own fresh pasta sauce. I love experimenting with different types of pasta as well, although penne is my “go to” pasta favorite. I’m making myself hungry here! Oh, what I wouldn’t give to be the lucky person chosen for this prize! Thanks to you and Bertolli for the chance to have a bit of Italy in my own kitchen!

There is a local restaurant in Boston which makes the best Gnocchi Spezzatino. It’s a sundried tomato sauce which is quite rich but the gnocchi and veal go so well. *drool* :)

    Homemade Pasta?!?!?!? YUM!! Pasta is one of our family favorites and a staple to creating budget friendly meals!! Here is a very simple pasta dish that is one of our favorites.

    1 pkg Frozen 5 Cheese Ravioli (I use Great Value Brand)
    1/2 pound Italian Sausage browned & drained
    1 jar Ragu Traditional pasta sauce
    1 cup Shredded Mozzerella cheese

    Cook the Ravioli as directed (only takes about 4 minutes)
    Add prepared Sausage to sauce – heat
    Pour sauce over ravioli and sprinkle with mozzerella.
    You can also use shredded rotisserie chicken with Ragu Classic Alfredo. Yummy too and another favorite!!

    Serve with salad and garlic bread – serves 4

    To save time I use the full pound of sausage and 2 jars of Ragu Traditional. Divide and freeze one half for use later. I work 2 jobs so I always try to prepare a double batch so I can freeze one. Makes life easier!! Love, love, love your website and have shared it with many. You have such a sweet soul and that is a blessing!!

    I love pasta and have always wanted to try making my own — so fun that you actually got to do it! And it seems a lot easier than I had invisioned. My current favorite pasta dish is:

    Spinach Tomato Tortellini
    1 (16 ounce) package cheese tortellini1
    (14.5 ounce) can diced tomatoes with garlic and onion
    1 cup chopped fresh spinach
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1 1/2 teaspoons dried basil
    1 teaspoon minced garlic
    2 tablespoons all-purpose flour
    3/4 cup milk
    3/4 cup heavy cream
    1/4 cup grated Parmesan cheese
    1/4 cup of plain tomato sauce

    Bring a large pot of water to a boil. Add the tortellini, and cook until done. Mix together the tomatoes, spinach, salt, pepper, basil and garlic in a large saucepan over medium heat. Cook and stir until the mixture begins to bubble. In a bowl, whisk together the flour, milk and cream. Add this mixture into the saucepan. Then add the Parmesan cheese & 1/4 cup tomato sauce. Heat through, then reduce heat to low, and simmer until thick, about 2 minutes. Strain the tortellini, then add to the sauce and stir together.

    Add some salad and garlic bread & you have a delicious, easy dinner!

    Although I don’t know the recipe for it, I could have lived off the spaghetti carbonara. I also LOVED the homemade gnocci with a delicious four cheese sauce that a little trattoria by my apartment made. It was inexpensive and absolutely delicious! Of course, pizza marinara is always delicious. It’s a simple Roman pizza dough with marinara sauce. Each place had their own recipe for the sauce, so it was different everywhere I had it. I made the gnocchi myself once. The gnocchi was easy enough to make but i couldn’t quite master the sauce.

    Well… pasta is definitely something I serve my husband at least 3 days a week if not more. I make a dish called Chicken ‘n Pasta that is requested by him the most. It uses chopped onion, carrots and green pepper that is tossed together with cut up raw chicken breasts in a marinade of olive oil, garlic, cayenne and seasoned salt. This is ‘stir-fried’ then tossed with any cooked pasta from fusilli to farfalle. I would love to try make my own pasta!

It was a very low-budget trip so I allotted myself just ONE meal out for the month I was gone!     My husband and I made homemade lasagne noodles. I naively thought they wouldn’t taste any better than the dried noodles typically used. I was WRONG!!!!!     I absolutely love Italian!!!! I happen to be a big fan of LASAGNA! I mean seriously!? Who doesnt like LASAGNA!??? I think the best thing about lasagna is that there are so many variations and ingerdients you can substitute in a lasagna recipe. This makes it versatile and ofcourse always yummy to ANY tummy! So it’s lasagna for me! Ahhh a nice salad and toasty warm garlic bread, oh and a nice chilled glass of wine….. and its Italian heaven for me! :)

    This past summer, my boyfriend and I began making our own pasta using an ancient pasta maker that belonged to his Italian born great aunt. The flavor of homemade is *scrumptious* and a million times better than boxes. I dressed it up with simple tomato sauce or butter/parmesan/garlic. I’d love to learn how to add in fun flavors to my pasta. I’d also love replace our old “Pasta Queen” with a new, easy to use pasta maker.

    Hi Amanda,
    I love to cook onions and garlic until tender. Use a big sweet one. Next, Add a few chopped up tomatoes then throw in as much chopped greens as your pan can hold. I always use Kale that we grow in the garden. Add a little water and pop the lid on. Cook until everything is nice and soft. I usually let it go until everything starts to caramelize. Don’t forget to stir.
    Depending on the season, I’ll make a nest of either Angel Hair pasta or mashed potatoes, add a grilled chicken breast, then top with kale mixture and parmesan. Yum!
    Experiment, you can’t go wrong.

    My favorite if Fettuccine alfredo. I don’t make it often because its so bad for you but yummy!!

    My recipe…For the sauce
    1 stick butter
    about 1-1 1/2 cups heavy cream
    Heat over med. heat, until melted and warm…add 2cups Parmesan cheese
    stirring until melted…add garlic to taste.
    Pour over pasta and yum!!

    My younger sister lived in Italy for 18 months and learned how to make the most wonderful pasta there. My favorite that she brought back with her is zucchini pasta. Saute zucchini in a little bit of milk and add salt and pepper. Let the zucchini steam in the pan with a lid over it until it’s soft. Toss with a fun shaped pasta. Healthy, simple, and super delicious!

    I make a steak pasta dish with a dijon/balsamic/olive oil dressing my husband would die to have every night of the week!
    i use NY steaks and cut them into tin strips, season and cook in a saute pan (while the pasta is cooking)
    3/4 cup olive oil
    1/4 balsamic
    2 tbs dijon
    and 1/4 cup basil is all mixed together for the sauce

    toss it all together and voila! dinner is served – i get pasta and the hubby gets his meat!

    Easy Four Cheese Lasagna
    Prep Time: 30 Minutes
    Cook Time: 45 Minutes Ready In: 1 Hour 15 Minutes
    Servings: 8

    Ingredients:
    16 ounces uncooked lasagna noodles
    1 (26 ounce) can spaghetti sauce
    1 pound cottage cheese 8 ounces shredded mozzarella cheese
    8 ounces shredded Cheddar cheese
    1 cup grated Parmesan cheese

    Directions:
    1. Preheat oven to 375 degrees F (190 degrees C).
    2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
    3. In a blender or with an electric mixer, blend tomato sauce and cottage cheese together until smooth. Spoon a little of the sauce mixture in the bottom of a 9×13 baking dish. Place a layer of cooked noodles over the sauce, and sprinkle a portion of the mozzarella, the cheddar and the parmesan over the noodles. Repeat layering of sauce, noodles and cheese; finish with a cheese layer.
    4. Bake in preheated oven 30 to 45 minutes, until cheese is bubbly and golden.

    Pasta is awesome. My husband would go crazy without his Italian food! I’d love to learn how to make my own and really think it would impress him! Lately I’ve been trying to make his spaghetti healthier…and fast and simple for me since I’m always busy with our two small kids! It’s simple so hope you like!
    *1 jar of traditional Prego heart healthy
    *1 box whatever spaghetti you use (healthiest on shelf)
    *1 pouch Tyson pre-cooked grilled chicken strips (in refrigerator section at your local store…soooo good! Either plan or fajita
    *panko bread crumbs and 4 cheese Parmesan
    brown meat in skillet, pour on sauce. Heat to bubbling. Add 4 cheese Parmesan to taste. Add panko bread crumbs to thicken. pour over cooked spaghetti. Quick and simple supper for two. Dont forget the bread. I use Sister Schubert’s (where my husband works!) and add melted butter with a brush then sprinkle the 4 cheese Parmesan and McCormick garlic bread powder then bake and during last 5 mins add more Parmesan and a sprinkle of shredded Italian cheese.

    I love making lasagna. I usually use the recipe on the box of lasagna noodles as a starting off point. I add 3x as much cheese – – and usually mix it up between ricotta, mozzarella, parmesan and whatever other italian cheeses I can find. I also add a little more sauce and a lot more spices. Red pepper flakes and extra oregano are necessary!

I add Bernsteins Cheese Fantastico salad dressing to my pasta salad instead of just regular Italian dressing, and sometimes adding Feta cheese. My friends often request my salad.

