Here’s all you need to make this quick and easy meal — ham, salami, crescent rolls, eggs, shredded cheese, bell peppers and onions.

I keep this frozen bell pepper and onion blend in my freezer at all times! It makes recipes so so easy — much faster than chopping and dicing my own. Plus since they’re frozen I can always have them on hand.

How to Make This Hearty Breakfast Casserole

This particular brand of peppers and onions are a little big. They come in long slices, but I like them diced a little smaller.

So I just gave them a quick chop while they were still frozen.

Then, add one tablespoon of olive oil to a large skillet over high heat.

When it just starts to smoke, carefully add the peppers and onions.

Cook, stirring occasionally, until veggies are softened and slightly blackened around the edges. Remove to a plate and set aside.

Next, grab a 9×13 baking dish and coat generously with nonstick cooking spray.

Unroll the crescent rolls into the bottom of the dish…

And top with two layers of ham. I found this delicious Rosemary and Sun Dried Tomato ham in the deli section of my grocery store, but you could use any kind of ham here. Check out your deli section and see what fun flavors you can find!

Then top with a layer of salami.

Next, beat eight eggs with salt and pepper to taste. I used about 1/2 teaspoon each.

Then pour over the salami.

Bake at 350 degrees F for 30 minutes.

Ingredients

  • 1 tablespoon olive oil
  • 2 cups diced bell peppers and onions
  • 1 (8 oz) tube Crescent Rolls
  • 8 slices ham
  • 15 slices salami
  • 8 eggs
  • salt and pepper to taste
  • 1 cup shredded cheese (mozzarella, provolone or Italian blend)

Instructions

  1. Preheat oven to 350 degrees F. Generously coat a 9×13 baking dish with nonstick cooking spray.
  2. Add olive oil to a large skillet over high heat. When it just starts to smoke, carefully add bell peppers and onions and cook, stirring occasionally, until they are soft and slightly blackened around the edges. Remove to a plate and set aside.
  3. In the prepared dish, layer crescent rolls, ham, and salami. Beat the eggs with the salt and pepper and pour on top. Top with peppers and onions and cheese.
  4. Bake at 350 for 30 minutes.

    Can this dish be layered in a 9″x 9″x 2″ baking dish?  Half the crescent rolls, half meat, half peppers and cheese then repeat with rest of ingredients.

    I served this for Mother’s Day and it was a big hit!  I used fresh onions and mixed red and yellow peppers instead of  frozen.  I sautéed them the day before and easily assembled it that morning.  Could this be assembled the day before??  Thank you!!

    I have seen in a lot of recipes off pinterest that you use a tube of crescent rolls! Would that pastry be like puff pastry as I have not come across it here in Australia?

    Found this on Pinterest. Made this Christmas morning using slices of leftover ham (about 1/4″) and no salami. I added additional peppers & onions. Also, only made a half recipe in an 8×8 glass pan as there are only 2 of us. Delicious!!! Hubby LOVED it! Thanks.

    Loved this recipe! It was delicious and almost delicate to eat. We had it for breakfast and my Italian grandmother was thrilled with how it came out! I made a few modifications, I asked the butcher to slice the salami paper thin, substituted havarti with dill cheese on top of the dish and used up my Pico de Gallo (diced tomatoes, cilantro, diced onions) with the peppers in the pan. Thank you for this recipe!!

    I was wondering if this could be made in an electric skillet, need to bring a dish to work and need it to cook there and the electric skillet says you can bake in it by placing a rack and a pan in it.

I used 2 cups of Italian Blend shredded cheese instead of 1 cup. I made one exactly as the recipe says, and another with spinach in place of the meat. mmmm

    I have my version in the oven now… I used puff pastry instead of the crescent roll because that’s what I had on hand. I also subbed the peppers for roasted mushrooms. I’m excited!
