So excited to share this fun cookie recipe with you today! They are so good! I turned them into the ultimate ice cream sandwich, but these cookies are a triumph on their own.

They’re so ridiculously easy. Just 5 ingredients and NO measuring!! You just dump everything into the bowl and mix it up. They are super buttery and SO soft and chewy. They melt in your mouth!! Love these fun and easy shortcut cookies.

Check out your 5 simple ingredients. A yellow cake mix + instant flavored oatmeal make these the easiest cookies ever with a seriously yummy flavor. You  can use any flavor oatmeal you want to send these cookies over the top!! I used classic Maple & Brown Sugar here, but how good would Apple Cinnamon oatmeal be in the fall?? Omg I just had an idea. You could even use caramel bits instead of chocolate chips!! Or both!! I totally have to make those now. You could also make them with peaches and cream oatmeal, strawberry, banana… The options are endless! Blueberry Oatmeal with a yellow cake mix would be like blueberry muffin cookies!!

How to Make The Best Ice Cream Sandwiches

Description

These delicious Cake Batter Chocolate Chip Cookie Ice Cream Sandwiches are easy to make with only 5 ingredients! Homemade chessters have never been so easy and fun.

Ingredients

  • 1/2 cup (1 stick) salted butter
  • 1 (16.5 oz) box yellow cake mix
  • 2 (1.5 oz) packets Maple & Brown Sugar instant oatmeal
  • 2 large eggs
  • 1 bag (12 oz) mini chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
  2. Melt one stick of butter until golden brown, whisking constantly after butter melts. Immediately pour into the bottom of a large mixing bowl. Add cake mix, oatmeal, and eggs, and beat on low speed until just combined. Stir in chocolate chips.
  3. Scoop 1.5 tablespoons of dough onto prepared cookie sheet. Bake at 350 for 10 minutes, until edges are just starting to turn golden brown.
  4. If desired, sandwich a scoop of ice cream between two cookies and roll in extra chocolate chips to coat. Freeze until ready to eat.

    As soon as I saw this recipe, I wanted to try it. But when I saw your suggestion for the spice cake/apple cinnamon cookies it was all over. I am sitting in my kitchen trying not to eat the whole batch myself. I browned the butter per your suggestion and also used the caramel bits (about 3/4 of the bag since they’re pretty big). I also had about 1/5 bag of butterscotch chips laying around so I decided to throw those in, too. They are incredible. I’m a chocoholic by nature, but these are some of the best cookies I’ve ever tasted! Thanks so much for sharing!! I’m making blue velvet with maple & brown sugar oatmeal and white chocolate chips at the end of the month for my niece’s birthday because I think blue cookies will look awesome. :) Thanks again!

      If you just scoop and bake and then leave them on the baking pan for a few min after you pull them out, before transferring to a cooling rack, they are puffy and soft but flatten themselves out just slightly.

    Thanks for this great, fast recipe! I needed to make these really quickly, so I added a little water to the mixture and put it all into a brownie pan to take them to a potluck in the form of a bar cookie, which was a lot less work than portioning out scoops of cookie dough.       Previous reply’s stated that “quick” oats can be used to replace the oatmeal packets. Old fashioned oats take longer to cook. Get the “quick cook” regular oatmeal from the store.

    Have you ever tried making the dough in advance and freezing or refrigerating it overnight? I’m wondering if that would work with this particular dough? I am hoping to make these for a party this weekend, but was hoping to make the dough Friday and bake them Saturday morning. What do you think?

      Definitely! Cookie dough does wonderfully refrigerated! For 1-3 nights, I would refrigerate. For longer, I would freeze. Hope this helps! :)

    These came out great! I used a spice mix with maple brown sugar oatmeal and butterscotch chips!! They came out perfect. I even spread some peanut butter in between a couple and made a sandwich-yum! I already bought stuff to make a caramel apple version. Thanks for the great recipe.

    Your pictures look amazing. I was so excited to try these I made them right away (today). I’m so sad though because they turned out NOTHING like your pictures and I did everything exactly as I should. The brown butter turned my dough dark and once I added the chocolate chips, it melted them and looked like brownie batter practically! Please tell me what I should have done differently. I am determined to get them looking (and probably tasting) just like yours! Yours also seemed to rise a lot better than mine- I tried not to overmix but maybe I did. Thanks

      Hi Abby! I’m so sorry they didn’t turn out!! I would probably try not letting the butter get so dark the next time. You actually don’t even have to brown the butter at all, you can just melt it in the microwave if you want to try it that way. But if you still want that brown butter flavor, as soon as it melts and starts to get a nutty aroma (it’ll only be an amber color at this time, not dark brown), I would immediately pull it off the heat, pour it into the mixing bowl, and let cool to the touch, or at least 10 minutes. During this time you can gather the other ingredients, preheat the oven, wash the pot the butter was melted in, etc. Or you can set the mixing bowl in a bowl of ice and whisk the butter to speed up the process. If the dough still feels warm after adding all the ingredients except the chocolate chips, I would pop it into the fridge (or freezer) for a few minutes until it cools down, then stir in the chocolate chips. Hope this helps!!

    I’ve never “Browned” butter before, but it was easy, except I think I added the chocolate chips to soon and they melted a little in the batter… NOT a problem! They’re still YUMMY!! ??

    I was wondering if you ever tried these cookies with raisins or craisins in place of chocolate chip? We have a family member with an allergy to the chocolate and thought these might work with those in exchange for them, or maybe a trailmix blend they love to make them seem “healthy”.

    I have these in my oven right now! I made them using a Triple Chocolate Fudge cake mix and Strawberries and Cream oatmeal packets… if the batter is any indication these are going to be AMAZING! Don’t skip browning the butter because it adds awesome depth of flavor. Thank you for this easy and delicious recipe!