    I make a ‘fancy spaghetti sauce’ as I call it. I carmelize the onions first and then add some garlic to that before cookin’ up the sauce and then of course lots of basil! This would be delicious on top of fresh homemade basil pasta!

    Amanda, one of my favorite pastas to make is chili flavored pasta. I just substitute a few tablespoons of chili powder for some of the flour and it makes a world of difference. I’ve made chili macaroni, then made “grown-up” macaroni & cheese using pepper jack cheese in it, but my favorite was to make chili pasta, roll it out in sheets, then place it on a ravioli form. Fill it with ground beef flavored with taco seasoning and you’ve got a pretty tasty ravioli – it doesn’t even need a sauce!

    My current favorite pasta is the Pioneer Woman’s Shrimp and Pasta in Foil. I’ve made it twice now, and it is without a doubt the best shrimp ever. We have shrimp at least once a week, but the way the shrimp cooks in her recipe is amazing. It is perfect.

My favorite super quick “recipe” for pasta is to cook fresh (refrigerated) pasta, then add pesto, steamed veggies and diced chicken and toss and warm through. You don’t need a whole lot of pesto, and the reduced fat version is just as good! Just add some great garlic bread and a salad and dinner is done!

    Any pasta is great, right? I’d have to say my favorite is browned butter Mizithra like they make at The Old Spaghetti Factory. I’ve found a few yummy recipes but none quite like theirs yet.

One of our most favorite meals is orzo pasta with diced red pepper, green pepper, zuccini, asparagus, and chicken with some parmesan cheese and olive oil sprinkled on top.     Fusilli with Spinach and Asiago Cheese

    Ingredients
    1 pound fusilli pasta
    1/4 cup olive oil
    1 garlic clove, minced
    1 (9-ounce) bag fresh spinach, roughly chopped
    8 ounces (1/2 pint) cherry tomatoes, halved
    1 cup (about 3 1/2-ounces) grated Asiago
    1/2 cup grated Parmesan
    1 teaspoon salt
    3/4 teaspoon freshly ground black pepper
    Directions
    Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta reserving 1/2 cup of the cooking liquid.

    Meanwhile, warm olive oil in a large, heavy skillet over medium-high heat. Add the garlic and cook until fragrant, about 2 minutes. Add the spinach and tomatoes and cook until the spinach wilts, about 2 more minutes. Add the cooked pasta and toss. Add the cheeses, salt, pepper, and the pasta cooking liquid and stir to combine.

    Transfer the pasta to a serving plate and serve.

    The Best Chicken Marsala

    I love Olive Gardens Chicken Marsala! When we moved to NC we had an Olive Garden in our town, and I was soo excited!! Now that we’ve moved back to Virginia, the closet one is 45 minutes away. My husband and I Love it. I hope You will too!

    The Best Chicken Marsala

    1/2 cup flour
    skinless boneless chicken breasts
    5 tablespoons butter (or margarine)
    4 cups of chopped mushrooms
    Marsala cooking wine
    olive oil
    chicken stock or broth
    Pinch of salt and black pepper

    First combine a 1/2 cup of flour, a pinch of salt and some black pepper into a bowl or casserole dish. Coat the chicken breasts with this seasoned mixture.

    Next add a few splashes of olive oil and butter into a large skillet and turn on the burner to medium-high heat. Brown each chicken breast for 3-4 minutes on each side and then set them aside.

    Chop up mushrooms and add them into the skillet with another tablespoon of butter or margarine.

    Cook the mixture until the mushrooms start turning golden brown. Then add anywhere from 1/2 to a full cup of Marsala wine, depending on your preference for a strong or weak sauce, and bring it to a boil. Keep stirring frequently until the wine has reduced down and then add about 3/4 to 1 cup of chicken stock.

    Place the chicken breasts back into the skillet and cook for about 5-7 minutes or until they are done.The sauce should be thickening up at this point so go ahead and add some more of the butter.

    Serve over Pasta of your choice And garnish with cheese!

    CREAMY, CHEESY PASTA DELUXE

    1 lb dry fettucine pasta or any long pasta
    8 oz cream cheese, cut into cubes
    1 stick butter
    1 clove garlic, minced
    2 cups grated cheese (freshly grated Parmesan cheese is my favorite)
    2 small zucchini, julienned
    1/2 cup chopped red bell pepper (optional)
    1 can premium brand chunk breast of chicken, drained
    salt and pepper to taste

    Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 10 minutes; drain. While pasta pot is boiling, cook cream cheese, butter, 2 cups grated cheese, minced garlic, zucchini and red bell pepper in a saucepan over medium-low heat, stirring frequently, until veggies are tender, about 7 minutes. Season with about 1 teaspoon each of salt and pepper. Add drained chicken chunks and pasta, toss well to coat. Transfer to serving dish. Pass grated parmesan at the table. Crusty bread and a salad is all that’s needed to make a satisfying and quick meal.

    Okay, so my fav recipe right now is a Baked Ziti I found in the Costco cookbook from last year :)

    2tbsp olive oil
    1tbsp crushed garlic
    1 tbsp finely chopped shallot
    3/4lb NY Style bulk sausage
    1/2 tsp salt
    1/2 tsp ground pepper
    1.5cups diced eggplant
    1.5cups diced brown mushrooms
    1/4 cup white wine
    1/4 cup chicken stock
    2tbsp chopped fresh basil
    4oz part-skim ricotta
    3/4 cup shredded provolne
    1.5 cups favorite pasta sauce
    8oz ziti or penne pasta cooked
    1/4 cup parmesan cheese

    Preheat oven 350*
    In a preheated nonstick skillet over medium heat, saute olive oil, garlic, shallots and sausage for 2-3 minutes or until lightly browned.

    add salt, pepper, eggplant and mushrooms, saute for another 1-2 min.

    Turn heat up to high, add wine and stir until evaporated. Add chicken stock and cook until slightly reduced. Return heat to medium and simmer for 1-2 more minutes

    Gently fold in basil, ricotta, provolone and sauce. Simmer for 1-2 minutes.

    Fold in cooked pasta and parmesan cheese.

    Transfer to a casserole and bake for 8-10 minutes, until warmed the whole way through. :)

    Serves 4-6

    I love Pasta. I love Vodka Sauce! I’ve never tried to make it but would love to! For sauce I’m sooooo much the cheater. I take regular store-bought Ragu or Prego and doctor it up. Hubs can’t stand any tomatoes or onions chunky so I have to run it through the processor first, then I add fresh garlic, seasonings, capers, kalamata olives etc to taste! Yummmm! BUT I just realized something after watching an episode of cooks kitchen (the test kitchen people) why buy the spaghetti sauce. I want to try what they recommend: Buy canned tomato sauce! I won’t have to puree it and I can still add fresh garlic and basil etc to my hearts content!

    What a wonderful giveaway! This is kind of boring, but my spaghetti and meatballs is everyone’s favorite. My dad requests it, my father in law, my friends when they come for dinner, pretty much everyone. I make the sauce from scratch in the morning, along with the meatballs, and then I let the meatballs simmer in the sauce all day.     Mmmm, pasta! I love the Bertolli quick meals; my husband and I always keep one in our freezer because they’re so yummy and quick! They’re enough to feed us and our two year old. I’ve never made pasta but would love to! And my favorite pasta recipe is actually the sauce that goes on top:

    1# ground turkey
    1 large can of crushed tomatoes
    1 can of Rotel (or diced tomatoes)
    1 small can of tomato paste
    1/2 yellow onion, diced
    3 cloves garlic, minced
    1-2 TBSP of Italian herb mix (I like Ana’s Herbs)
    a little bit of olive oil
    touch of brown sugar

    You dice up the onion and saute it in the EVOO, then add the turkey and brown it up a bit. Add in the paste and tomatoes (both cans), add some italian herbs, salt and pepper and let cook for about 10 minutes on low. Then add in the garlic and brown sugar, give it a good stir and let it simmer on low for another 30. We eat it with all types of pasta, and when we’re sick of pasta, we spread it on a ciabatta loaf that’s been cut in half longways, top it with cheese, and then broil it to make pizza bread. So yummy! I hope you’ll try it!

    OMG! Can I just say how absolutely adorable you are!! I just came across your website (I have no clue how, but I am so glad I did), literally 2 days ago and I probably spent the greater part of my Wednesday browsing your website. Precious! Anyway, I have an AMAZING pasta dish; I am part Italian so I have an immense LOVE for all things pasta! It is called FUSILLI ALLA CAPRESE. My husband asks for it for dinner atleast 2-3 times per week. Fortunately (for myself mostly) I was able to convince him, ONCE a week so neither of us would get tired of this dish. I have had numerous friends ask for this recipe. It’s light, fresh, filling and DELICIOUS! I hope you try it, you won’t be disappointed!

