We *love* pasta around here- I have to admit, it’s pretty much my favorite food on the planet. But then if you’ve ever been over to the Favorite Recipes section of kevinandamanda.com, you probably already knew that! :) I’ve always wanted to make my own fresh pasta from scratch – I would love to make my own specialty flavored pastas… with yummy combinations like garlic & herbs (fresh from the garden!), roasted red peppers or tomatoes (fresh from the neighbor’s garden – what a fun red color this pasta would be!), or how about a speckled, lemon pepper pasta (in a light cream sauce with chicken or shrimp?? Or lightly buttered next to a steak! :)) and ooh, maybe some kind of spicy chile pepper pasta?? I’m thinking pepperoncinis or jalapenos would be perfect. :) Or for fall – a fun, bright orange, harvest spiced, pumpkin or sweet potato pasta?? I could go on. And on. Or, or – get this – a sweet, chocolate *dessert* pasta to serve with ice cream, whipped cream and strawberries. *dying a thousand little deaths*
But I’m getting ahead of myself here… :)
I was so, so thrilled when Bertolli (yes, that Bertolli! :)) contacted me and asked if I’d like to try making my own pasta. It’s like they read my mind. Um, yes! :) Definitely! :)

Three short days later, a beautiful pasta prize package showed up at my door. They sent an Imperia Pasta Machine (to make my first experience with rolling & cutting pasta dough a snap), an Emile Henry Lasagna Baker (for baking all my favorite pasta dishes to perfection- lasagna, macaroni & cheese, baked penne with roasted vegetables…), and a coupon for a free Bertolli Frozen Meal (for nights when I don’t have time to make my own pasta! :))
I was in heaven. I started with a recipe for homemade basil fettuccine to use with my brand spankin’ new pasta machine.

Oh man. I cannot even begin to tell you how unbelievably fantastic this smells right now.

It rolled out and cut really easily – it was not as hard as I was imagining!! :)

And the really cool thing – I was so surprised – when you get done cutting, you just kind of throw in into a pile. And then you dump that pile into the boiling water. And it all works out perfectly. It doesn’t stick or clump together. I was amazed. It was… simple.

Okay. Again. I cannot even begin to describe how good this smelled. Or tasted! :D The basil… *faints.* I wanted to eat the noodles just plain.

And it’s green! :) Love it – so fun! This should be the official dish of Christmas. This pasta making thing was a blast – I’m seeing this as a weekly occurrence now. I have lots of flavor combinations to try. :D
You have got to try making your own pasta- got, got, got to! :)
Oh! I cannot wait to make this again towards the end of summer when all my bell peppers and herbs are taking over the garden! :)

Next I tried our favorite lasagna in the ceramic lasagna dish they sent. It’s so cute – it’s a little bigger than an 8×8 dish, but not as big as a 9×13. It’s the perfect size for 4-6 servings. Our favorite lasagna isn’t fancy, but since neither of us really care for ricotta cheese, this recipe is just perfect for us. And simple, easy to keep on-hand pantry items make it a quick & easy weeknight meal – not to mention delicious! :)
Kevin & Amanda’s Favorite Lasagna
1 can cheddar cheese soup
1/4 cup milk
1/2 pound ground beef
1/2 lb sausage
2 cups spaghetti sauce
4-6 oven-ready lasagna noodles
1 cup shredded cheese (cheddar, or your favorite combo!)Preheat the oven to 400°F. Combine the soup and milk in a small bowl until the mixture is smooth. Set aside. Brown the sausage & ground beef together and drain off the fat. Stir in the spaghetti sauce.
Layer the lasagna in this order: 1/2 meat mixture, noodles, 1/2 soup mixture, remaining meat mixture, noodles, remaining soup mixture, then top with shredded cheese.
Cover the baking dish with foil and bake @ 400 for 20 minutes. Remove foil and bake for another 10-15 mins until cheese is melted & bubbly. Let stand for 10 minutes before serving. (If you can wait! ;))

The next night we used our coupon for a free Bertolli Frozen Meal for two – Sweet! Dinner on Bertolli tonight! :D
BTW, we ate good this week, huh.

2 extremely generous portions, only 500 calories each, ready in 9 mins, only messes up 1 dish – perfect for a quick dinner after a long day of kayaking! :)
Add a salad and bread and you’ve easily got dinner for 4.

