Our Favorite, No-Brainer Side Dish

Sweet Summer Roasted Vegetables

A few weeks ago I mentioned one of my favorite summer side dishes… These delicious, sweet roasted vegetables. I’ve now added the step-by-step recipe over on the recipe section of Kevin & Amanda. I love it because my side dishes are often an afterthought, but with this, you can keep all the ingredients on hand to quickly throw together a complementing side dish that goes with everything. And the bright colors make a beautiful presentation! Best of all, it couldn’t be easier to whip up. The sweetness of the corn and bell pepper really shine in this recipe, so if you’re not usually a big fan of vegetables… Try these! :) We’re having it this week with our favorite salmon.

We will have grilled halibut tonight. I like to make a salad with baby spinach, feta cheese, craisins, fresh blueberries and slivered almonds. I lay the grilled fish on top and put a little oil and vinegar dressing. YUMMO!

This recipe sounds great! I will be trying it!

I am going to make it this week, but what I’ll do instead is while it cools I’ll toss in some cooked quinoa for protein and eat it in some toasted pita bread. YUM!

Yum! And pretty! I love pretty food!

This is our new favorite summer dish, we’ve had it twice in the last two weeks! (we eat it as a main but it would be a great side as well!)

So…I am not a fan of vegetables, but I know I need to integrate more of them into our meals. I made this tonight with some grilled salmon (I actually roasted the veggies in a pan on the grill, since it’s already 115 degrees here I didn’t really want to fire up the oven)and it was AMAZING!! My husband and I ate all of it & even scraped the pan…Thank You!

I made this lastnight and it was YUMMY. I doubled the recipe for a family of 4 and added a little extra corn to it .. we LOVE corn. Next time I make it though,I will add less onions. I also added veggie seasoning. This was super delicous .. expecially for someone who doesn’t like zucchini :)!

This was delicious! I served it with quinoa and the two went well together. With the leftover roast veggies & quinoa I added some bolognese for zest. It was a fun spin on boring leftovers. Thanks for the great recipe, Amanda!
