Salted Caramel Mocha Cookies

I’ve been dreaming of this cookie for a few months now. I wanted to create cookie that was a combination of all my favorite flavors. Coffee and caramel is one of my absolute favorite flavor combinations. If you haven’t tried my Caramel Toffee Latte Cupcakes, they are an absolute must!! I also added chocolate chunks to these cookies because coffee, caramel, and chocolate is always a good idea.

Salted Caramel Mocha Brown Butter Chocolate Chip Cookies Recipe

These chocolate chunk cookies are sent absolutely over the top with the addition of brown butter. You guys know how much I love brown butter! I am obsessed with brown butter cookies, and I pretty much make all my cookies with brown butter now. It adds a completely melt-in-your-mouth texture and that “secret ingredient” flavor that makes these cookies decadently bold, rich, and ultra flavorful. Everyone always asks me what my secret is! It’s one of those flavors you can’t quite put your finger on the taste, but you know it is to die for. If you’ve never made brown butter cookies before, please try this Brown Butter Chocolate Chip Cookies recipe.

Get ready to get hooked!

Caramel Mocha Cookie Ingredients

Here’s what you’ll need to make these brown butter cookies: butter, sugar, dark brown sugar, eggs, vanilla, all-purpose flour, baking soda, Nestle chocolate chunks, caramels, instant coffee, and coarse sea salt for sprinkling.

Caramel

You can use the unwrapped caramel bits or caramel squares. If you use the squares, you may want to chop them a bit. I find this easier if they have been frozen for a few minutes first.

Coffee

For the instant coffee, I used Nescafe Hazelnut. Hazelnut is another one of my favorite flavors, so I of course wanted to incorporate it into these cookies. They also have vanilla which I think would be fabulous. These instant coffee packs are great for baking. Try adding a packet to brownies or a chocolate cake mix to intensify the chocolate flavor!

How To Make These Cookies

To make these brown butter chocolate chip cookies, begin by melting the butter over medium to medium-high heat.

When it melts, it will start to bubble…

And after a few minutes it will start to foam. When it gets to this stage, start whisking constantly.

It will quickly turn brown, have a wonderfully nutty aroma, and you’ll see little brown bits at the bottom of the pan.

At this point immediately remove from the heat and pour into a mixing bowl. Set aside and let cool.

Meanwhile, combine the flour, baking soda, and salt with two tablespoons instant coffee. That’s exactly six of the Nescafe Taster’s Choice Single Serve packets.

Add the sugars to the brown butter, which should have cooled off by now, and beat with an electric mixer until well combined, about 3-5 minutes.

While that’s going on, I like to get my eggs and vanilla ready to add. This recipe calls for one egg and one egg yolk. The extra egg yolk makes them super rich and helps them stay moist.

Add the eggs and vanilla and beat for another two minutes.

Until you have this situation going on.

Add the flour and coffee mixture and beat on low speed until just combined. How beautiful does this coffee-flecked dough look??!

Use a medium (1.5 tbsp) cookie scoop to place dough on a cookie sheet lined with parchment paper or a Silpat liner.  Bake at 350 for 10 minutes until edges just start to turn golden.

I love sprinkling a touch of salt over these chocolate chunk cookies right when they come out of the oven. It just gives them a little something extra and enhances all the other flavors. I’m using this Fleur De Sel finishing salt I got on Amazon. You can also just use kosher salt.

Such a good recipe, everyone I made them for loved them! The only things wrong with it’s info/description is how many it yields. When I first made these I wanted to make 4 dozen since it said it yields 12 cookies…times everything by 4 and instead of 4 dozen, I ended up with over 11 dozen cookies. Just recently remade them, didn’t times anything and it easily made 48 cookies alone!!

Is Espresso powder the same as instant coffee granules and would you use the same amount? Planning to make these for international coffee day tomorrow!

  3. Carrie Allton

These are amazing! I had a happy accident – I didn’t realize my chocolate chips were espresso flavored. Highly recommend!

  4. Christine H

Followed the recipe to a tee but cookies did not flatten out as in pictures. Dough was crumbly. Reviewed and reviewed recipe …not sure what happened?

  5. Janie

My family sends a thumbs up. My husband usually stays shy of anything that contains chocolate chips requested me to save him some.

ok, I admit I was sceptical-the best cookies ever-really? But oh my goodness these are sooooo good! We don’t have caramel bits over here in Ireland so I used chopped up fudge squares, worked great. Thank you, will make these again and might play about with flavours too.

  7. Donika@whenfetametolive

Wow these cookies look amazing! Love the addition of coffee, I like to sneak in coffee in my baked goods as well! :)

  8. Linda

I made these tonight and they were awesome! I did not have dark brown sugar and accidentally put in two whole eggs. Still tasted wonderful! Will definitely make again.

  9. Audrey A.

Just finished making some, still warm and soooo good. Mine don’t look as pretty but they taste really really really good. They’re not like any cookie I’ve ever made before.

  10. Nikki@will run for pizza

Could you leave out the coffee by any chance??? I love the coffee, but if I was making them for certain people that don’t like coffee, just wondering if they would still be good…

  11. Randy H

All I have to say is WOW!! These look amazing…I can’t WAIT to try this recipe! Thanks for sharing and I love your blog/site! ?