Okay, so, I promise I’m not just torturing you! :) Bertolli wants to send one kevinandamanda.com reader a Pasta Prize Package of their own!
Time’s Up! We have a winner!!! :)

It all looks yummy–sign me up! :)
I just took a pasta making class but I don’t have a pasta maker yet! I would love one!
I love pasta also. I was able to go to Italy this past summer and it was wonderful to actually be able to have real Italian food. Since then, I have been experiencing more with Italian dishes. I have found one called Spaghetti Trinidad and it is wonderful. We currently live in Malawi, Africa, and it’s hard to always find pre-packaged things, so this is really simple to make here (and it’s delicious). Here’s the recipe (courtesy of http://www.robinsweb.com/food/maindish.html):
Spaghetti Trinidad
1 box spaghetti
1 pkg. bacon
olive oil
1 onion
garlic cloves, to suit your taste
baby carrots, sliced into thin coins
1 green pepper
salt & pepper to taste
Parmesan Cheese
Fry bacon, cool, drain, crumble, set aside. Start salted, boiling water for spaghetti. Heat olive oil. Saute onion, thin sliced baby carrots, green pepper and fresh garlic clove. Drain pasta. Toss all ingredients together, add more olive oil, salt, fresh ground pepper and be very generous with parmesan cheese. This dish is great the first day and spectacular the second day. There will never be leftovers of this dish!
I hope you enjoy this recipe and I would love to win this wonderful giveaway.
Ooooh, I would love to make fresh pasta!

I’ve never made my own pasta, but I would LOVE to try! My favorite italian dish is my husband’s white chicken lasagna. I love it because it’s delicious and because whenever he makes it it means I get a night off from cooking!
I LOVE pasta! And I would LOVE to make my own pasta! I’ve always wanted to try making my own noodles, but have never invested in those fancy pasta making machines! I love Bertoli anything. My favorite Italian dish is homemade Alfredo with any pasta will do. I prefer ravioli though. Your photographs are always amazing.
Thanks for inspiring,
Pam
Oh my gosh that looks amazing! I just planted some herbs in a couple of planters outside our apartment yesterday, and I’m sure they would be perfectly ready to go in pasta if I win! :)
Our favorite pasta is a baked pasta dish with baked tortellini. The secret ingredient is Emeril’s Vodka sauce! :)
Awesome! I will totally have to try the basil fettucini. I make a good Chicken Fettucini Alfredo.
My absolute favorite sauces and pastas are from Bertolli! We love the Tomato and Basil spaghetti sauce. And the alfredo is the best for quick chicken alfredo. Bertolli makes life easier! and yummier! lol.
YUM! My favorite pasta dish is lasagna, but we love ricotta cheese so it has to include that for us! I’ve been wanting to make my own pasta, I hope I win!
What was the crazy part in the video? I love those three, so I enjoyed it, but no gasping from me…it just made me very hungry! :)
My fave Italian dish is sausage & peppers, with some penne. I love me some Italian sausage! (no, that is not a euphemism! :)

