Hello, lover. This is Pasta with Pesto Cream Sauce, and it is one of my favorite easy, weeknight dinners! I absolutely love this flavorful pasta topped with hot rotisserie chicken from the grocery store. This dreamy homemade pesto made with fresh basil, Parmesan cheese, olive oil, garlic, and pine nuts is a cinch to whip up, even on busy weeknights. But you can also make it ahead of time, meaning all you have to do to get this delicious meal on the table is heat up the cream and butter and chop up the chicken. You could have this hearty dinner ready in the time it takes to boil the noodles!

Just a few simple ingredients here. Thankfully I was able to find everything at my grocery store — which is not always the case! Now it’s time to get serious. Let’s make this gorgeous pasta!

How to Make Perfect Pesto Pasta

Bring 4 quarts of water to a boil, add 1 tablespoon of salt, then add the pasta of your choice. We love fettuccine around here.

Now it’s time to get to the business of grating this lovely, fresh Parmigiano-Reggiano cheese. This is a great upper body workout, by the way. If you want those long and lean, slender and fabulous (not flab-ulous) arms, I recommend a regimen of grating Parmigiano-Reggiano every day.

Just kidding.

Description

This dreamy Pasta with Pesto Cream Sauce is comfort food at its finest. So many amazing flavors come together in this easy homemade pasta dish!

Ingredients

  • 3/4 cup fresh basil leaves, packed
  • 3/4 cup grated Parmesan cheese, divided
  • 3 tablespoons pine nuts
  • 2 cloves garlic, peeled
  • 1/2 tsp kosher salt and coarsely ground pepper, each
  • 1/3 cup extra-virgin olive oil
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 12 oz fettuccine pasta

Instructions

  1. Bring 4 quarts of water to boil, then add 1 tablespoon kosher salt and 12 ounces pasta, and cook until al dente. Drain the pasta and set aside. Meanwhile, make the pesto.
  2. To the workbowl of a food processor, add basil, 1/2 cup Parmesan cheese, pine nuts, garlic cloves, and salt and pepper. Process while slowly drizzling in olive oil. Next add the cream and butter to a heavy-bottomed saucepan set over medium heat. Pour in the pesto, stir until well combined, and let simmer for 2-3 minutes. Turn off the heat, add the the remaining 1/4 cup Parmesan cheese, and stir until melted and combined.
  3. Add the drained pasta to the sauce and gently stir together. At this point you can either plate and top with hot rotisserie chicken, or if your chicken is already chopped and is cold from the fridge, go ahead and add it to the pasta and stir together for 2 minutes to heat up the chicken.

    one of my favorites is also one of the easiest ones, which is individual berry cobbler. It is the perfect thing to make at the last minute to take to a brunch or breakfast gathering.     Pork Chops with Garlic and Wine. Made it. Ate it. Love it. Here’s the deal though. My children thought it was soooo very funny watching their mother search the kitchen drawers in search of a wine opener – found two. Then proceeded to break one wine opener in the Cabernet. And then attempted to use a second wine opener and also managed to break that one as well. Sooo – found a hammer. Found a screwdriver. Very gently tapped the screwdriver with the hammer into the cork and taadaa… I love the pan sauce and couldn’t believe what a difference the balsamic vinegar made when added at the very end.

    I can’t remember her name for it, but I LOVED Ree’s spicy shredded beef with grits. My husband is intolerant of paprika and we foolishly didn’t even think to check the adobo sauce…halfway through the meal, he got the telltale burning in his stomach…and he ate another few bites before running to take his medicine. SO GOOD.

    ‘Flat Apple Pie’ with ‘Easy Caramel Sauce’. Hands down best recipe, I had everyone drooling the second they smelled the caramel sauce. Both my Dad-in-law & Dad made more for themselves the very next day. For my Dad this was huge, he knows how to “cook/make” 3 things: Dinty Moore, ‘grilled’ hot dogs (using a fork and the gas stove top burner), and order pizza :). Also impressive, my DIL never duplicates a recipe without putting his own spin on it first. But not this one, everyone agreed it was perfect! I guess the one recipe that made my life easier would be the Creamy Mashed Potatoes, they are Bomb!     I love her picco de gallo recipe, but also the enchiladas she made on the Paula Deen show are becoming a regular on our dinner table. It’s probably the quickest, easiest dinner recipe I make, and it tastes like I spent 10 hours putting it together.

    Love Ree’s style of cooking, it fits our family well. I would love love love a copy of her book!

It makes me laugh even though it tells me that I’ve always made cinnamon toast the “absolutely, positively wrong way.” The right way is definitely better!

    I love Pdub! Thank you for sharing her pesto pasta recipe. My favorite of PWs recipes so far has to be the Dr Pepper Pulled Pork recipe that she also happened to demo today on the Today Show. I made a double batch (one in my oven, and one in the crock pot). Both turned out incredible! I served all 18+ pounds of it at my son’s third birthday last summer. Scrumptious as she likes to say!

    Our favorite (and especially my husbands’) is the Cinnamon Roll Recipe! I actually taped that show on Food Network and my husband and I watched it together. His favorite thing in the world is a good cinnamon roll and I’ve always had a hard time finding a good and “easy” dough. When I saw her make these rolls with such finesse, I thought hmmm I can do that and I did!! There are about 2 or 3 pans left in our freezer right now!! Ree seems like such a down home type person, I swear if I lived closer we’d be friends. After reading her blog (and especially the doughnut/coffee incident) I know we must think alike…ha! I look forward to continuing to following some of her most wonderful recipes and also perusing through the Kevin & Amanda site too. :)

    This ones a toughy!! It’s hard to pick just one, but i’ll have to say the one we’ve eaten most is MM sandwiches. They are hearty and quite tasty. We also love her chicken spaghetti and Spicy beans…and french breakfast puffs…ok I’ll stop now…I’m gettin’ hungry.

    I make her cinnamon swirl bread ALL THE TIME! It’s perfect fresh out of the oven, or in french toast once it’s gone a bit stale. Next time I think I will make some bread pudding with it!

    I really enjoyed making chicken fried steak with gravy it was very easy and super delicious I love making gravy and I usually make a brown gravy but the white gravy was so good and my family loved it!! I also like her recipe for creamy mashed potatoes.

    That’s a hard one to choose! I have loved everything I have made. I would say by far the one recipe I get asked to make the most often is either her lasagna or mashed potatoes! I’ve actually made both in the last 2 weeks!

    I love most of them I’ve tried. We did the pork chops with pineapple fried rice the other night – yummy! My birthday dinner growing up was always chicken fried steak and hers is awesome! Loved her cinnamon rolls at Christmas time!

    It is so HARD to choose a favorite PW recipe! Like–nearly impossible! Different ones keep ping-ponging thru my head but the one that keeps bouncing around the most is Knock you Naked Brownies. They are show-stoppers for any occasion. And they’re definitely not a brownie you want to make when you’re all alone…unless you really want to eat the whole pan by yourself. Because oh yes you will!