    FUSILLI ALLA CAPRESE
    3-4 tbsp Extra virgin olive oil (evoo)
    3 cups diced tomatoes (I use 6-7 roma tomatoes)
    dried basil to your taste (OR 1/4 cup fresh torn basil; dried basil is way better and gives it a lot more flavor, so just sprinkle until it’s to your taste.)
    2 cloves garlic, minced
    1 box fusilli pasta (OR Rotini pasta; we use the rotini)
    1 tsp salt
    1/2 tsp pepper
    Shredded mozzarella cheese (or diced fresh; I am a cheese-aholic…so it’s to your taste)

    Bring your (nicely) salted water to boil before adding in your noodles. Boil for 8-10 min…you want it al dente. When it’s finished, save 1/2 cup of the pasta water and drain the rest.

    In a saucepan, put in your evoo and garlic; medium heat and cook garlic until its aeromatic. Turn down your evoo and add in your diced tomatoes, turn your heat back up to medium and allow tomatoes to get quite soft. To the point where you can gently smush the tomato and it’s nearly turned to a “salsa” like consistency. At the last minute add your tsp of salt and 1/2 tsp pepper. Mix in well and pull off the heat.

    Add your tomato mix to pasta and stir well; add in your 1/2 cup of reserved water. Let pasta mix cool a little before adding your cheese and basil. (In the meantime, I make garlic bread) Your pasta should still be relitively warm still, add in your cheese and basil. Stir well. Add until it’s your desired basil taste and as much cheese as you prefer. SERVE!!!!

    Oh wow! How fantastic! I would love to win. My husband has a gluten allergy, so we eat rice pastas and other gluten free varieties. I’d love to be able to make pasta for him from scratch! Our favorite pasta dish is super easy. We call it hamburger bake.

    Cook a box of pasta according to the box. We typically use elbow macaroni. Brown ground turkey or beef. Add in half a diced onion and one diced green bell pepper. Mix 1 can of cream of mushroom soup with one can of tomato soup and a can of italian stewed tomatoes. Add pasta and meat to the soups. Add a handful of shredded cheese (we use cheddar). Put in a casserole dish and top with shredded cheese. Bake for about 30 minutes at 350. Delicious and reheats really well!

    I enjoy most things pasta, but my favorite is lasagna. Every time I make it, the lasagna seems to turn out different and never quite like moms. Bertolli has a really good substitute for those days when I just don’t feel like making it from scratch or want all the left overs as theirs is the right portion for two! Add some garlic toast and a salad and its a perfect meal!

    I want in on this contest! My DH ALWAYS is talking about making our own noodles, but with three kids I can get a tad lazy with homemade noodles! This looks yummy! My favorite (and easiest) italian recipe is fettucine alfredo. So easy. 3 Tbl butter, 1 1/4 c heavy whipping cream, 1 3/4 to 2 c fresh grated parmesan. And salt and pepper if you want. Bring to a small boil then simmer ten minutes. Stir constantly. Then pour over noodles with grilled chicken breasts and a lovely steamed vegetable. So simple and I love it.

    Chicken Farfalle with Garlic Cream Sauce

    1 chicken breast (grilled)
    6 slices of Bacon
    ½ onion, thinly sliced
    2 cloves of Chopped Garlic
    basil to taste
    Fresh green onions to taste
    parsley to taste
    1oz of sundried tomatoes
    1 cup of Chicken Stock
    2 cups heavy cream
    1/4 lbs of Penne or farfalle Pasta (cooked al dente)
    2oz of Parmesan Cheese
    2oz of Mozzarella Cheese

    *brocilli, olives, mushrooms, and peas can be added to this as well

    Prepare the garlic cream. Grill Chicken Breast to doneness and dice into 1inch cubes
    cook bacon until crisp, remove from pan drain on towel and coarsely chop and in drippings saute onions until soft and beginning to brown. add garlic and herbs, peas, sundried tomatoes, and Bacon. Sauté’ on medium/high heat then add the chicken to the pan. Take the pan off the heat and add the chicken stock and cream. return to heat to reduce the sauce until half in size or it is thick enough to coat the spoon. then stir in the garlic cream and the pasta. reduce till the sauce coats the pasta.
    Take the pan off of the heat and add parmesan and mozzarella cheese. Mix in the cheese with tongs so mozzarella and parmesan is throughout the pasta.

    Roasted garlic cream

    1 cup peeled garlic
    1 cup olive oil
    2 cups heavy cream
    1/2 tsp salt
    1/2 tsp pepper

    Place garlic in saucepan and cover with oil. Heat on medium high and cook for about 10 minutes until garlic is golden brown, but not burnt. Strain the olive oil, which may be used for later recipes. Put the garlic in a food processor or blender. Heat cream and reduce it to half of its original volume, about one cup. Pour cream in with garlic and puree into a paste.

    This all looks AMAZING! You are one lucky gal!! I love cheese tortellini with alfredo sauce, pizza, spaghetti and meatballs and pretty much anything Italian. I love lasagna but I don’t like ricotta or cottage cheese (yes, I’m extremely picky). I have been trying to find a recipe that omits these. I love basil pesto though so I am going to get to work on my own recipe (which I will share with you when I get it perfected) that has basil pesto maybe mixed with ricotta in between the layers of noodles and sauce.

    That pasta looks sooo yummy!! I would absolutely love to win that pasta machine! My favorite pasta dish is Cream Cheese Chicken Lasagna. It is super easy and my kids even LOVE it! You shred some chicken, (I usually just get a rotisserie chicken), and mix it with cream cheese and a little mozerella cheese. Then you layer the lasagna noodles, chicken mixture and sauce (I use Classico Tomato and Basil). Top with lots of Mozerella cheese, bake at 350 degrees for 45 min to one hour and you have a delicious meal!!

    Oh WOW! I have been looking at pasta machines for the last 6 months!! I cannot believe I could have a chance to WIN one! How cool is that???? Plus, Amanda, you have inspired me so much with your weight loss – I’ve joined Weight Watchers online and also signed up for Spark. Spark has already given me SO much information – I especially love their daily emails of inspiration. Unfortunately, after a lifetime (I’m 47) of bad eating habits, I have almost 100 lbs to lose. It’s going so slow, but I’ve begun exercising and making healthy choices at the grocery store. I have 4 children that really need to learn better habits than I did. I’m only buying fruit and crackers for snacks, have stopped making afterschool goodies like cookies and brownies and I have pushed my kids outdoors to play rather than having them watch a movie or play a video game. It really is like making a paridigm shift – it’s a whole new lifestyle. After about 4 weeks, it is finally starting to feel good. My energy level is gaining and I find myself wanting to be outside more. It’s hard to be in public when you are so overweight – but at least now I am doing something about it. One of the reasons I have wanted a pasta machine is to take more control over what I feed my family. I am paying more attention to labels and have realized so many foods are filled with sugar of some sort.

    Buy the frozen ravioli (b/c I don’t know how to make it);
    Mix olive oil and basil pesto mix in bowl;
    Cook ravioli and drain;
    Pour pesto sauce over ravioli; and
    EAT

    My grandmother used to make egg noodles all the time b/c that’s what you do when you have 13 kids, I guess. Even after her kids were gone, she made noodles for others at our church. We got to help, but we had NOTHING like the noodle making machine!

    Chicken Parm With a side of noodles.

    Boneless Skinless Chicken Breast
    Bread with egg and Italian Seasoned bread crumbs (don’t forget to add salt and pepper) and fry in EV Olive Oil until both sides are completely browned and crispy.
    Remove and place in Baking dish. Add Tomato Basil Sauce and top with Mozz Cheese and a sprinkle of Parm cheese. Bake in over at 350 until cheese is melted.
    While that is baking, find some Fettuccini noodles and boil those up and add sauce of your choice, red, basil, or white. Doesn’t matter, it’s all good!!!!!!!!!!!!!!!!!! A great veggie would be spinach.

    I love pasta also. I was able to go to Italy this past summer and it was wonderful to actually be able to have real Italian food. Since then, I have been experiencing more with Italian dishes. I have found one called Spaghetti Trinidad and it is wonderful. We currently live in Malawi, Africa, and it’s hard to always find pre-packaged things, so this is really simple to make here (and it’s delicious). Here’s the recipe (courtesy of http://www.robinsweb.com/food/maindish.html):

    Spaghetti Trinidad

    1 box spaghetti
    1 pkg. bacon
    olive oil
    1 onion
    garlic cloves, to suit your taste
    baby carrots, sliced into thin coins
    1 green pepper
    salt & pepper to taste
    Parmesan Cheese

    Fry bacon, cool, drain, crumble, set aside. Start salted, boiling water for spaghetti. Heat olive oil. Saute onion, thin sliced baby carrots, green pepper and fresh garlic clove. Drain pasta. Toss all ingredients together, add more olive oil, salt, fresh ground pepper and be very generous with parmesan cheese. This dish is great the first day and spectacular the second day. There will never be leftovers of this dish!