My favorite restaurant is Olive Garden and last time I went there I ate Grilled Steak Fonduta, hmmm so yummy…I wish I knew how to make it.
Second, your pictures…watered my mouth right now….
I LOVE pasta too, and for my happiness and joy my 18 moth old boy LOVES it too. We eat it almost everyday.
Ok, I’ve talked too much. Bye!
I love Italian Meatballs! Yummy! :)
That basil fettuccine looks delicious! I made pasta just last night for dinner: spaghetti with meatballs, Caesar salad, and garlic bread. I got the reciepe here:
http://www.marthastewart.com/recipe/easiest-spaghetti-and-meatballs
Pasta is my absolute favorite too :D But if I could have one kind with me on a deserted island it’d have to be angel hair!
MMM…favorite italian food…Ham and Asparagus Fritata…It;s my BFs secret fam recipe and his elderly italian aunt makes the best one! Her homemade pasta is fab too
That looks amazing!!!!!!!!!!! I hope I win so I can make it too! *wink wink* I have made noodles before but just the egg noodles that you put in chicken noodle soup. My favorite Italian dish is fettuccine!!! Yummmmmm!!
Love pasta! Thanks for the chance to win this.
I love Chicken Marsala or even just a good bowl of spaghetti. Yum.
I am a pasta lover also, my favorite is any kind of pasta with melted cheese on it and some sauce. Simple but so yummy :)
I love chicken alfredo. yumm, but seeing as I just started a new diet, this package may be the death of my diet!
That looks phenomenal!
I don’t have any great or favorite pasta recipes; I’ve never gotten that creative with it. I do, however, have a great pork chop dish (and I don’t even really like pork chops) that I serve over noodles, so I’ll share that one. I came up with it and posted it on my blog last year: http://aimeewrites.wordpress.com/2009/01/28/call-it-yum/
I’ve never made my own pasta but would love to! The basil fettuccini looks yummy. I make at least one pasta dish every week in my house. But my favorite pasta is the shrimp scampi at Amerigo. ;)
Wonderful giveaway! I’m a sucker for angel hair pasta (especially with eggplant!). Thanks for the opportunity!!
I would love to win anything!
Italian Food Recipe
Chicken Parm With a side of noodles.
Boneless Skinless Chicken Breast
Bread with egg and Italian Seasoned bread crumbs (don’t forget to add salt and pepper) and fry in EV Olive Oil until both sides are completely browned and crispy.
Remove and place in Baking dish. Add Tomato Basil Sauce and top with Mozz Cheese and a sprinkle of Parm cheese. Bake in over at 350 until cheese is melted.
While that is baking, find some Fettuccini noodles and boil those up and add sauce of your choice, red, basil, or white. Doesn’t matter, it’s all good!!!!!!!!!!!!!!!!!! A great veggie would be spinach.
Love it! My favorite Italian dish is a rip off recipe based on the Olive Garden’s Chicken Vino Bianco (sp?)…to die for…with peppers and onions and wine and garlic and butter…heaven!
Ravioli with every kind of filling. I bet you feel like royalty now
All I can say is yummy, yummy, yummy. I made the mistake of looking at this around lunchtime. I am now starving!!!! I love all pasta. It doesn’t matter the color or flavor. Right now my favorite would have to be Crawfish Fettuccine. I had it just Sunday night. YUM!!
I’ve never actually done my own noodles before, but it sounds like fun! My mom used to do a homemade pasta, and I’m DYING to try my hand at it. Fave dish — I’m a sucker for a good fettuccine alfredo – we usually do it with steak and spinach – it’s so yummy! Thanks for hosting this!
how exciting! I would love to make homemade pasta. The basil fettuccine looks divine!
OMG! Your post makes me sooooo hungry. I’m a sucker for Italian cuisine. My fave recipe is three cheese ravioli in pesto sauce. Embarassingly, my recipe is:
Buy the frozen ravioli (b/c I don’t know how to make it);
Mix olive oil and basil pesto mix in bowl;
Cook ravioli and drain;
Pour pesto sauce over ravioli; and
EAT
My grandmother used to make egg noodles all the time b/c that’s what you do when you have 13 kids, I guess. Even after her kids were gone, she made noodles for others at our church. We got to help, but we had NOTHING like the noodle making machine!
Thanks for the chance to win! =)
I would ABSOLUTELY LOVE, LOVE, LOVE to win this!! I’ve never made my own pasta, but I definitely want to try it out! =) My fave Italian dish is Fettucinne Alfredo with grilled chicken!! Your recipe for Lasanga looks devine and I might have to try that out soon!
what a great recipe – i can’t wait to try it. and what a great give-away! i love Bertolli’s meals! my favorite pasta dish – not sure if it’s Italian or no – is chicken picata! yum!
Great giveaway! I love risotto and lasagna! Yummy.
I can’t wait to hear if I win…I have so many plans if I win the pasta machine. :)
This is too funny! My children and I were just discussing the different types of pasta you “could” make two nights ago. I was thinking how much fun it would be to make our own. My three year old wanted chocolate–a girl after my own heart. I would love to make it as a dessert dish!
