Zucchini & Bacon Three Cheese Lasagna

Zucchini & Bacon Three Cheese Lasagna

Since I planted eight zucchini plants this year, I have plenty of zucchini right about now! This is one of my absolute favorite zucchini recipes, and I know you’ll love it too. Even if you’re not so sure about zucchini, give this one a try. This delicious, cheesy, ooey gooey lasagna is so yummy! It may sound weird, but to me zucchini is great at taking on other flavors and completely enhancing them! And with plenty of bacon, three types of cheese, and a little pinch of nutmeg, how can you go wrong?? :) It’s just bursting with flavor. Plus, it’s fun to make and really impressive because you get to toss around phrases like “fontina cheese”, “freshly grated nutmeg” and “Oh, I’m just whipping up a béchamel sauce!”

Give it a try… you won’t be disappointed! :)

What are you having this week? I think I’ll try this Cheesy Stuffed Baked Ziti and this Deep Dish Pizza… How cool is that?? :)

Have a great Monday! :)

Yummy! I am making this tonight! Right now I am waiting for my zucchini brownies to cool so I can frost them. That will be dessert after we have this bacon and zucchini lasagna! Thanks Amanda! Keep the recipes coming!

I’m vegetarian and I’d have to modify this one a bit but I think I will play with it. Thanks for sharing. Love your blog. Can you answer one question for me- what kind of camera do you use for the blog photos? They are fantastic.

Hi Amanda,
Thank you for sharing this recipe. We tried it Tuesday night. As they say around here you have to be careful not to leave your car windows open or you’ll find zucchini on your car seat! My husband wasn’t too excited at first because he is kind of a meat and potatoes guy but he loved it and took seconds. We are having the leftovers tonight.

I was excited about this dish, but, sorry to report, I was disappointed. Love all the ingredients individually, but put together – It was entirely too salty. With the cheese and bacon being salty already, I think there is no need to add any extra salt. All 4 people eating it complained. I’ll probably try it again one day with out adding salt….and maybe buying low salt bacon, too.

I LOVE the mozza pearls. I’ve never used them before but will definitely be using them again.
