Red Velvet Oreo Truffle Brownies
These four layer cake mix brownies start with a layer of ultra soft red velvet brownies, but are taken to the next level with Oreo truffle filling, then topped with sinfully rich chocolate ganache and mini chocolate chips. Total heaven in every bite!!
These Red Velvet Brownies are the perfect treat for Valentine’s Day or Christmas! Just look how rich and thick and fudgy they are!!
These cake mix brownies seriously could not be easier to make. This is all you need!
Easiest Red Velvet Brownies Made From Cake Mix
The brownie base for these bars starts with a Red Velvet cake mix, but feel free to make your own red velvet brownies from scratch.
Personally I think these cake mix brownies are so insanely good. So dense and rich and fudgy!
To make brownies from a cake mix, add 1/2 cup melted butter to the red velvet cake mix or any cake mix flavor of your choice.
Then addd two eggs…
And beat until smooth, thick, and decadent.
Press into the bottom of a well-coated 9×13 baking dish. I like to line my dish with foil to make the bars easier to get out. Try my trick that makes lining a pan with foil SO much easier.
Bake the red velvet brownies at 350 degrees F for 15-18 mins until just set and edges are crackly. You definitely don’t want to overcook these bars! They will fully set up as they cool.
Now, you could totally stop here and you would have delicious, thick, chewy red velvet brownies. So easy!! But we’re going to send these OVER THE TOP with an Oreo Truffle Topping!!
Oreo Truffle Layer for Red Velvet Brownies
Next you’ll need one package of WHOLE Oreos. :)
Crush them in a ziploc bag or food processor until you have mostly fine crumbs.
Next mix the crumbs with 1/2 cup melted butter until well combined.
Pour them on top of the baked brownies…
And gently press down.
Chocolate Ganache Topping for Red Velvet Brownies
Next bring 1 cup of heavy whipping cream to a low boil and pour over 1.5 cups of chocolate chips (that’s approximately one bag). I used milk chocolate chips, but you could use any kind of chocolate chip you like. Even white chocolate! Let the chips sit for 5 minutes then whisk to combine until smooth and thick.
Immediately pour over the Oreo truffle layer. Love love love these insane red velvet brownies!!
Finally top with 1 bag of mini chocolate chips, then refrigerate for 30-45 mins to let the ganache set up a bit before cutting into bars. However if you want to dive right in immediately with a spoon, I would never judge.
These are seriously the best red velvet brownies I’ve ever had.
If you have someone in your life who loves red velvet cake, you have to make these red velvet brownies for them! They will love you forever!

Ingredients
- 1 box (18.25 oz) red velvet cake mix
- 1 cup butter, divided
- 2 eggs
- 1 package (about 36) whole Oreos
- 1 bag (11.5 oz) milk chocolate chips (about 1.5 cups)
- 1 bag (12 oz) mini chocolate chips (about 1.5 cups)
- 1 cup (1/2 pint) heavy whipping cream
Instructions
- Preheat oven to 350 degrees F. Line a 9×13 baking dish with foil and coat with cooking spray. Beat together cake mix, 1/2 cup melted butter, and 2 eggs until fully combined and smooth. Press into the bottom of prepared pan and bake for 15-18 mins, until just set. Do not overbake.
- Crush whole Oreos in a Ziploc bag or food processor into fine crumbs. Stir together with remaining 1/2 cup melted butter and mix well. Pour over baked red velvet brownies and gently press down in an even layer.
- Place the milk chocolate chips in a medium-sized bowl. Bring the heavy cream to a low boil, then pour over chips. Let sit for 5 minutes, then whisk together until completely smooth and thick. Pour over Oreo layer. Top with mini chocolate chips. Refrigerate for 30-45 mins to allow chocolate ganache to set up. Cut into bars and serve.

Most amazing dessert I’ve had that you make at home. My girls ask for these as their go-to celebratory dessert. I make them in a smaller pan so the red velvet layer is a little thicker, and it comes out perfect.

Hello! I just wanted to reach out for clarification. In one part of the instructions, it say to mix 1 cup of melted butter with the crushed Oreos. When I did that, I had to add almost half of another pack of Oreos and it still wasn’t thickening. Further down in the article, another set of instructions says to mix the crushed Oreos with 1/2 cup of melted butter. Should it have been the 1/2 cup of melted butter I went with? Regardless, it smells amazing and I just may keep them as brownies! But should I try again with the Oreos, I want to make sure I do it correctly.

Ok, for one, I made these a couple years ago from a different site and they are pretty tasty. So much in fact I decided to search it again to make for work. A helpful suggestion: when giving step-by-step instructions on how to make it while scrolling down, make sure it matches up with the instructions at the bottom. Scrolling down to the part between the pictures where you say to “Next mix the crumbs with 1 cup melted butter until well combined.” (copy and pasted), well at the bottom of the page with the listed instructions, it says to pour 1/2 cup of meted butter into the Oreo mix. I went with the 1st one. Was wondering went it looked creamier than that picture. Turns out I used a full cup instead of the 1/2 cup. Might want to fix that before someone does the same thing. Should taste pretty rich now! Lol

I’ve made these a couple times and they are AMAZING. However, I’m not sure if I’m supposed to wait until the brownies have cooled completely before I add the Oreo layer. Every time I’ve added the Oreos, the brownies collapse in the middle a bit. They always turn out delicious, but I’m wondering if anyone else has had this problem? Thanks. :)

Eeeeek! In the top part of the how too it says melt one cup butter over Oreo. The bottom says 1/2. I used a full cup!

Made it today. They are very good. I was concerned that the box cake mix directions didn’t match the recipe but I follwed the recipe. I can’t remembe the last time i used a book mix, but for this recipei I se no need to make the red valvet cake from scratch, with all of the chocolate ganache and chocolate on top and Oreos I think it would be a waste of energy to bake it from scratch. I will save this one.
Tried white chocolate for the ganache layer, and it didn’t set up. Dark chocolate worked perfectly!
If you over heated or boiled the cream, it won’t set up…you have to just get it to a start of a bubble or it charges the compound of the cream
White chocolate is a lot softer than dark chocolate. If using white chocolate I’d recommend 2:1 ratio of white chocolate to cream. Just my suggestion
Where do you get red velvet cake with 18.25 oz. all the ones I see are 15.25 oz.

These are so delish however, as a warning, middle of the recipe under the picture where you mix Oreos with melted butter states 1 cup melted butter but this is too much. I think it’s supposed to read as add m the remaining of the cup of melted butter, so a half cup. Can fix with more oreos if you have them, learned the hard way. Otherwise these are so amazing.

I am in the process of making these and I agree with previous posts – the butter measurement must be off. I had to use an entire second package of crushed oreos to soak up all the additional butter. 1 stick of butter per 1 package of oreos is the correct amount. I’m continuing on with the recipe- wish me luck!

2 egg whites vs the yolks, canola oil vs the 1/2 butter and possibly soy milk instead of heavy cream may work too.
I made these and when cut, had a problem with the Oreo crumb layer not staying on top of the red velvet cake. Anyone else have this issue? They were good, but the separation of the Oreo layer was a bit of a disappointment.
Hi Gigi, I had the same problem. I think it’s because the butter measurement is wrong. I don’t think we’re supposed to use 1 cup of butter for the Oreos. I had so much butter coming out of the Oreos I had to soak them up with napkin.