Oh WOW! I have been looking at pasta machines for the last 6 months!! I cannot believe I could have a chance to WIN one! How cool is that???? Plus, Amanda, you have inspired me so much with your weight loss – I’ve joined Weight Watchers online and also signed up for Spark. Spark has already given me SO much information – I especially love their daily emails of inspiration. Unfortunately, after a lifetime (I’m 47) of bad eating habits, I have almost 100 lbs to lose. It’s going so slow, but I’ve begun exercising and making healthy choices at the grocery store. I have 4 children that really need to learn better habits than I did. I’m only buying fruit and crackers for snacks, have stopped making afterschool goodies like cookies and brownies and I have pushed my kids outdoors to play rather than having them watch a movie or play a video game. It really is like making a paridigm shift – it’s a whole new lifestyle. After about 4 weeks, it is finally starting to feel good. My energy level is gaining and I find myself wanting to be outside more. It’s hard to be in public when you are so overweight – but at least now I am doing something about it. One of the reasons I have wanted a pasta machine is to take more control over what I feed my family. I am paying more attention to labels and have realized so many foods are filled with sugar of some sort.
I just realized I have been blabbing on what was to be a short comment – I’ll end it here! My fingers and toes are crossed for this win! Thanks Amanda and Kevin :)
WOW. Your pictures are so good I think I CAN smell that basil!! :)
I had an Italian friend back in Boston {I’m a CA girl now} and she gave me the most authentic, yummiest lasagna recipe ever. It’s time-consuming and takes up my whole kitchen, but it’s so worth it. Lasagna is definitely my favorite italian recipe – but I LOVE ricotta!! :)
Thanks to you {& Bertolli} for such a great giveaway!
My favorite is the classic chicken alfredo… although this probably has something to do with the fact that my husband won’t eat anything with cream sauce. So for me alfredo is like a rare delicacy!
I absolutely LOVE your Chicken Alfredo recipe! It’s on our rotating menu every month…I just gotta figure out a way to make it lower in fat! I would love to be entered in this giveaway! Thanks Amanda!
I too love lasagna but don’t like ricotta cheese. thanks for the chance to win !
What a great idea and I fun giveaway! I would love to win. I have 3 girls who LOVE pasta–I’d love to make some of my own. Thanks!
Toss up between Chicken Fettucine Alfredo or Four Cheese Tortellini with Chicken and Alfredo sauce!
My favorite is eggplant parm. although I haven’t had it in quite some time. I’m trying to lose weight and it’s not very diet (even though I hate that word..) friendly.
I love anything Italian! My favorites are gnocchi, lasagna, and my mom’s spaghetti sauce. I’ve never made my own pasta, but it looks fairly easy and fun!
I would Love to win this!!! My favorite recipe using pasta is Pastitsio…a greek pasta dish that is wonderful. Definately comfort food.
Love Love Love Italian Food! Hope I win this awesome prize!!
I love pasta and would so eat it everyday (if I could persuade my hubby and children to jump on that bandwagon) Oh well! But love the pasta maker, I am getting into the whole making as much food by scratch this year as I can, so that would definitly be something cool to have and try out.
Like most people I love pasta! I make all kinds of dishes using it. However, I have never made it. It looks very easy to do with the Bertolli pasta machine. Thank you for sharing your recipe, your photos and that really cool video.
Mary
Seriously, Amanda? Your pasta recipes sound delicious! I just bought a Basil plant yesterday, and it was all I could do to not pull all of the leaves off and use them! Your pasta ideas sound wonderful. Do you need someone to test them for you? When can I come over? ;-) Have a great weekend!
Those recipes sound delicious! I’d love to try the Bertolli meal! Thanks!
Good old fashioned spaghetti and meat balls with garlic bread! Oh yeah, made with fresh pasta!
OMG that pasta looks SO YUMMY!!!!! My favorite all time pasta is linguini with basil pesto!! I have always wanted to make my own pasta, it looks so delish!!!!
I agree with you… I absolutely love pasta also. But as a recent diabetic, I need to find healthier ways to eat it. This would be perfect as I could make healthy pastas! Please pick me!
Ohhh, I just got a new Italian cookbook and would love a pasta maker! My favorite dish is probably artichoke and chicken pasta.
This is an awesome giveaway!! I have always wanted to try to make my own pasta!!! I guess my favorite pasta dish would be Chicken Parmesan!! Or maybe pizza if you count that as Italian??
Thanks for the chance to win!!!
