What is it about bacon & avocado that I absolutely love?? And these quesadillas… with their buttery, crispy, heavenly tortilla shells… are seriously yum. Don’t let the green scare ya, avocados have a really delicious taste. I promise they’re not just thrown in to “healthify” this recipe! ;) Quesadillas are one of our favorite quick and easy weeknight meals. Come on, let’s make these, you’ll love ’em!

How to Make Cheesy Chicken, Bacon & Avocado Quesadillas

Let’s start with the bacon. Here’s how I do it. Arrange bacon on a cooling rack (like for cookies) and set it on top of sheet pan. If you don’t have a cooling rack, you can just put the bacon straight on the sheet pan. Or in a 9×13 baking dish. Either way will work. Place bacon in a cold oven,  turn heat to 400, and cook 15 mins per side. Crispy strips of bacon, the easy way!

Now take about a tbsp of the bacon drippings and add to a skillet over medium heat. Add diced scallions & saute about 2-3 mins until softened.

Add bite-sized pieces of chicken in a single layer, season with salt & pepper, and cook for about 5 mins or until chicken is golden and cooked through, flipping just once during cooking.

Remove the chicken & scallions to a plate and rinse out the skillet.

Then add a little butter over medium heat…

And when foamy, add a tortilla and swirl it around to get it nice and buttery.

Now we can start layering with the good stuff. Chicken.

Do you know how to pick out a good avocado? We’ve all been there… trying to scoop out a rock hard avocado! First check the bottom and make sure it has a green stem. Then give it a little squeeze. It should have a little give to it. Not too squishy, but not rock hard. Touch the tip of your nose. About like that. You’ll get a good one every time. If all they have at the store are rock hard, let it sit on the counter overnight. If you have a paper bag you can put it in with an apple, even better.

Now use some tongs to flip the other side of the tortilla over.

And pat down in place.

Oh my stars. When it’s golden, brown and delicious like this, flip it over to brown the other side. It’ll just take a minute or two on each side.

Ingredients

  • 8 strips bacon
  • 1/2 cup scallions, diced
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • salt and pepper, to taste
  • 4 medium-sized flour tortilla shells
  • 1 avocado, diced
  • mild cheddar cheese, shredded
  • 2 tablespoon butter

Instructions

  1. Arrange bacon on a cooling rack (like for cookies) and set it on top of sheet pan. If you don’t have a cooling rack, you can just put the bacon straight on the sheet pan.   2. Add 1/2 tablespoon bacon grease (or olive oil) to a skillet over medium heat. Add the scallions and saute about 2-3 mins until softened. Add the chicken in a single layer, season with salt and pepper, and cook for about 5 mins or until chicken is golden and cooked through, flipping just once during cooking. Remove the chicken and scallions to a plate and wipe out the skillet.
  3. Add about 1/2 tablespoon butter to the skillet over medium heat. When foamy, add a tortilla and swirl it around to get it nice and buttery. Layer one side of the tortilla with chicken, bacon, avocado, and a little cheese. Use tongs to flip the other half of the tortilla over and press down. Cook the tortilla for about 1-2 mins on each side or until golden brown and crispy.
  4. Repeat with the rest of the tortillas, adding a little more butter for each tortilla as needed. Eat & enjoy!

    Oh.My.Goodness!! Were these ever good!! I made these exactly as the recipe instructed, except that I cooked the bacon in the microwave. I still had bacon drippings so it just seemed easier.     I am making this now, but am taking a break while my hubby runs and gets more bacon! :O It came out BLACK! I thought that it looked ALMOST done when I pulled it after 15 minutes, but turned it and cooked it for another 15. Phew! What a smelly, smoky mess! Hahaha. Everything else looks promising though!

    Seasoned my chicken with Tony’s Creole and then squeezed some fresh lime juice on it!! YUM!

    Wow! Made these for dinner this evening. I did overcook the bacon, but next time I’ll just lay it in a 9×12 stone as I have done before and then drain on paper towels. I served it with nothing more than just sour cream. My husband and I both LOVE this recipe….looking forward to making it for my son’s family soon.     my hubby loves quesadillas – I usually saute onion and bell peppers and toss in shredded rotisserie chicken serve with guacamole, will def be trying them your way. BTW – I usually cook bacon at 400 for approx. 18 min and turns out perfect, thick bacon a bit longer

    I skimmed the comments and didn’t notice, so I will post this quick update. To cook the bacon (either w/or w/out a cooling rack) try putting parchment paper or aluminum foil lining the pan. It helps with clean up. Just let the pan cool and pick up the fatty leftovers and throw them away. Or if you are like me save the grease in a can and use it for amazing gravy or cooking oil for breakfast rolls etc.

    thanks for the great recipie i made these yesturday but i didnt have the website in front of me so i just went off what i knew, i missed a few steps like the onion and i intentionally left out the bacon, and i spread the avacado on instead of cubed it but it was still delicious ! thank you for the great idea i cant wait to try the cheeseburger flat breads!…and the chocolate cake!

    Love this recipe!! We also make a similar one for the picky folks, I omit the avocado (though I love it) and add a half a can of cream of chicken soup. Mix the chicken, bacon, cheese and the soup together and stuff it all in together and voila! A moist cheesy quesadilla the picky kids love!

      If you do weight watchers you should be able to calculate the points yourself. You are responsible for your own weight loss, not others.

    I made these for dinner tonite and my husband said “Honey, OH MY GOD!” =) Needless to say, they were a hit in this house. I also cooked the 8 slices of bacon for 15 mins total because when I checked the slices halfway through, the one side was done. It came out perfect! I’ve actually never cooked bacon in the oven like that before.
    We complimented our meal with two frothy glasses of Blue Moon and a slice of orange! Mmmmm…I’m full!

    Okay, maybe I’m just crazy, but every time I make bacon like this (which is WAY better than standing over a stove!!) It smokes like CRAZY!!! I have the vent fan on, the windows open, and every fan in my apartment on and my eyes are stinging from the smoke!! Literally, there is smoke coming out of the burners and through the small crack where the top of the oven door meets the stove. Any tips??? It’s most likely because my apartment is old and the oven is too–added to the fact that it’s a small space. Just wondering if you (or anyone else!!) has any tips that might help!!

      My boyfriend just mentioned that it could be because I had the cooling rack standing up (like you would set it to cool cookies) and that if I had left the “legs” folded under, the bacon wouldn’t have splattered so much when it dripped (since it would have been closer to the pan), therefore causing all the smoke. I can’t tell from the picture how you have yours, Amanda, but maybe that’s it?? Who knows. At this point, it’s all out of the oven and about to go in my stomach so who cares? :)

      All ovens do not heat the same. Try a lower heat. Try 375. You can brown bacon at 350 degrees. It might take a little longer. Put that rack flat on the pan. With less heat you will not have so much spattering.

    Hey Amanda, I made these for dinner tonight! Yummy!

    Just one thing- you said to cook the bacon in the oven on 400 for 15 minutes PER SIDE.

    So I did.

    And when I opened the oven, black smoke billowed out.

    On the upside, I’ve never seen such evenly burned bacon before…

    I redid it, for 15 minutes TOTAL. And it turned out perfectly :)

      Uh oh, Helena!! I do actually cook my bacon for 15 mins *per side*, and sometimes if it’s thick, it even needs a few more minutes. But then again I normally do an entire pound of bacon at a time, maybe that was it? So glad it worked out okay in the end! :)
