Last weekend in I was in NYC for a fun Chicken Challenge put together by Hellmann’s Mayo. Fortunately for all involved I was just a spectator / voter at this fabulous event! There were three celebrity contestants, three incredibly good chicken recipes, one chicken throwdown, and one winner took home the prize of bragging rights.
Here were the three cheesy baked chicken dishes. I’ll post the recipes for all three dishes at the end of this post.
Our first contestant was Mark Consuelos, soap opera star on “All My Children” and husband to Kelly Ripa. His dish was the reigning champ, Parmesan Crusted Chicken.
The Hellmann’s mayo in these three recipes helps keep the chicken juicy while giving it a a crispy baked crust.
Next was Fort Worth, Texas chef, restauranteur, and cookbook author Tim Love with Chipotle Lime Crusted Chicken, topped with crushed tortilla chips. Yum.
And our final contestant was television host and lifestyle expert Sissy Biggers with her BBQ-Cheddar-Crusted Chicken recipe. Sweet. Smoky. Cheesy.
Now which recipe do you think won this competition?? I snapped this photo just as they announced the winner. I’ll tell you my favorite was definitely the BBQ-Cheddar-Crusted Chicken! I’m not usually a huge BBQ fan, but I loved the sweet, tangy, and cheesy combo of this dish. I’ll let you read the recipes and then tell you which one won at the end.
Parmesan Crusted Chicken
An outrageously juicy way to change your dinnertime chicken routine.
INGREDIENTS
- 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
- 1/4 cup grated Parmesan cheese
- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 4 tsp. Italian seasoned dry bread crumbs
INSTRUCTIONS
- Preheat oven to 425°.
- Combine Hellmann’s® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
- Bake 20 minutes or until chicken is thoroughly cooked.

Chipotle Lime Crusted Chicken
Give chicken a Latin flavor in this fast and easy recipe!
INGREDIENTS
- 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
- 1/4 cup shredded Monterey Jack cheese (about 1 oz.)
- 1-1/2 tsp. lime juice
- 1/4 tsp. ground chipotle chile pepper
- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 1/4 cup crushed plain tortilla chips
INSTRUCTIONS
- Preheat oven to 425°.
- Combine Hellmann’s® or Best Foods® Real Mayonnaise, cheese, lime juice and ground chipotle in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with crushed tortilla chips.
- Bake 20 minutes or until chicken is thoroughly cooked.
BBQ-Cheddar-Crusted Chicken
Big barbeque flavor infuses this delicious recipe.
INGREDIENTS
- 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
- 1/4 cup shredded cheddar cheese (about 1 oz.)
- 2 Tbsp. barbecue sauce
- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 4 tsp. Italian seasoned dry bread crumbs
INSTRUCTIONS
- Preheat oven to 425°.
- Combine Hellmann’s® or Best Foods® Real Mayonnaise, cheese and barbecue sauce in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
- Bake 20 minutes or until chicken is thoroughly cooked.
So which one was the winner?? Reigning champ Parmesan Crusted Chicken (Mark Consuelos) took home the prize!

I made the Parmesean Crusted Chicken tonight…well actually I prepared it this afternoon and my husband put it in the oven tonight while I was at work. It got rave reviews!! Hubby LOVED it. Both kids ate it up (no ketchup required ;)!) and I thought it was perfect and sooo easy to make ahead. Winner, winner, chicken dinner!!!
I’ve made this Parmesan Crusted Chicken three times in the last two weeks! My son told me last night, it was the BEST dinner I’d ever made (and the easiest one for sure.) The chicken is SO juicy, tasty and yummy! This recipe has made its way into my weekly rotation for sure. :)

I had ‘liked’ Hellmann’s FB page last week, and posted that I was excited to soon try the Parmesan Crusted Chicken. Actually, that’s what I already had planned on for tonight’s dinner. I going to ask my 18 year old daughter if she’d like to try making dinner tonight. She needs to gain kitchen skills, and this is an easy recipe.

Well personally, I would have voted for Mark’s chicken recipe just because he is so pretty! :-) Talk about a dreamboat. But I think the BBQ recipe might have been my favorite too. :-)

I don’t eat chicken but I will tell you that I literally could eat mayo by the spoon. I love it! Something about mayo that I’ve always just loved :)
Averie, my sister swears I used to eat mayo by the spoonful as a kid! I deny it completely, so it’s funny to read that you would actually would do that! BTW… mayo & lettuce sandwiches are soft bread are the jam!