Oh my goodness, we’re pasta-aholics in my house! I’ve been wanting to make my own pasta but I’ve been intimidated! ;P We love spaghetti. And tortellini. And ravioli. And chicken fettuccine alfredo. The list goes on and on! :)
That pasta looks sooo yummy!! I would absolutely love to win that pasta machine! My favorite pasta dish is Cream Cheese Chicken Lasagna. It is super easy and my kids even LOVE it! You shred some chicken, (I usually just get a rotisserie chicken), and mix it with cream cheese and a little mozerella cheese. Then you layer the lasagna noodles, chicken mixture and sauce (I use Classico Tomato and Basil). Top with lots of Mozerella cheese, bake at 350 degrees for 45 min to one hour and you have a delicious meal!!
I am always a sucker for some good Fettuccine Alfredo. Recently, however, I made PW’s Lasagna and it was AMAZING. I’m sure you and several people have tried it. :) This giveaway is awesome and I would LOVE to make home-made pasta!
I love shrimp scampi over fettucini! Mmmm… Just thinking about making homemade fettucini with that pasta machine is making my mouth water!!
This is an awesome post plus the giveaway is awesome.
I’ve never made pasta from scratch.
I love everything Italian. One recipe that I love to make is http://www.williams-sonoma.com/recipe/spaghetti-with-stuffed-meatballs.html
Until my gift package gets here, I will have to go buy a Bertoli frozen meal.
I love giveaways! Thanks cutie! I have become a huge fan of Charming Charlie’s because of YOU. The jewelry is waaaay cute. I’m addicted. Thanks for sharing. This pasta machine looks interesting, too. I wonder if I could ever learn how to make home made pasta. That would be a fun challenge. Keep up the fun stuff. Your dogs in the canoe…so sweet :o)
I love good ole spaghetti and meatballs, but lasagna is always good too. Any kind of Italian sausage is yummy….oh, I know what I’m having for supper tonight!
We live off of Bertolli…especially for an impromptu date night!
i am sicilian, so a passion for pasta is literally in my genes! i recently tried this recipe from Real Simple magazine for Broccoli and Three Cheese Lasagna. http://www.realsimple.com/food-recipes/browse-all-recipes/broccoli-and-three-cheese-recipe-00000000025215/index.html it is delightful! it is quite tasty with spinach in place of the broccoli too!
I love ANYTHING Italian. Especially food! LOL
It’s hard to pick just one dish but I’d have to go with the traditional Lasagna.
AND with homemade noodles….MMMMMMMMmmmmmmmmmm……that makes it about 2,000% better!
I love Italian…my fav is Veal Piccata..yummy..might make for dinner tonight…
Oh, homemade lasagna, most definitely!
I love some good ol’ ravioli :)
I like Alfredo fettuccine and baked spaghetti. I’ve never made my own pasta but I think it would be really neat!
I love love looovve stuffed shells!!
This all looks AMAZING! You are one lucky gal!! I love cheese tortellini with alfredo sauce, pizza, spaghetti and meatballs and pretty much anything Italian. I love lasagna but I don’t like ricotta or cottage cheese (yes, I’m extremely picky). I have been trying to find a recipe that omits these. I love basil pesto though so I am going to get to work on my own recipe (which I will share with you when I get it perfected) that has basil pesto maybe mixed with ricotta in between the layers of noodles and sauce.
In the meantime, I’d LOVE, LOVE, LOVE to win this package. Your pasta looks so good.
I have never made my own pasta but would love to learn how! My family (especially my non-veggie eating toddler) LOVES pasta!!
Ok- I NEED to win that!! i love lasagna AND homemade pasta!! Pick me, pick me!! :)
I love spaghetti with meat sauce, and lasagna with lots of cheese, and ziti, and fettuccine alfredo, and…I guess you could say that I love pasta.
I also have a love affair with pasta! :)I love it and so does my family. Sometimes pasta is the only thing my picky 2 year old will eat. So count me entered in the giveaway! Thanks so much!
We LOVE pasta too! :)
I made homemade tortellini once, it took a lot of time to stuff and shape everything, but it was delicious. Lasagna with garlic bread is my all time favorite Italian dish, but i love chicken parmigiana if I’m in a hurry.
It is almost lunchtime here and reading this post has made me starving for pasta… I have always wondered about making my own but foolishly believed that it would be too difficult & time consuming. I think that you have inspired me to try! Thank you so much for a wonderful post and to everyone that commented with recipes – you all rock! :)
I love pasta too! It is definitely my favorite food! Especially Fettucine Alfredo with Chicken! Oh yummy. I’ve made my own pasta – but the only kind that I have done is egg noodles from my Grandmother’s recipe. Always cutting it by hand. If I could get a pasta cutter – wow that would save time and I would be making it all the time! This is a dream giveaway for me! Love it!
Your pasta looks awesome Amanda!
Amazingly wonderful giveaway!! How cool!!
