Mini Lasagna Cups

If you have any wonton wrappers leftover from the Crispy Southwestern Wontons, here’s a great way to use them up! These are adorable mini lasagnas made with wonton wrappers in a muffin tin! How fun are these little lasagna cups? And so fun to eat, no utensils needed. The outer wonton shell is thin and crispy, while the inside is soft and chewy, just like a lasagna noodle. Stuffed with gooey cheese and an incredibly meaty red sauce, these are sure to please. They’re so easy to whip up, hearty, filling, and great for a quick weeknight dinner.     I attempted these tonight, turned out very good except I used oil when cooking the ground beef/sausage which made the cups very oily. Definitely will try again!

    Made these this past weekend and LOVED them. I used the 5 Italian Cheese blend. I can’t say enough how delicious these were. I sent the recipe to everyone I knew. I think a mexican version would be delicious too!

    I made these for dinner last night, YUM YUM YUM! I did add onions to the burger/sausage when cooking. I’m going to get mini muffin pans to make these for parties. I’m sure it’ll take some tweeking on the cook time/temp. Any suggestions would be welcomed! THANKS!

    Thanks for the recipe. This is the first thing I cooked from scratch for my daughter and I since my husband died three months ago. I loved that it was easy and small. Most recipes aren’t worth my time when it’s only me and a four year old eating. I even blogged about it :)

    Did you make these in mini muffin pans or in regular ones. Mine didn’t crisp up but I also didn’t see that you get could get all the stuff in a mini one.

    These are clever! I do something similar with eggs but I love this idea for an appetizer at a cocktail party. So easy and so adorable!…and I am sure they are delish :)
