Going bananas . . .

Remember the magnificent peanut butter frosting from this cake? Yeah, I thought you did :D From the first time I taste-tested that delicious, whipped peanut butter frosting, I knew I’d be making it again. And again. And again. It was seriously one of the best things I’ve ever tasted, and honestly… I thought the peanut butter cups overpowered the sinful, ridiculousness of the peanut butter frosting. So I wanted to make it again where the simple, light hint of peanut buttery goodness could really shine.

So.

What goes good with peanut butter?? (Besides chocolate….) What would really complement and bring out the rich, peanut butter flavor???

BANANAS!!! :)

Banana Cupcakes with Peanut Butter Buttercream Frosting

To make these, I used my Best Chocolate Cake (ever!) recipe- again! I love this recipe because you can mix and match so many different flavors! Instead of the devil’s food cake mix I used a a Betty Crocker Supermoist Vanilla cake mix- and instead of the chocolate jello pudding mix I used a banana cream pudding mix!! :) Vanilla cake and banana pudding! Yum! I also threw in 1 large, very ripe banana. The banana flavor was amazing! I could’ve eaten the cupcakes just plain. But I didn’t want to. I wanted that brilliant, gorgeous, luxurious peanut butter frosting. And I wanted lots and lots of it. :D To make the peanut butter frosting, I made my regular vanilla buttercream frosting and added 1/2 cup of smooth peanut butter at the end- whip for a couple of minutes until the peanut butter is fully combined and the frosting is light and fluffy! :) INSANE! :) Please find something to make this frosting on. ASAP. Send any extras my way ok? ;)

Thank you.

Mini Maple Chocolate Chip Pancake Muffins.

We went down to Auburn again for the football game, so on Saturday morning my mom and I decided to make these Mini Maple Chocolate Chip Pancake Muffins from Bakerella. Yum! Just one little mini muffin was surprisingly filling- and very tasty! I expected the batter on these little guys to taste more like a pancake batter (not too tasty) but it really tasted just like a chocolate chip cookie batter! (very, very tasty!!) I must’ve eaten several mini muffins worth of batter cause even though the recipe is supposed to make 24, I only ended up with 20.

*blush*

Auburn Tigers Football Game MSU

After we had thoroughly stuffed ourselves with lots and lots of peanut butter & banana cupcakes and lots and lots of chocolate chip mini pancake muffins, we headed off to the game.

We had a blast! It was really exciting watching Auburn do so well. We ran into a couple of our friends and ended up sitting right next to each other at the game- sharing it with friends made the victory even sweeter! :)

We hope to go back for next week’s game, so this week I’ll be thinking of new cupcake combinations to make. I’m thinking… Vanilla cake mix. Pumpkin pie jello pudding. And vanilla buttercream frosting with a light hint of cinnamon. Maybe sprinkled with cinnamon sugar on top. :D

What would *you* make?? :)

I think you guys look super cute in your Auburn gear! We are from small town Texas so we obviously aren’t Auburn fans, but we have our own little team to go for here. I’ll definitely make muffins for our next road trip! You have the best ideas and I’m such a copy cat!

Thank you Amanda. You have now made my decision on what type of ‘cake’ or dessert we are having at my baby shower. My husband is going to be making your banana cupcakes with peanut butter buttercreme frosting. :)

Yum! I wish I could just reach those cupcakes through the screen. We don’t have jello puddings in Australia but I’m sure I could add mashed bananas to my cupcake recipe and make peanut butter frosting. I can’t wait till all the little babies in our group have tasted and are ok to eat peanut butter because it’s good in so many things!

I agree about the muffins from Bakerella. I made them for myself and 3 kids I was watching…..we ate them all!
And I’m digging the pumpkin pie jello pudding. Now if I could only find pumpkin around these parts!

Your recipes look delicious! I enjoy your blog. The camera tips for the Canon Digital Rebel are about the first I have seen anywhere that I can actually understand. Thanks! Oh, and I downloaded a font and used it on a card that I uploaded to Splitcoast. I linked to your site as well. The fonts are so cute! Thank you for sharing them.

OMG’osh! I must admit I am a bit of a baking snob. It took me 2 days to make my son his 3rd b-day cake, homemade white choc. frosting & lemon curd for our party. Now his playgroup party is tomorrow… This was a perfect oppertunity to try your bannana & peanut Butter frosting (his nick name is Sugar Monkey!)
These are AWESOME! I will post pictures on my blog with a link to yours!

Hey Amanda! I wanted to let you know I made the peanut butter cake and it was delicious! I saw your recipe for substituting with the bananas, so I had to make those too. My son Justin had one suggestion though; he asked me to add milk chocolate chips….OH MY GOSH!!!! They were to die for!!!

I love your site and visit it often but I had to comment because I love your pictures – Your photography is always so crisp and clear and colorful.
You two are such a cute couple but if you scroll down through your pictures you will see that you have the “standard couple stance”.
Kevin on the left of the picture. Amanda on the right almost in the same post each time.
So here’s my challenge. Shake it up you two – I know you have it in you!
Have fun at your football games – Football season is a blast!!!

Thanks for all the fun on your blog!

I made key lime tarts for the LSU game. They were gone before I could get me one. Too funny that you are an Auburn fan. We (LSU Tigers) look forward to that game every year. Here is the link: http://imhung-ry.blogspot.com/2008/12/keylime-tarts.html
