Cheeseburger Macaroni is another one of our favorite weeknight dinners. It’s beefy. It’s cheesy. It’s incredibly delicious and it whips up in less than 20 minutes. There is nothing I don’t love about this recipe!

    Took the rotel out for the picky ones who won’t eat tomatoes and used water instead of beef broth. Everyone loved it, some even commenting that it was better than hamburger helper. Only thing I’d like to try is to make a bit extra of the cheese sauce to make it cheesier since I have a number of cheese lovers in my house. Wonderful recipe, thank you!

    Hi,
    I made this tonight according to your directions and I had so much liquid when all was said and done, I had to drain some of it off. It wasn’t all creamy and yummy like your photo! What can I do to get it to look like yours (: It was still tasty but the extra liquid was puzzling.

    I just wanted to let you know I made this for dinner last night. My husband occasionally waxes poetic about “Chili Mac”. I myself had never had it. His approximation on how to make it is ‘1 box prepared mac and cheese mixed with a can of hormel chili’.. . . um. . .ewwww. I tried to make it once for him using prepared boxed mac and cheese but substituting a can of diced tomatoes and some ground beef and chili powder. It was, in my opinion, disgusting! I couldn’t eat it! So last night I made your version here. It was so much better! He loved it and we even heated up left overs for lunch today! Thanks!

    My husband and I enjoyed this for supper tonight! Delicious! He’s in the AirForce and it reminded him of one of his favorite MRE’s (Meal Ready to Eat), ChilliMac. (This did weird me out that a “MRE” could be good, but he loved it!)

    I ran to the store and got the ingredients for this as soon as I saw it. I hate to admit that my family loves Hamburger Helper but I hate serving them that stuff. I like that this is homemade and it sounds like it has a little kick too. I love Rotel. Now that we have two boys in baseball with practice 4 days a week, I’m looking for yummy, homemade recipes that I can throw together quickly when we get home. Thanks for dinner Amanda!

    Just letting you know I'm making your banana cupcakes with pb frosting AGAIN this weekend for my baby's 2nd bday. I'm also going to try lemon cupcakes using the same recipe as the banana, except substituting lemon pudding. Wish me luck! :)

    P.S. I'd love your input on what frosting would be good with lemon cake???

    Oh why must you tease me so!? I was totally going to make this until I saw the sodium is what is recommended for one day. If I didn’t bloat up like a Macy’s balloon… Hmm. Okay, I could totally sub out the taco seasoning for my own salt free stuff…cumin, chili powder, red pepper flakes, white pepper, etc. Whole wheat macaroni to bump fiber up. Half water and half low sodium broth or all water. I don’t skimp on cheese so that would stay the same. I might just make it after all! LOL (Like how I talked myself into that?)

      I have the same inner conversations with myself. Lol. Low sodium here, too.
      Another thing we have in common is I don’t skimp on the cheese either. That’s what makes it so good.
      Here are my low sodium tips in case they come in handy for you or someone else:
      Use salt free Herb Ox beet broth packets.
      No Salt Added Rotel – found at Walmart
      Make my own taco seasoning with zero salt.
      At the very end of the dish if it needs a little perk up, I might sprinkle a very small pinch of salt over the whole dish. Seems if it cooks in there it disappears more so that’s why at the end, and only on certain dishes.