    One of my favorite, go-to pasta recipes is a simple spaghetti carbonara. it’s perfect for busy weeknights because it only takes about 10 minutes!

    1lb spaghetti
    1/2lb thick bacon or pancetta
    2 garlic cloves
    2 eggs
    salt & pepper
    1/2 c. grated parmesan cheese (or more, if you like cheese, like i do)

    boil salted water and add pasta. while the pasta is cooking, cut bacon into 1 inch, bite size pieces and cook through (careful not to overcook) in a skillet with garlic. whisk eggs, salt & pepper in a large serving bowl. when pasta is done cooking (about 10 min.) drain, and immediately toss into eggs to coat (the heat from the pasta will cook the eggs). then pour in bacon (leaving some of the dripping from the bacon will add flavor) and toss to coat. and finally toss with grated parmesan.

    So my fav is Rigatoni Bake. It’s really just a combo of spaghetti and lasagna. I use my regular spaghetti recipe and mix it with rigatoni pasta then put it in a baking pan with mozzarella, parmesan, and olives on top and bake for about 20 min until bubbly! ;0)

    I {heart} Pasta! I think I was supposed to be Italian! But my favorite is Blackened Chicken with Fettuccine Alfredo! We created our own blackened Chicken recipe {not hard at all!} and then I use this recipe for the fettuccine:

    8oz Cream Cheese cut into bits
    3/4c Parmesan cheese-grated
    1/2c butter
    1/2c milk-or more depending on desired thickness
    8oz fettuccine-cooked & drained

    In large saucepan mix all ingredients {except pasta}. Stir until smooth. Add pasta serve warm. {Add chicken and broccoli}

    Totally bad for you, but totally delicious!

    We love love love pasta! I remember when my son was little, before he ate real food, he would sit in his high chair eating his mushy rice cereal and stare in awe at us eating spaghetti! That is when the love began. He can eat spaghetti pretty much every day and be happy! We don’t make it too fancy, I usually put in a skillet, a bag of frozen peppers and onions, a bag of frozen meatballs and a jar of sauce. Cover and cook on med-low for 25 mins, stir occasionally. Cook spaghetti and mix with the sauce. Yum and super easy!

    My favourite pasta dish (probably not really Italian), is home-baked mac n cheese (although my little ones would probably prefer having KD which is so typical of little kids!). This is big-time comfort food.

    2 cups raw macaroni, cooked and drained (you can do this while making the sauce)

    sauce: Make in a 4 cup glass measuring cup
    3 Tbsp butter, melted (30s on high in my microwave)

    add 2 Tbsp flour, and mix to a smooth paste. Cook flour/butter mixture on high for 30s in the microwave (kind of like a quick-and-easy “roux” as a base for the white sauce).

    Add 2 Tbsp of dried onion flakes (I get this from the bulk section of my supermarket).

    Slowly add 1 c milk, whisking constantly to avoid lumps.
    Cook on high for 90 s in the microwave. whisk. Alternate cooking on high for 30s and whisking until starts to thicken. Continue until desired thickness (about 3 minutes total or my microwave). Make sure you watch carefully near the end, or your white sauce will bubble up over the edges of your container.

    Add in 1 to 1.5 c shredded old cheddar cheese. Whisk until it melts into the hot white sauce.

    Pour into drained macaroni and mix well. Spread into 9 x 13 x 2″ pan. Top with breadcrumbs. Sprinkle Hungarian paprika lightly to make a nice looking top and for a little zesty taste.

    Bake at 325 for 30 minutes until top is slightly browned.

    Fast & Easy Lasagna
    1 lb ground beef
    1 bottle spaghetti sauce
    1 box oven ready lasagna noodles
    16 oz cottage cheese
    2 cups mozzarella cheese

    cook ground beef, once cooked mix with spaghetti sauce. then layer starting with the noodles, sauce, cottage cheese, and mozzarella cheese – repeat ending with mozzarella on top. bake for 35 minutes or until hot.

    Bottle of Poppyseed dressing
    Fresh cut strawberries

    Boil the pasta
    Bake the chicken, then cut in cubes
    Mix pasta, chicken, strawberries and Poppyseed dressing together

    One of my favorite Americanized Italian foods is Italian Dressing. I love the dressing from The Olive Garden and have found a recipe that I like just as well, that I can make at home!

    1/2 C. Mayonnaise
    1/3 C. White Vinegar
    1 tsp. Vegetable Oil
    2 Tbsp. Corn Syrup

    2 Tbsp. Romano Cheese
    1/4 tsp. Garlic Salt — or one clove garlic minced
    1/2 tsp. Italian Seasoning
    1/2 tsp. Parsley Flakes
    1 Tbsp. Lemon Juice

    Mix everything together in a blender and serve on your favorite salad mix.

    P.S. The only change I make is to add 1/4 c. Miracle Whip with 1/4 Mayo.

    Thanks Amanda, those image are great and make me drool over pasta at 8.30 in the morning…lol. My favorite Italian recipe is for homemade pesto:

    * 2 cups fresh basil (packed) – if you can get the real Italian sweet basil, not the one with the huge rough leaves!
    * 1/4 cup grated parmesan cheese – get a block of real parma cheese and grate it yourself
    * 1/2 cup olive oil
    * 1/4 cup pine nuts
    * 1 garlic clove (minced) – take it easy on the garlic so you can
    actually taste the basil!

    With a large mortar and pistil crush everything into a smooth mass. You could also use a stick blender.

    * one package of your favorite paste (cooked and returned to pot)

    Add the pesto to the noodles and mix.

    Enjoy!

    italian sausage
    a dash of salt & pepper
    1 can of cream of mushroom soup
    1 can of tomato soup
    red pepper flakes (to taste)
    tabasco sauce (to taste)

    Ingredients
    4 Tbsp. butter
    4 boneless skinless chicken breast halves

    1/4 C dry marsala
    1/2 C heavy cream
    1 tsp. lemon juice
    1 – 1lb bag of basil fettucini

    Directions
    1 – Pound chicken breasts to even out thickness and lightly salt and pepper.
    2 – In large skillet, saute chicken in 2 T melted butter until lightly browned, about 2 minutes per side.
    3 – Remove from pan and set aside.
    4 – Melt remaining butter in pan and add shallots and mushrooms.
    5 – Cook until mushrooms are lightly browned.
    6 – Add Marsala and bring to a boil, scraping browned bits from bottom of pan.
    7 – Add cream and lemon juice and return to a boil.
    8 – Season with salt and pepper.
    9 – Return chicken to pan for about 3 minutes to reheat and finish cooking.
    10 – Serve with buttered basil fettucini.

    I highly recommend doubling the ingredients for the sauce. It is so delicious!

    Prep Time: 20 Minutes Cook Time: 15 Minutes Difficulty: Easy Servings: 8

    Ingredients
    ½ cups Olive Oil
    4 cloves Garlic, Minced
    3 whole 14.5 Ounce Cans Diced (or Whole) Tomatoes
    ½ cups White Wine
    2 pounds Jumbo Or Large Shrimp, Peeled And Deveined
    Salt And Pepper, to taste
    Fresh Parsley, Minced
    1 pound Linguine, Uncooked
    Red Pepper Flakes, to taste
    Preparation Instructions
    Cook pasta for 1/2 the recommended cooking time. Pasta should still be very firm.
    In a large skillet or pot, heat olive oil over medium heat. Add garlic and saute for a minute. Dump in the tomatoes and wine. Stir the mixture together, season with salt and pepper, and allow to cook for ten minutes.
    Meanwhile, prepare a large parcel of heavy duty aluminum foil. It should be large enough to hold the entire pasta dish.
    Throw the shrimp on the top of the pasta sauce. Throw the drained pasta over the top, then pour the whole dish onto the foil. Tightly wrap the foil into a parcel.
    Bake at 350 degrees for 15 minutes. Remove from oven and keep warm until serving.
    Open the foil parcel right before serving. Drizzle a tiny bit of olive oil over the top. Squeeze on lemon juice, if desired.

    My favorite recipe is Bowtie pasta with pesto.
    1 bunch fresh cilantro
    5 cloves garlic, minced
    1 tablespoon white wine vinegar
    1/4 cup grated Parmesan cheese
    1/2 teaspoon cayenne pepper
    1/2 cup pine nuts (optional, sometimes I use them, sometimes I don’t)
    salt to taste
    1/2 cup olive oil
    1 tomato, diced
    1/4 cup feta cheese
    1 box of farfelle or bowtie pasta (or whatever pasta you want)

    Bring a large pot of salted water to a boil. Add the pasta, and return water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain well.

