Candy Dipped Peanut Butter Ritz Sandwiches

This is a super quick and simple snack, but it’s one of my absolute favorite Christmas Cookie Recipes! My mom has made these every year since I can remember for the holidays. This one’s an oldie, but a goodie. I so look forward to these little peanut butter stuffed Ritz cracker treats each year! :)

Usually these are waiting for me on a plate as soon as we walk in the door for Christmas, but this year I made a few on my own and they couldn’t be easier. All you need are Ritz crackers, peanut butter, and white almond bark.

By the way, can someone tell me why my almond bark and Ritz are straight, while my weird, freaky Jif is impressively slanted? I can’t figure that one out.

Anyway! Lay out a few Ritz crackers..

And top with peanut butter.

Then smoosh on another Ritz cracker to make these delightful little peanut butter stuffed sandwiches.

You totally needed a play-by-play for that recipe, right? Glad to be of service.

Now take 4 bars of white almond bark..

And melt in the microwave on low to medium heat, stirring every 30 seconds until it’s melted and smooth.

Grab a sandwich with some tongs..

And drop it in the melted candy coating, turning it over a few times to coat.

Then tap it on the side of the bowl to shake off the excess coating.

Place on wax paper to cool.

These little sandwiches are always a huge hit. A delicious combination of sweet, salty, crunchy and totally peanut buttery. Talk about fabulous! :)

  • 1 sleeve Ritz Crackers
  • ½ cup peanut butter
  • 4 squares (8 oz) white almond bark
  1. Spread a bit of peanut butter on as many crackers as you want, then top with another cracker to make a sandwich. Melt the almond bark in the microwave, stirring every 30 seconds until it's melted and smooth. Grab a sandwich with tongs and drop it in the melted almond bark, turning over a few times to coat. Tap off any excess almond bark. Place on wax paper to cool for about 20-30 mins before serving.