    1. Randy H

HAHA…I think I just said the same thing about one of your amazing concoctions not too long ago! ?

  12. Jamie

Great cookies! Sometimes the Carmel bits are surprisingly hard to find. Here in New York you can buy ‘ salted caramel baking chips’ they are pre packaged in containers located in bulk food, at Wegmans. The chips are shaped like chocolate chips and don’t get tough and chewy like the caramel bits. Both are awesome!

  13. Teresa

Where can I find these caramel bits? I just looked for them in Giant here in Maryland and didn’t see them? Neither did Walmart. Anyone know where I can find them?

  14. jen

These were awesome. made them over the weekend for holiday gifts and ended up make a dark chocolate mint cookie to give away instead because neither my husband nor I want to give them up! can’t wait to explore the rest of your blog!

  15. Diane

I made these yesterday and the taste was just so good but, I have a question. when these were baking they puffed up so nice but when I took them out of the oven they flattened out like pancakes, why? It didn’t take away from the taste but why did they get flat?

    1. Amanda

Hi Diane! If you want the cookies to stay puffy, you can try shaping the dough into balls, then refrigerating overnight. Flatten slightly before baking. Hope this helps! :)

  16. Maria

Forgot to mention this particular recipe at all. I omitted the caramel bits and used chopped baking chocolate (don’t have a lot of Nestlé products here). I also reduced the brown sugar by 20 grams and baked them for 20 minutes because I made giant cookies (think nearly discs sizes). Also used coffee essence instead of actual coffee because I don’t want the caffeine. :)

  17. Maria

Oh my God. I love you. Truly. Just made this and my family ate half the batch five minutes after it came out of the oven. Thank you so much for sharing your amazing, amazing recipes! I’ve tried three so far and they all were family favorites now.

  18. Kassie

Does anyone know the yield on these cookies? I’m trying to gauge if I need to double the recipe for an event I’m making these for. Thanks in advance :-)

  19. Danielle

I just took these out of the oven. My batter mix was a little darker than yours but it didn’t matter. These cookies are amazing. My new go to cookie! Thanks for posting this recipe.

  20. Heather @ French Press

the pictures alone had me drooling…I can almost smell them baking. This is a must try recipe for sure

  21. Stacy

    Amanda,

I made these and they were fantastic! Out-of-the-oven perfection, and I’m definitely a believer in brown butter now! My only concern is how to keep them softer for the following day. Should I add more egg yolk or butter? Or just do like my grandmother and store them with a piece or two of bread?

    1. Amanda

Hi Stacy! I’ve found that if I store them in an airtight container, I don’t have any problem with them still being soft the next day. Hope this helps!

  22. Adel

I think that the caramel morsels must behave very differently in these cookies than the squares. I don’t know if I’m the first one to try using the squares… I cut each into four pieces. They oozed out of the cookies and melted all over the pan. So the cookies were not pretty and it was hard to get the off the pan in one piece, either because they were so soft or because the melted caramel was sticking to the pan. I’m refrigerating the rest of the dough and hoping that helps. They do taste AMAZING!

    1. Tami

I had the same problem using the squares, I cut each into 6 pieces and they oozed and stuck to the pan. A friend of mine made them with the carmel bits she had found around the holidays and hers were perfect. I cannot find the bits anywhere. Can anyone let me know where they found some? I live in the Toledo Ohio area.

  23. Katherine

They turned out ooey gooey scrumdidilicious!!! Thanks a ton for my new favorite dessert :) I will be storing this recipe away to use for the rest of my life!

  24. Leslie Mac

Just wanted to say that I made these cookies for a memorial day bbq – several other ppl also brought dessert and needless to say these cookies disappeared in minutes. People were talking about them the entire party. Common words heard – “complex” “amazing” “perfection” “I’m craving more” Thanks as always for the recipe.

Incidentally, I added ground vanilla beans in addition to the coffee just to see – in case anyone has adverse to mocha/coffee flavor that would add the look & complexity without the subtle coffee flavor.

  25. Leslie

    Hi Amanda –

I made a batch today. They are great. I made the cookies a bit smaller than what is called for in the recipe….1 tablespoon instead of 1.5…and shortened the cooking time to right around 8 minutes (convection baking)….and they turned out great. Because the cookies are so rich…I wanted a smaller cookie. The brown butter is ingenious. Thanks Amanda

    1. Errica

Made these tonight and omitted the brown sugar on accident and used salted caramel chips and espresso instead of instant coffee. They turned out ah-mazing!! Thank you for sharing this recipe!

These cookies were incredible. I know it’s bad, but I snuck a bit of the dough before I baked them, and I actually laughed out loud – I was surprised by how good it was. And baked, of course, so amazing.

  28. Wild Child

This is it! This is the cookie that has convinced me to make brown butter. I’m scared I’ll mess it up, but these cookies just look too good not to try. Scrumptious looking!!!

  29. Kalie

I always love your recipes! I don’t drink coffee. Can I leave it out completely or do I need to replace it with something to get the right consistency?

  30. Chelley