    In an electric food processor or blender, blend cilantro, garlic, vinegar, Parmesan cheese, cayenne pepper, nuts, and salt. Add 1/4 cup of the olive oil, and blend the pesto. Add more olive oil until the pesto reaches your desired consistency.

    Pour pesto in a small saucepan and warm over low heat, stirring constantly, until pesto begins to simmer. Pour over cooked pasta and toss.

I would love to make homemade fettuccine alfredo for my two little ones because that is their favorite.     My favorite italian recipe is Rigatoni! My father started cooking it when I was in middle school, and it has become a fav. I’ve adapted to a healthier version lately, but it’s just as yummy.

    It’s
    1/2 lb lean turkey sausage, diced
    1 small onion, diced
    1 medium bell pepper, diced
    2 diced tomatos or 2 cans diced tomatos
    1 small can tomato sauce
    1 clove garlic
    8oz Rigatoni noodles (Whole wheat/grain)

    You brown the sausage, and sautee the veggies along with it in a large pan. Combine all other ingredients into pan, and simmer for 20 minutes. Let sit and enjoy on top of some yummy rigatoni noodles!

    It’s tasty.

    I wish I could post about all the food I eat and still look as good as you! Okay I know it takes some discipline…
    Here at our house we are big fans of The Noodles & Company and one of our favorites is their Penne Rosa, but who wants to spend the money going out when you can make it yourself and have left overs the next day!!! The recipe is super easy and full of fresh ingredients! (it calls for Penne Pasta but you could easily add your homemade fettuccine and it would be amazing).
    Ingredients:
    1 pound Penne Pasta 1 bottle Marinara sauce (Bertolli, or Classico brands)
    1 bunch green onions sliced 2 cloves fresh garlic chopped
    1/4-1/2 t. crushed red pepper flakes 1/4 c mushrooms sliced
    Fresh spinach leaves Fresh basil leaves
    (the spinach and basil is your call on the amount that you like)
    1/2 c whipping cream
    Italian cheese blend
    olive oil (for saute’ing)

    Directions:
    While boiling pasta, saute’ (in some olive oil) the garlic, onions and mushrooms in a large skillet. When those have carmelized add the marinara sauce and stir. Add red pepper flakes and salt & pepper (to your liking). Stir in the cream, then add the pasta. Toss in the basil and spinach and thats that. Sprinkle (or douse) with cheese.
    Super Yummy!!!

    My favorite Italian Pasta dish is Linguini (or any pasta really) a La Vodka! I love it not only because of how wonderful it tastes, but also because I get to use fresh tomatoes from my garden! I would LOVE to try and make homemade pasta to use in this dish!!! Here is my recipe:

    Ingredients:
    1 tablespoon of Crushed Red Pepper Flakes
    1/2 cup Vodka
    2 Tablespoons Extra Virgin Olive Oil
    1 box (lb.) of Linguine or your favorite pasta
    1/4 pound diced pancetta ( or bacon) *optional
    3 Large or 5 small Vidalia Onions, sliced thinly
    7 medium Vine Ripe Tomatoes (or 2-28 oz. cans San Marzano crushed tomatoes)
    1 can Tomato Paste
    6 cloves Garlic, minced
    1 cup Heavy Cream
    3/4 cup freshly grated Parmesan
    10 fresh basil leaves, chopped
    salt & pepper to taste

    Directions:
    1. Soak Crushed Red Pepper Flakes in Vodka for several hours or overnight. Strain and discard Red Pepper Flakes, saving Vodka to be added to sauce later.
    2. Place a large pot of cold water over high heat to come to a boil. 3. Meanwhile, in a large sauté pan over medium heat, cook and render fat from pancetta. Once pancetta has begun to crisp, remove and transfer it to a paper towel to drain off excess fat. Do not clean the pan.
    4. Add olive oil to pan and sauté garlic for one minute.
    5. Add onions to pan and sauté over medium to medium high heat, until they become translucent. You want to sweat them, not brown them.
    6. If using canned tomatoes, add them to onions. If using vine ripe tomatoes, drop them into the pot of boiling water for 15 to 20 seconds. Quickly remove tomatoes and place them in an ice cold bowl of water. Remove and discard skins. Slice tomatoes in quarters and remove seeds over a strainer. Make sure to retain juice from tomatoes. Dice tomatoes and add them, plus juice to onions.
    7. Add several tablespoons of salt to pot of boiling water. Follow instructions on box for cooking pasta.
    8. Stir in can of Tomato Paste. Use as little or as much of it as you like. The more you add, the thicker and sweeter the sauce will become.
    9. Add strained Vodka to onions and tomatoes and simmer sauce, uncovered, for 20 minutes.
    10. Add cream to sauce and simmer for an additional 5 minutes.
    11. Remove the sauce from the heat, then add 3/4 of the basil and grated cheese.
    12. Drain pasta when done, then return to large pot.
    13. Gently pour the sauce over the pasta and toss.
    15. Garnish with pancetta and remaining basil and cheese.

    That basil fettuccine almost melted my screen! I actually grow my own basil too and cook with it whenever I can- especially in the summer. My dad used to make his own pasta when were were growing up and it was always a huge treat. No matter what plans we had, we dropped them to come home for homemade ravioli or lasagna. Although he won’t “loan” me he pasta maker, he still invites us over sometimes when he cooks. Would LOVE to be able to return the favor!

    By the way- I have two small kids and just finished school. We have those Bertolli skillet dinners a lot. Try the shrimp pasta one. They’re all awesome!

    My favorite food of all time is Italian food, but I tend to like cream sauces (Northern Italian-type cooking) rather than the tomato based sauces.

    Here are a couple of recipes. One is my favorite chicken- and my five year old daughter devours it. The other is an awesome and super easy spinach casserole. I make this regularly and serve it with a main meal or by itself as a light dinner.

    Chicken Parmesan

    1/2 cup flour
    1/4 tsp salt
    black pepper
    6 boneless skinless chicken breasts
    3 tbs. butter
    2 tbs vegetable oil
    3/4 cup diced onion
    1 cup chicken stock
    1/2 cup white wine

    1. Coat chicken in flour, salt and pepper. Shake off excess and reserve the flour. 2. Melt 2 tbs butter with oil in pan. Cook chicken about 3 minutes per side to lightly brown. Put chicken on plate with foil. 3. Add onion and cook until softened. Stir in 1 tbs. butter. Whisk in reserved flour. Add wine and chicken stock and cook until boiling. Stir until sauce is thickened. 4. Return chicken to pan and cover and simmer for 5 minutes until chicken is firm. 5/ Remove chicken breasts and stir parmesan into the sauce. Spoon sauce over chicken and serve.

    My mom is in the Herb Society where we live and this spinach recipe is from their cookbook. Love it!

    Spinach Gratin

    10 oz fresh spinach, stems removed
    4 oz feta crumbled feta cheese
    1 egg, lightly beaten
    1/4 tsp dried oregano
    1 1/2 tsp lemon juice
    3/4 cup panko
    2 tbs melted butter

    Preheat oven to 425 degrees. Rinse the spinach and place in large saucepan. Cook 3 to 5 minutes or until wilted and drain well.

    Combine spinach, cheese, egg, oregano, lemon juice and 1 1/2 tbs of panko in bowl and mix well. Spoon into 1 1/2 quart baking dish. Mix remaining panko with melted butter and sprinkle over spinach mixture. Bake for 15 minutes or until top is golden brown.

    Hubby and I love pasta. We love anything from spaghetti, lasagna but one of my favorites is this three cheese penne pasta dish! It makes alot, so it’s good for when company is coming over!
    Three Cheese Penne Pasta
    1-1/2 Cups Penne Pasta, uncooked
    1 pkg (9oz) fresh spinach leaves – use it all I thought it would be too much and only used half the first time.
    1 lb boneless skinless chicken breasts, cut into bite-size pieces
    1 tsp dried basil leaves
    1 jar (14-1/2 oz) spaghetti sauce – I used prego
    1 can (14-1/2 oz) diced tomatoes, drained – I used Del Monte basil, garlic & oregano. Don’t forget to drain!!!
    2oz (1/4 of 8oz pkg) philadelphia cream cheese, cubed
    1 cup Kraft Mozzarella Cheese, divided
    2 Tbsp Kraft Grated Parmesan Cheese

    Heat oven to 375, cook pasta, adding spinach to boiling water for last 1 minute.
    Cook and stir chicken and basil in large nonstick skillet on medium-high heat until chicken is cooked. Add sauce and diced tomatoes(drained); bring to boil and stir in the cream cheese. Simmer 3 minutes ( I did mine abit longer just to make sure the chicken was cooked and all the flavors mixed well).
    Drain pasta mixture; stir in chicken mixture and 1/2 cup mozzarella.
    Bake for 20 minutes, sprinkle with remaining cheeses – mozzarella and parmesan and bake for 3 minutes.

    That looks so yummy! Here’s my favorite lasagna recipe! Any pasta is fine by me, really, but I just love lasagna! :D

    Lasagna
    1 lb ground beef 2 cans tomato paste
    2 T parsley ½ t basil
    1 t oregano 1 t salt
    ¼ t pepper ½-1 t garlic
    1 pkg Italian sausage 1 T brown sugar
    1 pkg lasagna noodles Mozzarella cheese
    Cottage cheese Parmesan cheese

    Cook ground beef and Italian sausage while cooking the noodles. Add tomato paste and 2 cans of water to the ground beef and sausage; mix well. Add spices. In a 9×13 glass pan put a layer of sauce on the bottom, then layer noodles, sauce and cheeses in that order. Top layer is sauce and then mozzarella cheese. Bake at 350 deg for 20-25 mins or until cheese is melted enough.

    Here’s the recipe of my chicken lasagna:

    ——CHICKEN LASAGNA——-
    2 lbs chicken breast cooked and pulled apart or shreded (u can cook the chicken in chickeb bouillon for extra flavor$
    4 cans spaghetti sauce (you can mix flavors)
    4 cups shreded mozzarella cheese
    1 box premade lasagna dough
    Italian seasoning

    How to make:

    Layer lasagna this way:
    sauce
    dough
    sauce, chicken and cheese
    dough
    sauce, chicken and cheese
    dough
    sauce
    cheese
    sprinkle italian seasoning on the top

    Cover dish (9″x13″) with aluminum foil
    Bake at 375 F for about 45-50 min or until dough is all cooked and soft

My favorite Italian meal is Chicken Marsala – I can’t take credit for any recipe – I started with Giada’s (everyday italian) recipe for veal marsala and made some small changes (including the swapping veal for chicken) to better suit my family’s tastes – they beg for it! It’s the only dish that my son will eat mushrooms in (but not the canned ones mom- those taste like dirt!). Thanks for sharing!

    Oh how fun!!! I would LOVE to be able to make my own pasta!!!! Pasta is a fave around this house. I have two kiddos and any kind of pasta is a hit. They just love the noodles and sauces! I have to say a fave around here is fettuccine alfredo!

    Recipe:
    8 ounces Cream cheese-cut in bits
    3/4 cup Parmesan cheese-grated
    1/2 cup Butter or margarine
    1/2 cup Milk
    8 ounces Fettuccine-cooked and drained
    In large saucepan combine cream cheese, Parmesan, butter and
    milk, stirring constantly until smooth. Toss pasta lightly with
    sauce, coating well. Leftovers freeze well.

    We also love throwing in broccoli and chicken or shrimp! Adds color and makes more so you have lots of leftovers! We are actually having fettuccine with shrimp and broccoli tonight!

    I could eat pasta three meals a day (well don’t tell anyone I admitted that). But one of my favorite and quick receipes is a sun dried tomato and basil pasta. Use what ever bag of pasta you are in the mood for (mine usually is bowtie, reminds me of being a kid). Once it’s cooked and drained, I add about 1/4 cup of pesto sauce (premade), 1/2 cup of sun dried tomatoAndorra more since they are just heavenly) and 1/4 cup of pine nuts. I stir it on low heat to warm sauce and tomatoes up for about five minutes but stir to prevent it from burning. Serve with some shredded parmarsan chz and yummy garlic bread and VIOLA! It’s also great with a meat; chicken, scallops, shrimp, etc.

    Last night I made a Pesto Chicken Tortelleni dish that was so easy yet pretty excellent, even if I do say so myself. ;) I used Buitoni’s three cheese tortelleni – cooked and tossed it with cooked, cubed chicken. And then added a fresh pesto sauce (with basil from our brand new container garden!) – got the recipe from the Food Network website. We loved it and can’t wait to try this again later, when our bell peppers and tomatoes start showing up. ;)

    What an awesome giveaway! Making fresh pasta is something I have always wanted to try, but haven’t yet because I thought it was super hard! I may have to give it a go! My favorite Italian recipe is Pasta Primavera and it couldn’t be simpler to make! Simply slice up your favorite veggies and coat in olive oil, salt, pepper and your favorite Italian herbs. Then, roast in the oven on a baking pan for about 30-40 minutes until veggies are soft carmelized. Toss with your favorite pasta (Penne is our fave!), and top with fresh parmesan cheese! Easy, healthy, YUMMY!

    I am, and my kitchen is, the product of a BIG ITALIAN family! My favorite Italian recipe, by far, is my great grandmother’s pizzelles. They’re light Italian wafer cookies that can be flavored with almond, anise, or whiskey and cinnamon…they’re pressed in a pizzelle iron to make them look extra fancy. A sprinkling of powdered sugar makes them fantastic, but you can roll them into ice cream cones (like a waffle cone with a little more pizzazz) or into a cylinder, and make your own (healthier) cannoli! YUM!

    Ooohh, I love anything basil/pesto. My favorite dish is usually a creamy pesto sauce over any pasta at a local italian restaurant here. I’ve never made my own pasta but I have been wanting to try it and all the different varieties you listed at the beginning of your post made my mouth water!

    I love pasta, this is my first post because I love pasta so MUCH!!! My favorite dish is probably lasagna, but my favorite recipe is meatballs, italian of course.
    Not sure of measurements but:
    1 lb of ground turkey
    1 lb of ground pork
    1/2 lb of ground round
    large onion
    3 – 4 cloves of minced garlic (fresh)
    parsley
    parmesan cheese
    3 eggs
    1/2 cup cream
    italian seasoning

    Mix all ingredients together, do not overmix; roll into balls whatever size you want and bake at 350 degrees for approximately 20 mins. You can drop in sauce if you like but just cook alittle less so they continue to cook in sauce,
    Put over spaghetti, angel hair, fetta noddles, whatever.

    The house will smell unbelievable!!!!!!!!

    I love Italian food!!! If I had to pick a favorite it would be Chicken Parmesan!!! Unfortunately, have not attempted to make that dish as of yet.

    I do make a lasagna recipe that is kid friendly as I have children that like to help me cook and its simple. Its basic so its very similar to anyone else’s recipe. I like it cause it can be prepared the night before and then baked another night during the week (it helps cause I work full time)

    Ingredients:
    12 Lasagna noodles
    2 jars or one big jar Spaghetti Sauce (if you use two you can use two different flavors)
    Ground Beef/Ground Chuck
    Cottage Cheese
    Shredded cheese of your choice (I use cheddar and a 3 cheese mix, you can use ricotta cheese as well)
    2 cans Stewed Tomatoes (optional)

    Instructions:

    Cook noodles according to instructions on packaging.
    Place each noodle separately on paper towels to dry.

    Place ground beef/chuck in a pot on medium heat and cook until browned. Drain grease.
    Place ground beef/chuck back into pot set to medium heat and add spaghetti sauce and stewed tomatoes (optional). Heat sauce.
    In a baking dish place 3 noodles add sauce, cottage cheese, and shredded cheese to your liking. Add 3 more noodles and another layer of sauce, cottage cheese, and shredded cheese. Continue adding layers. Once the last 3 noodles are added, I like to put shredded cheese all along the top.
    Cover with foil (optional) and bake at 350 degrees for 30-45 minutes.
    If using foil; for the last 5 minutes of baking, remove the foil.

    Enjoy!

    If you are saving the lasagna for another night, you can put it in the fridge after layering and cooling down. Then take it out the night you would like to cook it and follow the above baking method.

    I absolutely love, love, LOVE Bertolli’s Chicken Florentine & Farfalle – I get goose bumps thinking about it! It is SO perfect, and as you mentioned the meal is ready in 10-15 minutes. I usually pair it with texas toast garlic bread (2 pieces because I am a TOTAL carb-o-holic)for a quick and so SCRUMPTIOUS meal for my fiance and myself. This is a GREAT no-fuss meal!

    My other favorite EASY Italian meal is Chicken Parmesean

    Time: 30 Minutes

    Ingredients:
    2-3 chicken cutlets
    1/2 pound of your favorite cut of pasta
    Shake-n-Bake Chicken Parmesean (so so SO simple!!! and delicious)
    1 cup of your favorite marinara/pasta sauce
    Salt

    Directions:
    Salt and pepper each side of you chicken and add to Snake-n-Bake mixture (I like to add garlic powder to this to jazz it up). Feel free to enslave your children, fiance, husband, anyone within an arms distance for this so you can get your pasta water on. Follow the Shake-n-Bake directions for your chicken and throw into the oven for 20-30 minutes, or until baked through and golden brown on the outside. While the chicken is in the oven and your pasta water is boiling, put your pasta on and cook to your liking. Heat your all time favorite pasta sauce either in the microwave or on the stove top.

    I love pasta!!! I also love basil. I love making my own pesto!! I don’t really have a favorite as I love so many pasta dishes. I love pasta e piselli (pasta & peas) which I got the recipe from my grandmother and the only way I will eat peas. Love lasagna rolls, pasta e patate (pasta & potatoes)and I could go on and on.     My husband has talked about trying to make pasta, but I always thought it would be super complicated and messy. If it is as easy as you say, we may have to give it a try! Carb over-load or not, there really isn’t anything as yummy and comforting as pasta!
    By the way, Bertolli frozen pasta bags are always in our freezer! When we get home late from work they are a lifesaver! There is a Mediterranean chicken broccoli flavor that is my favorite!

    Our favorite pasta dish is spaghetti. But there are two key changes in the way we make our spaghetti and the way most other people do. First, we use browned sausage instead of browned ground beef. Gives it an extra bit of spice. Second, we only use our homemade spaghetti sauce that is canned using homegrown tomatoes, Mrs. Wages spaghetti mix which is found in the canning section in the fall (and its required ingredients), and a couple extra jalapenos! Delicious!

    My fave pasta recipe is probably this chicken/bacon/cheese pasta dish that I started making recently, based on a few recipes you make!! LOL

    2-3 chicken breasts (Garlic Pesto from Central Market if you have one!)
    1 can healthy choice cream of chicken soup
    1.5 cups colby jack cheese (shred it yourself, seriously. the powder coating on pre-shredded cheese can REALLY ruin a sauce!!)
    minced garlic, lots of it!!
    milk
    1 box bertoli penna pasta
    bacon (I usually do 3-5 pieces cut in half)

    Brown the bacon, set aside when done, keep grease warm.
    Pound your chicken breasts til they are a uniform thickness (or you can cut them in half width-wise so they arent so thick) this is important, because the chicken will get too done on the outside & not done enough on the inside!
    Cook chicken breasts in the bacon grease on low-medium heat. If you are able to get the Garlic Pesto chicken breasts from Central Market they are fantastic!! If not, you can try making your own. Or what I do is I add 2-4 tablespoons minced garlic (out of a jar lol), a dash of salt, pepper, and either Kraft Zesty Italian dressing or HEB Spicy Italian dressing..(omgosh so good!) just a tsp of dressing on each side of each chicken breast.
    While chicken is cooking, start your water boiling for your pasta. I use penne pasta because its what my husband & i prefer, but you can use whatever your favorite pasta is! Be sure to salt that water!!
    When chicken breasts are done cooking, set them aside & cover them so they will stay warm.
    Add more garlic to bacon/chicken drippings (if you want–we LOVE garlic here!!)
    Add 1 can of cream of chicken soup, stir around with drippings and grease. Add cheese (I guessed at the amount, I usually just shred a ton of colby jack and add it til it reaches the desired flavor), and a little bit of milk..i eyeball it again, sorry!! Stir the sauce until all the cheese has melted. If the sauce is too runny…add more cheese!! if it is too thick, add a dash more milk!! Salt & pepper to taste (I usually dont need to add any salt, but I do add some fresh ground pepper!)
    Remember that bacon we set aside?? It’s time to chop/crumble it. Snitch a bite here and there, and then add the rest to your sauce, and stir.
    When your pasta is ready & drained, you can either mix it in with the sauce, or put it on the bowls/plates, and ladle the sauce on top..then I chop the chicken & put it on top and it is omgosh soooooo good!!!! (I chop the chicken because I have 2 kids to feed it to…and chopping it from the get-go is easier than chopping them some and slicing us some!)

    Anywho…this recipe has been a HUGE hit in our house!! Thank you Amanda for the sauce recipe to play with!! :D

    I would love to win this prize! Here is my favorite (quick) pasta sauce:
    1 jar or (cheap) can of store bought sauce
    1 pound ground meat (whatever you have on hand…turkey, beef, sausage, or a combo)
    add mushrooms, canned or fresh, black olives, and capers! Add some red wine if you are a wino like me. (I freeze red wine in small plastic cups whenever I open a bottle that I dont love. It still works great in recipes!)

    Ohhhhhhhhh, pasta. Goooooood. Okay, now that I got that out of my system….. I was actually diagnosed Celiac about 3 years ago, and so have had to more or less give up pasta. (Oh the horror!) I’ve been really wanting to learn to make my own Gluten Free Pasta. I’ve got to say, right now, my favorite dish is just a nice light pile of GF angel hair pasta with some fresh basil pesto on it. Maybe throw some sliced tomatoes on the side of the plate for color. Yummmmmmmm.

    How awesome of Bertolli! I LOVE pasta, could eat it every meal! I have never made my own, although I would be more than happy to if I win :) One of my favorites is Pasta Ponza by Giada:
    2 cups (12 ounces) red cherry or grape tomatoes, halved
    2 cups (12 ounces) yellow cherry or grape tomatoes, halved
    1/4 cup capers, rinsed and drained
    1 tablespoon extra-virgin olive oil, plus extra for drizzling
    1/2 teaspoon kosher salt, plus extra for seasoning
    1/4 teaspoon freshly ground black pepper, plus extra for seasoning
    1/2 cup Italian-style seasoned breadcrumbs
    1 pound ziti or other short tube-shaped pasta
    1 1/4 cups (2 1/2 ounces) Pecorino Romanocheese, grated
    1/4 cup chopped fresh flat-leaf parsley

    What You’ll Do:
    Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Butter an 8 by 8-inch glass baking dish.Place the tomatoes, capers, 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in the prepared baking dish. Toss to coat. Sprinkle the breadcrumbs over the tomato mixture. Drizzle the top with olive oil and bake for 30 to 35 minutes until the top is golden. Cool for 5 minutes. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water. Place the pasta in a large serving bowl. Spoon the tomato mixture onto the pasta. Add the cheese and toss well. Thin out the sauce with a little pasta water, if needed. Season with salt and pepper, to taste. Sprinkle with the chopped parsley and serve immediately.

    Oh my! Your pasta dish is making my mouth water! I have to tell you though I am from a large Italian Family and we had “Macaroni” 3 days a week growing up as the main dish. And it always seem to make appearances on the other 4 days as a side of some kind. We grew up calling it macaroni and gravy in our home – no matter what type or what flavor the macaroni and gravy was. It was all macaroni and gravy. My mom and grandma would make homemade macaroni of all kinds and that was my favorite. It was heavy and the gravy just stuck to it. No one make it like grandma (or my mom). My favorite is lasagna! But put a plate of macaroni in front of me and I am happy!

    OMG, PASTA HEAVEN!! Amanda, your Basil-Pesto Pasta looks incredible … problem is, I’m reading this at work (sshhh!) and now I have to go to the Ladies’ Room to dry the drool spots on my blouse! Yummy!! My favorite meal in the whole world is Spaghetti Bolognese. I can eat that every day of the week, and leftovers are the BEST! Some have encouraged me to try my chili over slim fettucini, a “Cincinnati Spaghetti.” Haven’t done that yet, but sounds great!

    But here’s why I need my own pasta maker: My gastroenterologist suspects I have Celiac disease. I will have to learn to make gluten-free pasta as the store selection is limited. Please let Bertolli know I will do them proud!

    I’m so hungry now, lol. I’m going to try your recipe and my favorite Italian dish is Baked Ziti:
    1 (16 ounce) package of ziti pasta, seems hard to find these days.
    1 pound ground lean beef
    1 Onion chopped
    2 (28 ounce) spaghetti sauce or homemade is better
    6 ounces of sliced provolone cheese
    6 ounces of sliced mozzarella cheese
    1 1/2 cups sour cream
    1/2 cup granted Parmesan cheese
    1/4 cup chopped fresh basil
    1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
    2. In a large skillet, brown beef over medium heat. Add onions; saute until tender. Drain off fat and add spaghetti sauce; simmer for about 15 minutes.
    3. Preheat oven to 350 degrees F (175 degrees C).
    4. In a lightly greased 2 quart baking dish, place about half of the pasta; top with a layer of provolone and mozzarella cheese slices. Spread on a layer of half the spaghetti sauce mixture and sour cream.
    5. Cover with remaining pasta, cheese and sauce; sprinkle a layer of Parmesan cheese and fresh basil.
    6. Bake in preheated oven for about 30 minutes or until cheese and sauce are bubbly; serve.

    My fave is pesto, preferably homemade. I have a 4 1/2 yr old who’s fairly picky – complains about ‘crust’ on chicken or steak but will eat my pesto. Go figure.

    I also love penne or rigatoni with fresh mozzarella, tomatoes and basil. Great summer dish, gives you veggies and protein.

    At our house it is Cajun Chicken Fettuccine..I use some cajun spices on the chicken which is cooked in the pan, remove chicken make homemade sauce and add noodles, toss in the chicken and sprinkle the top with a little more seasoning. Makes great leftovers, too.

    My favorite pasta dish is actually homemade Vodka Sauce on just about any pasta. I got the recipe from my mother-in-law and its actually quite simple:
    1/2 Cup Olive Oil
    2-3 Garlic Cloves Minced
    2 Large Cans of Crushed Tomatoes
    4 Tbsp. Absolut Vodka
    2 Cup Heavy Cream
    2 Tbsp. Chopped Fresh Parsely
    Heat the olive oil in a large sauce pan over medium heat and add garlic. After about a minute add in the crushed tomatoes and let simmer for about 20 minutes. Cook the pasta and whatever else you’re having with the sauce and when everything is just about done, add in the vodka, heavy cream, and parsely and let simmer for just a few minutes, then serve.
    The sauce is absolutely delicious and I have yet to find a store bought version that comes even close. Plus it freezes really well so you can save any leftovers for a night when you have no time and just throw it on some pasta with a little store bought salad and you have a fast homemade dinner.

    My favorite recipe is gravy sauce! Lots of fresh tomatoes, basil, onions, garlics and mushrooms and one lb. each of ground beef and italian sausage with casings removed – let it simmer all day and what a meal!!!! My husband used to make pasta when he was a kid and absolutely loved helping his mom do that – I can’t convince him to show me how now, however! :(

    Hey Amanda! My all time favorite pasta recipe is Rigatoni with Creamy Mushroom Sauce by Giada De Laurentiis. I make homemade rigatoni with a pasta attachment to my Kitchenaide mixer. I’ve never made homemade pasta with an Imperia pasta maker. I also like to brown some chicken tenders and add to the dish to make it the main dish! Love it!

    My favorite Italian dish is my good friend Mario! He’s such a wonderful guy and he’s marrying my equally wonderful Spanish friend Ana! But I digress. When he was here going to school, he promised to teach me how to make my own pasta. The sad thing is that that never happened. He moved to San Fran and works for Google now. So I guess if I want to learn to make my own pasta, i’ll have to win the prize package from Bertoli! I’ve had their frozen meals and they’re fantastic! But honestly, my favorite Italian pasta dish was eaten in Rome in 2001. It’s like a fettucini alfredo but the alfredo sauce has salmon in it! And if I remember right they used farfalle instead of fettucini. Add some crispy/chewy bread and a little white wine. You guessed it…heaven!

    OMG – what a great giveaway. Funny I am making your Pulled Pork today! As for my fav pasta recipe. I have a few, one is a really easy crock pot lasagna. I make my own meat sauce from scratch & use that to layer in the crock pot with a ricotta/parm/mozz cheese blend, fresh basil and regular dry lasagna noodles. 7 hours later – ready to eat & perfectly cooked.

    My 2nd started out in the first cookbook my husband & I bought together called “Cooking for Two”. It is lemon-dill meatballs in a tomato cream sauce. It has grated lemon peel in the meatball mixture and the sauce ends up this great deep orange color.

    I have worked on perfecting the dish for the last 13 years and it is the one dish everyone always raves about when I serve it not matter who they are.

We make at least once a month (more if we’re having company) Grilled Garlic Chicken in a Tomato Cream Sauce! My two little girl even love it–and they’re pretty hard to please when it goes past chicken nuggets and bbq!     Well, I am good and hungry after reading all the great recipes this morning. My favorite alfredo sauce is super easy and super high in calories. I only make about once a year. I always add chicken breast. My family loves it.

    Easy Alredo
    1/4 cup butter
    1 cup heavy cream
    1 clove garlic, crushed
    1 1/2 cups freshly grated Parmesan cheese
    1/4 cup chopped fresh parsley
    Directions
    1.Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve.

    My favorite recipe:
    Pasta & Shrimp,easy-peasy
    cook some pasta
    cook some shrimp, add diced tomatoes (and any herbs you may like – Basil!!)
    add spinach when about done
    add fresh mozzarella

    Done!

    I LOVE Bertolli. Some of the best pre-frozen, packaged food I have ever eaten. My entire family loves it.

    I don’t have a recipe, but one of my favorite Italian style dishes is shrimp fettuccini. My husband is WONDERFUL at making it – he whips it up from scratch, no recipe.

    I’d love to win so I can teach my daughters how to make homemade pasta!!! They would love our tasty creations. My favorite Italian dish to make is Spinach Sausage Stuffed shells baked in homemade tomato sauce with a bechamel sauce drizzled over them… LOVE them. Ohhh! Now my stomach is growling.

    Your pasta looks wonderful! I have 3 teenage boys and we love Italian food (PASTA!!). Spaghetti, lasagna, Alfredo … making me hungry now. BTW, the Bertolli with chicken, spinach, and bow-tie pasta is awesome!

    I LOVE LOVE Pasta! I have never made or even had homemade noodles though. A pasta machine would be an awesome feature to add to my kitchen.
    I actually never go by a specific recipe when I make pasta dishes. I just like to experiement with it and throw a bunch of random ingredients in a pan and out comes a dilicous meal!

    Feta-Topped Chicken
    Chicken breasts go uptown with a brush of balsamic, a sprinkle of herbs and a warmed feta finish. Simply sensational!

    4 boneless skinless chicken breast halves (1 1/4 lb)
    3 tablespoons balsamic vinaigrette dressing
    3 tablespoons raspberry vinaigrette dressing
    1 teaspoon Italian seasoning
    1/4 teaspoon seasoned pepper
    1 large roma (plum) tomato, cut into 8 slices
    1/4 cup crumbled feta cheese (1 oz)

    Set oven control to broil. Brush both sides of chicken breasts with dressing. Sprinkle both sides with Italian seasoning and seasoned pepper. Place on rack in broiler pan.
    Broil with tops 4 inches from heat about 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F). Top with tomato and cheese. Broil 2 to 3 minutes longer or until cheese is lightly browned.

    Italiano Ravioli with Tomato-Cream Sauce

    Makes:6 servings
    What You Need!
    2 Tbsp. KRAFT Tuscan House Italian Dressing and Marinade
    3 plum tomatoes (3/4 lb.), chopped
    1 small onion, finely chopped
    1/2 cup fat-free reduced-sodium chicken broth
    2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
    1/2 recipe Italiano Ravioli (36 cooked ravioli)
    1 Tbsp. chopped fresh parsley

    Make It!
    HEAT dressing in large skillet on medium-high heat. Add tomatoes and onions; cook and stir 5 to 6 min. or until onions are tender.
    STIR in broth and cream cheese; cook 3 min. or until cream cheese is melted and sauce is well blended, stirring frequently. Gently stir in Italiano Ravioli; cook 2 to 3 min. or until heated through.
    TOP with parsley.

    Save time by preparing with 36 frozen cheese-filled ravioli, (3/4 of 25-oz. pkg.), cooked as directed on package.

    Growing up my mom would make these fabulous Italian sausage and ricotta cheese stuffed shells. They are so yummy! We make our own sauce for these too. I would love to make my own pasta and reeallly hope to win!

    What a fun post and giveaway!! My favorite Italian dish is fettucini alfredo, but I really just love pasta. And tortillini? Yum-o! I tried to make pasta once and it was a bust. The problem wasn’t with my dough, but with the pasta maker. I washed it first, like the instructions said and when I rolled out my pasta, there was some dirt (or something…ick!) transfered from the machine to the pasta. And it did it about 5 more times!

    Now I use my pasta machine in the craft room…

    Amanda, How cool is it that you were able to make your own pasta with a new pasta machine! I have always wanted to try making my own also!! Maybe I will be able to …if I win! I have SO many Italian favorites, it is difficult to send you only one! But I would have to say a seafood lasagna hits BOTH of my favs…seafood and pasta! I can share the recipe if you want!

    I LOVE PASTA!!!!!!!!!!!!!!!!!!!!! It is heaven on earth!
    my favorite is a recipe I made up:
    1 rotisserrie chicken (take meat off and rough shredded by a fork)
    1 bag baby spinach or fresh if you can get
    1 package of mushrooms cut up
    1 tbsp of capers
    2 tbsp of butter
    salt. pepper
    1 clove diced garlic

    melt butter add veggies and capers and garlic
    when wilted add chicken
    serve over angel hair pasta or penne pasta

    add parmes. cheese
    Dig in!
    yummy!! also great with cheese ravoli!
